ANN'S SISTER'S MEATLOAF RECIPE

This is supposedly Ann Landers' sister's meatloaf recipe.

2 pounds lean ground beef
2 eggs
1 ½ cups dry bread crumbs
¼ cup ketchup
1 teaspoon monosodium glutamate (MSG)
½ cup warm water
1 (1 ounce) package dry onion soup mix
2 slices bacon
1 (8 ounce) can tomato sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the beef, eggs, crumbs, ketchup, MSG, water and soup mix. Mix well and spoon mixture into loaf pan. Cover with 2 strips of bacon, then cover with tomato sauce.
  • Bake in preheated oven for 1 hour.

This is my mom's recipe, and all the amounts (except the can of tomato sauce) are somewhat approximate. This is good hot, but even better cold and sliced for sandwiches.

1 1/2 lbs ground beef
1 (8 ounce) can tomato sauce
1 egg
1/2 onion, finely chopped
1/2 bell pepper, finely chopped
1/2 cup breadcrumbs

Steps:

  • Combine all ingredients.
  • Use your hands to mix!
  • Shape into a loaf.
  • Place on a rack in baking pan so fat can drain from the loaf.
  • Bake at 325°F for 1 hour.

This is my sister's recipe that was my Mom's favorite as well as my Nana's favorite...Very tasty and really easy to make!

2 lbs ground chuck
2 eggs, slightly beaten
1 (8 ounce) tomato sauce (split in 1/2)
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon sage
1/4 teaspoon celery salt
1/4 teaspoon garlic salt
20 soda crackers, crushed
3/4 cup onion, chopped fine
1/2 cup green pepper, chopped fine
1/2 teaspoon dry mustard
1 tablespoon Worcestershire sauce
2 tablespoons brown sugar

Steps:

  • Mix all ingredients together except for 1/2 can tomato sauce. Form into loaf and place in glass loaf pan.
  • Cook in a 350 degree preheated oven for 1 hour.
  • Mix remaining 1/2 of tomato sauce with the brown sugar.
  • Take loaf out of oven and spread the tomato sauce/brown sugar mixture over the top.
  • Cook for additional 15 minutes.

GRANDMA HELEN'S MEATLOAF

My grandma was an excellent cook. She never made one bad dish in all the years I knew her. This was one of her best recipes. Meatloaf is much maligned but this one is not only simple, but great. It's a meatloaf even meatloaf haters will love. It's the only meatloaf I'll eat!

Around 2 lb ground chuck
2 celery ribs
1 32 ounce can of stewed tomatoes
1 small white or yellow onion
3 eggs
1 c crushed saltines
salt and pepper to taste
chili powder to cover
TOMATO GRAVY
pan drippings
2 Tbsp cornstarch mixed into cold water
it may be helpful to have a little extra tomato juice on hand if your meatloaf starts running dry while cooking.

Steps:

  • 1. Crush 1 c of saltine crackers. Putting them in a ziploc bag and rolling them with a rolling pin works really well. Set aside.
  • 2. Preheat oven to 350 degrees. Open can of tomatoes and squeeze them to get the juice out. It's wise to squeeze these into a deep bowl so you don't get squirted! Save the juice in that bowl and put the squeezed out tomatoes into the bowl you plan to mix your meatloaf in.
  • 3. Finely dice your onion and your celery ribs. Then place your ground chuck, 3 eggs, celery, onions, saltines and tomatoes all together in a bowl. Add salt and pepper to taste and mix thoroughly with your hands.
  • 4. Form into an oval loaf shape.Place into a casserole or roasting dish with enough room to contain drippings (I use a 9 x 13), preferably one with a top but you can use foil to cover as well.
  • 5. Cover with a generous shaking of chili powder and pour reserved tomato juice over the top of the loaf. Put in the oven with a cover on it. Cooking time varies a little, but if you use around 2 to 2.25lbs. of chuck it should take 1 hour or so to cook (depending upon your oven, of course). Baste every 20 minutes or so. When the meatloaf is about 15 minutes from being done, take off the top and let it form a crust.
  • 6. Take it out and let it rest about 10 minutes while you're making the gravy.
  • 7. To make the gravy, place the pan drippings in a sauce pan and bring to a boil.
  • 8. Take 2 tbsp. cornstarch dissolved in a little cold water and stir into boiling drippings. Stir until thickened. If you're having trouble getting it thick, you can always add another tbsp. of cornstarch. When it's thickened how you like it, serve over mashed potatoes and maybe add some sugar snap peas. This meal is great, hearty and the meatloaf makes great sandwiches the next day.

1/2 lb ground pork
2 slices rye bread
2 slices white bread
1 cup milk
1 medium onion, diced
7 sprigs parsley, minced
1/2 cup grated parmesan cheese
2 eggs
2 teaspoons kosher salt
1/2 teaspoon black pepper
1 (8 ounce) can tomato sauce
1 tablespoon balsamic vinegar (optional)
1 teaspoon oregano
2 tablespoons butter, cut into small bits

Steps:

  • Break bread into small pieces and soak in the milk for 10 minutes.
  • Preheat the oven to 350 degrees. Mix the meats, onion, parsley ,cheese, eggs, salt and pepper in a large bowl. Drain the bread and mix the bread into the meat mixture.
  • Form into a loaf in a 10" x 12 or 9"x12" baking dish.
  • Dot the top with butter bits.
  • Bake for 40 minutes.
  • mix the tomato sauce and balsamic vinegar, if using. Pour over the meatloaf Sprinkle the oregano over the tomato sauce. Bake for 30 minutes more or until temperature is 160 degrees.
  • Let stand for 10 minutes before serving.

  • for the topping:.
  • Combine the tomato sauce and the balsamic vinegar.
  • Preheat oven to 350 degrees.
  • Break bread into small pieces and pour the milk over. Let soak.
  • In a large bowl combine the meats,, onion, parsley, cheese, eggs, salt and pepper. Drain the bread crumbs and add to the meat mixture. Combine well.
  • Shape into a loaf in a 11"x7" baking dish or a 9"x13" dish.
  • Bake for 40 minutes. pour the tomato sauce over and sprinkle with the oregano. Bake for an additional 20 minutes or until the internal temperature is 160 degrees.
  • let rest for 10 minutes before serving.
