ISLAND PORK TENDERLOIN
A delicious meal that I saw on another web site; a quick meal for the entire family. I adjusted a couple of things.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Stir together salt, pepper, chili powder, cumin and cinnamon.
- Coat the pork with the spice rub.
- Heat 1 tablespoon of oil in a 12 inch skillet, over relatively high heat, and brown pork, turning every 30 seconds for 4 minutes.
- Stir together brown sugar , garlic, and tabasco and pat onto top of the tenderloin.
- Place pork in roasting pan and cook for 20 minutes.

ISLAND GLAZED PORK TENDERLOIN

Steps:
- Preheat oven to 350 degrees. Drizzle an oven-safe pan or skillet (such as a cast-iron skillet) with the olive oil and preheat on the stove over medium-high heat til the oil is hot. (See notes for alternative cooking option)
- Whisk together all rub ingredients. Sprinkle the rub mixture all over the tenderloin and use your fingers to massage into the meat.
- Place tenderloin in skillet and allow to brown for 3-4 minutes, turning the meat throughout to sear on all sides.
- Mix the glaze ingredients together and spread mixture over the tenderloin. Transfer to preheated oven and bake for about 20 minutes until cooked through.
- Cut tenderloin into 1-inch thick slices. Use a spoon to drizzle the glaze from the pan all over the tenderloin just before serving.

JULIA CHILD'S SALT MARINADE (RUB) WITH HERBS AND SPICES FOR PORK
Recipe from Mastering the Art of French Cooking. Julia says "Fine for all types of fresh pork. This is our favorite, as it tenderizes the pork and accentuates its natural flavor." I used this on pork chops and it was to die for! So easy and so good, the smell in the fridge while it is marinating is intoxicating. I didn't have allspice so I used a pinch each of ground cinnamon, clove, and nutmeg. Cooking time is minimum marination time.

Steps:
- Mix all of the ingredients together and rub them into the surface of the pork.
- Place in a covered bowl.
- Turn the meat 2 or 3 times if the marinade is a short one, several times a day if it is of long duration (see marination times below).
- Before cooking, scrape off the marinade and dry the meat thoroughly with paper towels.
- Time Required for Marination of Pork - If the meat is refrigerated, increase the minimum marination time by at least one third. Chops and steaks a minimum of 2 hours, 6-12 are even better. Loin roasts a minimum of 6 hours, but 24 are recommended. Fresh hams and picnic shoulders a minimum of 2 days, but 4-5 are more effective.

SIZZLING PORK NOODLES

- Cover a large pot of water and begin heating it over high heat. While you are waiting for it to boil, make the sauce.
- Peel and finely chop the onion and garlic and set aside. Without using oil, brown the pork in a frying pan over medium heat, stirring frequently to break the meat into small clumps. This process takes about 10 minutes. After the meat has browned, drain any fat into a n empty can. Throw away the can.
- Add the onion, garlic, chili sauce, water, soy sauce, vinegar and black pepper and stir. Cook, uncovered, over medium heat stirring occasionally for about 8 minutes or until most of the liquid has evaporated. Turn off the heat and cover to keep hot.
- Once the sauce is cooking, add the vermicelli and cook according to package directions. Stir every minute or two to keep noodles from sticking together. When noodles are finished cooking, drain.
- While the noodles are cooking, peel the cucumber and cut into ¼ inch cubes. Wash the scallions. Cut off the root tips and top 2 inches of green ends and discard them. Cut the remaining pieces into ¼" pieces. Set aside.
- Put noodles on a large platter, Pour the pork sauce over top and sprinkle with the cucumber and the scallion pieces and serve.

- Place pork chops in a large self-closing plastic bag or shallow dish. Combine remaining ingredients in a blender until smooth. Reserve 3/4 cup marinade. Pour remaining marinade over pork chops, turning to coat well. Marinate in refrigerator 30 minutes.
- Remove pork chops from marinade. Grill over medium direct heat for 20 minutes, or until internal temperature reaches 160 degrees F; turn pork chops every 5 minutes.
- Heat reserved marinade in a small saucepan over low heat. Serve pork chops with additional sauce if desired.

MARINATED PORK LOIN
With only 2 ingredients, this dish could not be easier!!!

- The night before, place the pork loin in an airtight container (or a ziploc bag) and cover completely with 3/4 of the bottle of Italian dressing. Set aside the remaining dressing for cooking. Place pork loin in the fridge and let marinate overnight (it makes it REALLY tender!).
- When you're ready to cook it, set your grill to the lowest heat setting (the trick is to cook it low and slow).
- Set the whole pork loin directly on the grill and cook each side for a couple of minutes (I did about 5 minutes a side). Then cut the loin into 1" slices. Baste each slice with the remaining Italian dressing.
- You should flip the slices every three minutes or so, basting with marinade each time you do.
- Grill until the internal temperature of each 1" slice of pork reaches between 145-160 degrees F (depending on how you like your pork).
- Total grill time was about 30 minutes, but it will vary depending on the heat of your grill.
