Thick and hearty rolls filled with ricotta, Parmesan, and a beefy tomato sauce. A fun spin on a family favorite!

1 pound ground beef
¼ white onion, chopped
½ teaspoon garlic powder
½ teaspoon dried oregano
1 (26 ounce) jar chunky tomato sauce (such as Ragu®)
3 tablespoons white sugar
18 lasagna noodles
1 (15 ounce) container ricotta cheese
1 egg, beaten
2 tablespoons chopped fresh parsley
¾ cup grated Parmesan cheese
1 (12 ounce) package shredded mozzarella cheese, or as needed
¼ cup grated Parmesan cheese

Steps:

  • Cook and stir ground beef, onion, garlic powder, and oregano in a large skillet over medium heat until onion is tender and beef is browned, about 10 minutes. Add tomato sauce and sugar; simmer until sauce is heated through, about 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.
  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch casserole dish.
  • Mix ricotta cheese, egg, parsley, and 3/4 cup Parmesan cheese together in a bowl.
  • Place a lasagna noodle on a work surface. Spoon one layer of ricotta cheese mixture, one layer meat sauce, and one layer mozzarella cheese atop the lasagna noodle; top with another lasagna noodle. Roll up the stuffed lasagna noodles in the jelly-roll style; place in the prepared casserole dish. Repeat with remaining lasagna noodles, ricotta cheese mixture, meat sauce, and mozzarella cheese. Spread a spoonful of meat sauce atop each lasagna roll; top with remaining mozzarella cheese and 1/4 cup Parmesan cheese.
  • Bake in the preheated oven until cheese is melted and bubbling, 30 to 35 minutes.

1/4 cup extra-virgin olive oil, plus more for drizzling
4 cloves garlic, sliced
1 1/2 pounds ripe tomatoes, diced
4 tablespoons chopped fresh basil and/or parsley, plus more for garnish
Kosher salt and freshly ground black pepper
1 cup ricotta cheese
1 large egg
2 tablespoons freshly grated Parmesan cheese, plus more for garnish
6 sheets no-bake lasagna noodles
1 carrot, peeled into ribbons
1 zucchini, peeled into ribbons
3 1/2 cups baby spinach
1/3 pound mozzarella, thinly sliced

Steps:

  • Heat the 1/4 cup olive oil in a large skillet over medium-high heat. Add the garlic; cook, stirring, until golden, 1 minute. Add the tomatoes, 1 tablespoon of the herbs, 1/2 teaspoon salt, and pepper to taste; cook until saucy, about 5 minutes. Transfer to a blender and carefully blend until smooth (see Cook's Note). Return 1 cup of the sauce to the skillet and reduce the heat to low; reserve the remaining sauce.
  • Meanwhile, combine the ricotta, egg, the 2 tablespoons Parmesan, the remaining 3 tablespoons herbs, 1/2 teaspoon salt, and pepper to taste in a medium bowl.
  • Place 2 lasagna noodles over the sauce in the skillet. Layer half of the carrots and zucchini on top; drizzle with olive oil and season with salt and pepper. Cover with half of the spinach, half of the ricotta mixture, a few pieces of mozzarella and 2 to 3 tablespoons of the reserved tomato sauce. Repeat the layers, ending with noodles. Top with the remaining sauce and mozzarella. Cover and simmer until the lasagna is cooked and the mozzarella melts, 20 to 25 minutes.
  • Let rest for a few minutes before slicing. Garnish with more Parmesan and fresh herbs.

1 1/2 cups shredded rotisserie chicken or 1 1/2 cups other cooked chicken
1 1/2 cups torn fresh spinach
2 garlic cloves, minced
1 cup ricotta cheese
1 cup shredded italian* five cheese
1 egg
1/2 cup shredded parmesan cheese or 1/2 cup asiago cheese, divided
1/4 cup fresh basil leaf, cut into thin strips, divided
6 lasagna noodles, cooked
2 cups your favorite pasta sauce

Steps:

  • Mix the chicken, spinach, garlic, ricotta cheese, Italian cheese and the egg in a large bowl. Add 1/4 cup Parmesan and 2 Tbsp. basil; mix well. Spread chicken mixture onto noodles; roll up tightly.
  • Pour about half the pasta sauce into large skillet. Add the roll-ups, seam sides down. Spoon remaining sauce over the roll-ups; cover. Bring to boil on medium-high heat; simmer on medium-low heat 20 minute or until heated through.
  • Sprinkle with remaining Parmesan and basil.

1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
2 Tbsp. milk
1 tsp. garlic powder
1/2 tsp. dried Italian seasoning

Steps:

  • Brown meat with peppers in large deep nonstick skillet; drain.
  • Stir in sauce and water. Bring to boil. Add noodles; stir. Cover; simmer on medium-low heat 18 to 20 min. or until noodles are tender, stirring occasionally.

1 jar (14 ounces) spaghetti sauce
1 teaspoon fennel seed, optional

Steps:

  • Cook lasagna noodles according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. 1/3 pound ground beef
2 tablespoons chopped onion
1 garlic clove, minced
1 can (15 ounces) crushed tomatoes
