Homemade Chocolate Truffles Recipe image

These homemade chocolate truffles are extra creamy with the addition of butter. After mixing the ingredients together, let the mixture set in the refrigerator, then roll into balls. You can coat in your favorite toppings and add lots of fun flavors, too! The mixture gets a little sticky, so refer back to my tips in the blog post above.

two 4-ounce quality chocolate bars (226g), very finely chopped*
2/3 cup (160ml) heavy cream*
optional: 1 Tablespoon unsalted butter, softened to room temperature
optional: 1/2 teaspoon pure vanilla extract
toppings: unsweetened cocoa powder, sprinkles, crushed nuts, melted or tempered chocolate

Steps:

  • Place the chocolate in a heat-proof bowl. Set aside.
  • Heat the heavy cream until it is simmering. You can heat it on the stove or in the microwave.
  • Add the butter, if using, to the chocolate and pour the heavy cream evenly on top. Let the warm cream and chocolate sit for 5 minutes minutes. Add the vanilla extract then stir until the chocolate has completely melted. Place a piece of plastic wrap directly on the surface (to avoid condensation) and refrigerate for 1-2 hours. Tip: Pour into a flat shallow dish, such as a 8×8 inch baking pan, so the mixture evenly and quickly sets.
  • Scoop the set truffle mixture into 2 teaspoon-sized mounds. This cookie scoop is the perfect size. For larger truffles, 1 Tablespoon size mounds. Roll each into balls. This gets a little sticky, so see my tips above.
  • Roll each into toppings, if desired. Truffles taste best at room temperature!
  • Cover tightly and store truffles at room temperature for 3-4 days or in the refrigerator for up to 2 weeks.

7 oz (200 g) hazelnuts
4 tbsp powdered sugar
2 tbsp rum
½ tsp orange zest
dark chocolate

Steps:

  • Toast hazelnuts and skin them. Work them in blender until they release their oils and you get a hazelnut paste. Add the remaining ingredients, combine everything and roll them into balls.
  • Melt dark chocolate on double boiler and dip nut balls into it. Line on parchment paper and let set completely. If you want, you can sprinkle them with more nuts while the chocolate is still warm, or decorate them one more time with chocolate when the first coating sets.

This is a super fast and easy recipe that will make your friends and family think you're a professional chocolatier! I plan to try different variations by adding a drop or two of mint or other flavoring or by trying different flavored frostings :-) This recipe will make 20 or so truffles, however I think that next time I make them, I will make them much smaller as one can easily propel you into a chocolate coma! mmmmm.

1 (16 ounce) can of prepared chocolate frosting (or chose your favorite flavor)
2 1/2-3 cups powdered sugar
1 (12 ounce) package semi-sweet chocolate chips
1 -2 tablespoon vegetable shortening
1 cup pecans, chopped fine (optional)

Steps:

  • Mix prepared frosting and powdered sugar in mixing bowl (Start with 2 cups adding a little extra until you are able to shape mixture into a semi-stiff walnut size ball).
  • Fold in 1/2 cup of nuts (optional).
  • Shape mixture into walnut size balls and place on wax paper lined cookie sheet.
  • Place in refridgerator to chill (10 minutes).
  • Melt semi-sweet chocolate chips in microwave on low in 30 second intervals, stir often (should only take 1-2 minutes).
  • Stir 1-2 tablespoons of shortning into melted chocolate to give chocolate a dipping consistancy.
  • Remove chocolate balls from fridge and dip into melted chocolate (sprinkle with chopped nuts if desired).
  • Place dipped'truffles' on a wax paper lined cookie sheet until set (placing in fridge will speed this up).
  • Arrange your fancy'truffles' on a serving platter and WOW your friends!

This recipe is from Bakerella, is super popular, and is very good. They are time consuming, especially if you make them for the first time, so plan for a couple days. This is a unique treat to give as a gift or to serve at a bridal shower, a holiday party, or any get together. Enjoy! Prep time does not include chilling time.

1 (18 1/4 ounce) box cake mix (any flavor)
3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 (16 ounce) can cream cheese frosting
1 (1 1/2 lb) package chocolate bark
wax paper
candy sprinkles, to decorate (optional)
chocolate chips, melted, to decorate (optional)

Steps:

