1 lime, zested and juiced

½ cup flaked coconut
¼ cup olive oil
1 (16 ounce) package Market Pantry™ Frozen Raw Jumbo Shrimp, thawed
½ fresh pineapple, cored and cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
12 (12-inch) skewers*

Steps:

  • Mix first 5 ingredients in food processor or blender. Process on high until pureed (mixture will not be smooth). Transfer to large food storage bag. Add thawed shrimp; seal bag. Massage bag to coat shrimp. Refrigerate 1 to 2 hours to marinate.
  • Heat grill. Thread shrimp and remaining ingredients on skewers. Grill 5 to 7 minutes until shrimp are opaque and cooked through, turning once or twice.

½ cup coconut milk
⅓ cup lime juice
¼ cup chopped fresh cilantro
3 tablespoons coconut oil, or more to taste
2 tablespoons shredded coconut
4 cloves garlic, minced, or more to taste
½ tablespoon garam masala
¼ teaspoon curry powder
1 pound uncooked medium shrimp, peeled and deveined
1 package wooden skewers
1 ½ cups pineapple chunks
1 (8 ounce) package baby bella mushrooms

Steps:

  • Mix coconut milk, lime juice, cilantro, coconut oil, shredded coconut, garlic, garam masala, and curry powder together in a large bowl. Add shrimp. Cover and let marinate in the refrigerator for at least 2 hours.
  • While shrimp marinates, fill a pan with water. Soak skewers in water so they will not burn during grilling.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Thread shrimp, pineapple, and mushrooms onto 2 skewers at a time, placed about 1/2-inch apart, so you can turn skewers easily while grilling. Brush with marinade.
  • Grill skewers on the preheated grill until shrimp are bright pink on the outside and the meat is opaque, 3 to 4 minutes per side.

1/2 cup flour
1 tablespoon garlic salt
2 teaspoons cayenne
2 eggs, lightly beaten
1 1/2 cups sweetened flaked coconut
20 raw shrimp, shelled (16 to 20 per lb)
20 wood skewers, about 15 cm (6 inches)
salt and pepper

Steps:

  • Preheat the oil in the fryer to 180°C (350°F). Line a baking sheet with paper towels.
  • In a deep plate or shallow bowl, combine the flour, garlic salt and cayenne. Season with pepper. Place the eggs in another bowl and the coconut in a third.
  • Thread 1 shrimp on each skewer.
  • Dredge the shrimp in the flour mixture and shake to remove any excess. Dip in the beaten eggs then roll in the coconut, pressing firmly.
  • Fry half the shrimp at a time until golden brown, about 1 minute. Drain on the paper towels.
  • Serve immediately. For fun, you can have the skewers sticking out of something, like a pineapple or watermelon.

1 tablespoon minced garlic
1 tablespoon freshly grated lime zest
2 tablespoons fresh lime juice
1 (14 ounce) can coconut milk
2 lbs large shrimp, peeled and deveined (26 to 30 per lb.)
1/4 teaspoon kosher salt
fresh lime wedge, for squeezing
1/2 cup toasted sweetened flaked coconut

Steps:

  • In a medium bowl, combine ginger, garlic, lime zest and juice, and coconut milk.
  • Add shrimp, tossing to coat, and chill, covered, at least 1 hour and up to 1 day.
  • Meanwhile, prepare your wooden skewers by soaking in water. For finger food/party portions, you'll want 24 6" skewers. Use about 12 long skewers if you're serving on dinner plates.
  • Prepare a grill for high heat (450° to 550°; you can hold your hand 5 inches above cooking grate only 2 to 4 seconds).
  • Spear 2 or 3 shrimp onto each 6" skewer in a "C" shape (through each end); cook, turning once, until flesh has just turned pink and is slightly charred, about 3 minutes on each side.

12 large Prawns (peeled and spine removed)
2 garlic cloves (minced)
1/8 teaspoon ground ginger
1 Tablespoon freshly grated lime zest
2 Tablespoons fresh lime juice
2 cups of unsweetened coconut milk
1/4 teaspoon pink Himalayan salt
1/2 cup toasted unsweetened or sweetened shredded coconut flakes
mint or cilantro for garnish (optional)

Steps:

  • Marinade: In a small bowl combine ginger, garlic, lime zest, lime juice, coconut milk and salt. Add peeled shrimp and toss to coat. Refrigerate covered for 1 hour - 24 hours.
  • Soak skewers in water. Heat oven at 325 degrees F. Spray a baking pan with cooking spray. Spread coconut flakes on the pan evenly. Toast in the oven for about 3-5 minutes until slightly browned. Set aside.
  • Grilling: Heat the grill on high heat, 450 degrees F. Add 3-4 shrimp onto the skewers in an even "c" shape. Cook about 2-3 minutes on each side until the flesh has just turned pink.
  • Place skewers on a serving platter and sprinkle with toasted coconut and a squeeze of fresh lime. Garnish with fresh cilantro or mint.

1/2 cup light coconut milk*
4 teaspoons Tabasco Original Red Sauce (or hot sauce of choice)
2 teaspoons soy sauce
1/4 cup freshly squeezed orange juice
1/4 cup freshly squeezed lime juice (from about 2 large limes)
1 pound large shrimp (31-40 count, peeled and deveined (you can use fresh or frozen, thawed shrimp))
3/4 pound pineapple chunks (1 inch-cut)
Canola oil (for grilling)
Freshly chopped cilantro and/or green onion (for serving)

Steps:

  • In a medium bowl, combine the coconut milk, Tabasco sauce, soy sauce, orange juice, and lime juice. Add the shrimp and toss to coat. Cover and place in the refrigerator to marinate for 1-2 hours, tossing occasionally. If using wooden skewers, soak in warm water while the shrimp marinates. Meanwhile, prepare the pineapple if needed.
  • Preheat the grill to medium high heat. Remove the shrimp from the marinade, and reserve the marinade for grilling. Thread the shrimp onto a skewers, alternating with the pineapple.
  • Lightly brush the grill with canola oil, then place the shrimp on the grill. Grill the shrimp for 3 minutes, brushing with the marinade, then turn and cook for an additional 2-3 minutes, brushing with the marinade again, until the shrimp are just cooked through. Remove to a serving plate and garnish with cilantro and green onion. Serve hot.

Steps:

  • Remove meat from pineapple by running a knife along the skin to peel it, quartering the fruit lengthwise and then cutting close to the core of each piece to remove the flesh. Cut the meat into one-inch cubes.
  • In small bowl whisk together curry paste and coconut milk. Set aside.
  • Thread one shrimp and one pineapple chunk on to each skewer. Baste with curry sauce. Cook about 4-5 minutes per side until shrimp is opaque. Turn frequently and continue to brush with sauce.
