- In a large bowl, combine the first 6 ingredients. Crumble salmon over mixture and mix well. Shape into 6 patties. , In a large skillet over medium heat, fry patties in butter for 3-4 minutes on each side or until set and golden brown.

- Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
- Make into patties. If mixture is too dry to form into patties, add reserved liquid from salmon.
- In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.

- Bring the salmon to room temperature 10 minutes before cooking.
- Warm a large nonstick skillet with oil over medium-low heat. Season the fish with salt and pepper. Raise the heat to medium-high. Place the salmon, skin-side up in the pan. Cook until golden brown on 1 side, about 4 minutes. Turn the fish over with a spatula, and cook until it feels firm to the touch and the skin is crisp if desired, about 3 minutes more.
- The skin can be served or removed easily with a knife or spoon.
- Transfer to a plate and serve as desired.
FRIED SALMON PATTIES
This is my grandmother's simple, but delicious recipe for golden, fried salmon patties. SOOO good! :)

- 1. Drain canned salmon. Remove bones and "skin," if desired. In a large bowl, use your hands to mix together: salmon, saltine cracker crumbs, eggs, salt & pepper. Form into patties (approx. 3" diameter). Cover bottom of 10" skillet w/shallow layer of cooking oil -enough to come up around the sides of patties, when placed in oil. Fry patties in hot oil, about 5 minutes on each side, until crispy, golden brown. Remove and place on paper towels to drain. 2 cans will make 18-19 patties, allowing about 3 patties each, for 6 people.
- 2. Note: You may want to cook these outside, using an extension cord and an electric skillet; or, if you have a side burner on your gas grill, you could fry them over that, to keep your home from having the scent of salmon lingering for the next couple of days. ha! But, even if you have to put up w/the lingering scent for a little while, these patties taste so good, it's worth it! :)
FRIED SALMON PATTIES
We eat this dish for dinner or breakfast! For breakfast try them with grits. For dinner try serving with sweet peas and rice.

- Add salmon to a medium bowl (do not drain).
- Remove bones; add the flour, eggs, onion and salt and pepper.
- Beat with an electric mixer until well incorporated.
- In a large skillet, heat enough oil to cover the bottom of the pan.
- With a medium spoon, add salmon spreading them into round patties (you can make large or small).
- Let them cook on one side 10 minutes, then flip cook 10 minutes more.
- ENJOY!

- 1. Locate and remove any pin bones from salmon flesh, (see related Quick Tip). Using sharp knife, cut flesh off skin, then discard skin. Chop salmon flesh into 1/4- to 1/3-inch pieces and mix with chopped bread, mayonnaise, onion, parsley, salt, and lemon juice in medium bowl. Scoop a generous 1/4-cup portion salmon mixture from bowl and use hands to form into a patty measuring roughly 2 1/2-inches in diameter and 3/4-inch thick; place on parchment-lined baking sheet and repeat with remaining salmon mixture until you have 8 patties. Place patties in freezer until surface moisture has evaporated, about 15 minutes.
- 2. Meanwhile, spread flour in pie plate or shallow baking dish. Beat eggs with 1 1/2 teaspoons vegetable oil and 1 1/2 teaspoons water in second pie plate or shallow baking dish, and spread bread crumbs in a third. Dip chilled salmon patties in flour to cover; shake off excess. Transfer to beaten egg and, using slotted spatula, turn to coat; let excess drip off. Transfer to bread crumbs; shake pan to coat patties completely. Return now-breaded patties to baking sheet.
- 3. Heat remaining 1/2 cup vegetable oil in large, heavy-bottomed skillet over medium-high heat until shimmering but not smoking, about 3 minutes; add salmon patties and cook until medium golden brown, about 2 minutes. Flip cakes over and continue cooking until medium golden brown on second side, about 2 minutes longer. Transfer cakes to plate lined with paper towels to absorb excess oil on surface, if desired, about 30 seconds, and then serve immediately, with one of the sauces that follow, if you like.

- Dump the ingredients of the two cans of salmon onto a large plate then pick out all the bones (it is nasty, but necessary).
- In a large bowl add all ingredients except the oil and mix very well. Make sure it is fairly smooth (you want it less chunky than chicken salad, almost a paste).
- Using a large spoon or just your hands roll large lumps into firm balls. As for the size of the balls, that is completely up to you. I make mine a little larger than a golf ball.
- Flatten the balls till they are about the thickness of a pancake.
- Pour oil into a skillet over medium heat. Add the patties, making sure they are not touching in the skillet. DO NOT turn them too often, they will crumble. I cook them about 5 minutes then carefully flip them over and cook another 5 to 7 minute on the other side.
- My family likes to eat them plain with ketchup or hot sauce. Sometimes I serve them on sesame seed buns with a slice of tomato and a leaf of lettice.