  • Cook the cake as directed on the box for a 13 X 9 cake.
  • After the cake is cooked and cooled completely, crumble into a large bowl. Make sure any parts that have a more crusty texture (from the outside edge of the pan) are picked out.
  • Mix the cake thoroughly with the cream cheese frosting (like you would mix meatloaf). Make sure the cake is moist enough to roll into balls, but not mushy; you may not need to use all of the frosting (I find that about 3/4 of the container is a good amount).
  • Roll the mixture into quarter-size balls and lay on a wax-paper covered cookie sheet.
  • Chill for several hours (you can speed this up by putting in the freezer).
  • Melt chocolate in the microwave per directions on package.
  • Roll balls in chocolate and lay on wax paper until firm. (Use two spoons to dip and roll in chocolate and then tap off extra.).
  • Decorate as desired.
  • NOTES:.
  • For steps 3 and 4, I found it works very well to wear powder-free latex gloves (if you're not allergic). I already have them for cutting jalapenos. They don't stick to the cake, and no coloring gets on your hands (if you're working with a red velvet cake, like in my eyeball pictures).
  • If using small sprinkles to decorate, use a 1/4 teaspoons measuring spoon, and sprinkle a little on the top of each cake truffle before the chocolate coating firms up.
  • I chilled my cake truffles in the refrigerator overnight (for step 5), and they were easy to work with.
  • I used a 1 lb. bag of candy melts from the craft store, but I ran out near the last 1/3 of my cake truffles, so I covered the rest with either powdered sugar or drizzled semi-sweet chocolate (therefore, I recommend using more than one bag of candy melts, or a couple of packages of candy bark available at most grocery stores).
  • The recipe says it makes 40-50 cake truffles, but I usually get about 88 (I must roll them smaller).

EASY CHOCOLATE TRUFFLES

300g good-quality dark chocolate, 70% cocoa solids
300ml double cream
50g unsalted butter

Steps:

  • Chop the chocolate and tip into a large bowl. Put the cream and butter into a saucepan and heat gently until the butter melts and the cream reaches simmering point. Remove from heat, then pour over the chocolate. Stir the chocolate and cream together until you have a smooth mixture. Add any flavourings to the truffle mix at this stage (divide the mixture between bowls and mix in liqueurs or other flavourings, a tsp at a time, to taste. Try bourbon, Grand Marnier, coconut rum or the zest and juice of an orange), or leave plain. Cool and chill for at least 4 hrs.
  • To shape the truffles, dip a melon baller in hot water and scoop up balls of the mixture, then drop the truffles onto greaseproof paper. Or lightly coat your hands in flavourless oil (such as sunflower) and roll the truffles between your palms. You could also use a piping bag to pipe rounds onto baking parchment.
  • Coat your truffles immediately after shaping. Tip toppings into a bowl and gently roll the truffles until evenly coated, then chill on baking parchment. Try: crushed, shelled pistachio nuts; lightly toasted desiccated coconut; or roll a truffle flavoured with orange zest and juice in cocoa powder. To coat in chocolate, line a baking tray with baking parchment. Melt 100g milk, dark or white chocolate for 10 truffles. Allow chocolate to cool slightly. With a fork, pick up one truffle at a time and hold over the bowl of melted chocolate. Spoon the chocolate over the truffle until well-coated. Place on the baking tray, then chill.
  • To give as presents, place 8-10 truffles in individual foil or paper cases inside small, lined boxes tied with ribbon. Keep in the fridge until you're ready to give them. Will keep in an airtight container in the fridge for three days, or frozen for up to a month. Defrost in the fridge overnight.

2 cups all-purpose flour

Steps:

  • In a large bowl cream butter and brown sugar with an electric mixer at medium speed until creamy.
  • Add vanilla.
  • Gradually beat in flour and add milk.
  • Add chocolate morsels and pecans, mixing well.
  • Shape into 1-inch balls.
  • Place on waxed paper; chill 2 hours.
  • Melt chocolate bark candy coating in a double boiler.
  • Using 2 forks, dip cookie balls into candy coating to cover.
  • Place on waxed paper and chill to set.
  • Store in the refrigerator for at least 1 hour.

This is a wonderful truffle recipe: It's very quick to put together and still tastes like a ton of work went into it. It can be easily varied by subbing any other alcohol or flavoured-syrup for the rum.

150 g milk chocolate
50 g soft butter
25 g sweetened cocoa powder or 25 g instant hot chocolate powder
1 tablespoon rum
chocolate, granules
sugar candy sprinkles
cocoa powder
cinnamon sugar
desiccated coconut or flaked coconut
chopped nuts

Steps:

  • Take 125g of the chocolate and grate it finely (Use a piece of paper to hold the chocolate so that it doesnt melt under your fingers). Chop the remaining 25g into small pieces.
  • Cream the butter (I used a spoon, but you may also use a hand-mixer). In portions add the grated and chopped chocolate as well as the chocolate/cocoa powder and the rum.
  • Form balls (about the size of a hazelnut) out of the mass (wash your hands with cold water if they get too warm to form the balls without melting all the chocolate) and roll them in your desired garnish (see above).
  • Place in candy wrappers and store in a box in a cool place (these will keep for up to 8 days).
