SKILLET PHYLLO PIE RECIPE BY TASTY
Here's what you need: extra virgin olive oil, yellow onions, fine sea salt, freshly ground black pepper, garlic, leek, asparagus, scallions, frozen peas, lemon, large eggs, ricotta cheese, grated parmesan cheese, unsalted butter, frozen phyllo, flaky sea salt

Steps:
- In a large skillet over medium heat, sauté the onions in ¼ cup (60 ml) of olive oil, stirring often, for 15 minutes.
- Season with salt and pepper, reduce the heat to medium-low, and add the garlic and leek. Continue to cook, stirring often, until the onions are very golden and tender, 15 minutes.
- Stir in the asparagus and scallions and continue to sauté for 5 minutes. Stir in the peas and half of the lemon zest and cook 1 minute. Remove the pan from the heat, and set aside to cool completely.
- Preheat the oven to 375°F (190°C).
- In a large bowl, whisk together the eggs, ricotta, Parmesan, and remaining lemon zest. Season with salt and pepper. Fold in the cooled vegetable mixture.
- In a small bowl, whisk together the remaining 6 tablespoons of olive oil and the melted butter. Place one phyllo sheet on a work surface (make sure to cover the remaining phyllo sheets with a slightly damp paper towel to prevent them from drying out).
- Use a pastry brush to lightly brush the sheet with the oil-butter mixture. Top with another sheet and brush again. Repeat until you have 5 sheets stacked, finishing with the butter-oil mixture.
- Cut the stack of phyllo into four equal rectangles.
- Repeat the stacking and cutting with the remaining phyllo sheets.
- Brush eight 8-ounce (225 g) ramekins with the oil-butter mixture.
- Press a rectangle of phyllo into each of prepared ramekins (it's okay if they break a bit), and divide the vegetable mixture among the prepared cups. Fold the edges over the filling, leaving the center slightly exposed. Brush lightly with the oil-butter mixture and sprinkle with flaky salt.
- Transfer the ramekins to a baking sheet and bake until the phyllo is golden brown and crisp, 30-35 minutes.

- Place a rack in lower third of oven; preheat to 400°F. Heat 3 Tbsp. oil in a large ovenproof skillet over medium. Add onions and cook, stirring occasionally, until softened but not browned, 6-8 minutes. Add squash and cook, stirring occasionally, until almost tender, 8-10 minutes. Mix in thyme and red pepper flakes and transfer to a medium bowl; let cool. Wipe out and reserve skillet.
- Add kale, eggs, Parmesan, and lemon zest to squash mixture and gently mix to combine; season with salt and pepper. Layer phyllo sheets inside reserved skillet. Spoon kale-and-squash mixture into phyllo and dot top with goat cheese. Brush edges of phyllo lightly with oil and fold over filling, overlapping slightly, leaving center exposed.
- Cook pie over medium heat until bottom of pastry is just golden (carefully lift up on one side with a heatproof rubber spatula so that you can take a peek), about 3 minutes. Transfer skillet to oven and bake pie until kale is wilted and tender and phyllo is golden brown and crisp, 20-25 minutes. Let pie cool in skillet at least 15 minutes before slicing into wedges.

- Pie can be baked 6 hours ahead. Let cool; store uncovered at room temperature.
BACON AND EGG PIE WITH PHYLLO PASTRY
This was another recipe I collected from my sister while visiting back east. She froze some mushrooms and added them to the pie. I was quite suprised on how good they were. The texture had a more "meatier" mushroom taste, which was quite enjoyable

Steps:
- In a large skillet, saute the bacon until tender crisp. Add 1 - 2 T water to scrape down the cooked on bits. Stir until the water is absorbed. Set aside.
- Stir in softened goat cheese into the onion. Set aside.
- Take one sheet of phyllo and place on the counter. Cover the remaining sheets with a clean dish cloth. Brush sheet with melted butter. Repeat with remaining sheets. (See note about presentation) Place in a pie dish and fold edges.
- Spread cheese mixture over phyllo. Whisk eggs with cream and Dijon mustard. Pour over cheese and bake for 20 minutes in a 375 oven.
- Remove pie from oven and sprinkle cut tomatoes, chopped bacon, chives, mushrooms (if using).
- Bake until eggs are set and phyllo is golden; about 30 - 35 minutes.
- Let stand for 10 minutes before serving.
- Note on Presentation: The sheets are rectangle -- the dish is round. You can either stagger the sheets so that they are not all lined up together or you can cut the sheets so that they are a bit more uniformed. If you left the sheets as is and place them in the pie, once the sheets are folded, the pie bunches up in one area and is sparce in another.
- Variation: Grilled veggies or wild mushrooms would be a nice addition. If using frozen mushrooms, thaw first before adding them to the pie.

SKILLET SPANAKOPITA RECIPE BY TASTY
Perfect for a vegetarian weeknight dinner, this easy, one-pan spanakopita will hit the spot. Contrary to popular belief, spanakopita does not traditionally use garlic in the filling. It is meant to lean more toward the sweet side and the addition of garlic would make the filling more savory.

- Preheat the oven to 350°F (180°C).
- Melt the butter and olive oil together in an 8-inch skillet over medium heat. Add the onion and scallions and season with ¼ teaspoon salt and the nutmeg. Cook for 6-8 minutes, stirring occasionally, until the onions are softened. Stir in the spinach, season with the remaining teaspoon of salt, and cook for 4-5 minutes, until most of the moisture has evaporated. Stir in the dill, parsley, mint, and sugar and cook for 1-2 minutes more, until the herbs are fragrant. Remove the pan from heat and let the filling cool, about 10 minutes.
- Beat the eggs in a large bowl, then fold in the shredded and crumbled feta. Add the cooled spinach mixture to the eggs and feta and fold to combine.
- Wipe out the skillet and lightly grease with olive oil. Lay a sheet of phyllo dough across the pan, gently tucking flush against the bottom (it will hang over the edges) and lightly brush or spray with olive oil. Lay another sheet of phyllo dough on top of the first sheet in another direction and lightly brush or spray with olive oil. Repeat with 4 more sheets of phyllo, alternating where the overhanging phyllo falls each time. Add the spinach filling to the skillet, smoothing the top, and fold the overhanging phyllo over the filling.
- Tear the remaining 4 sheets of phyllo in half crosswise. Crumble each piece of phyllo on top of the filling, covering the entire surface. Lightly brush or spray the entire top of the pie with olive oil.
- Bake the spanakopita for 38-43 minutes, or until the filling is set and the phyllo is golden brown in most places.
- Let cool for 15-20 minutes before slicing and serving.
