Fresh strawberries, (washed and dried)
1 cup creme friache (or sour cream)
1 firmly-packed cup brown sugar

Steps:

  • Choosing Strawberries: Naturally the best strawberries are the ones you pick yourself from your local strawberry fields or purchase from your local produce stands and/or Farmers' markets. In the stores, always choose locally grown strawberries during the harvesting season (they are sweeter and juicier than those that are bred for shipment).
  • When purchasing berries from the grocery store, shop with your nose. Always pick the plumpest and most fragrant berries. They should be firm, bright, and fresh looking with no mold or bruises, and fresh green caps (stems). The caps should be bright green, fresh looking, and fully attached. Remember, your local strawberry season only lasts 3 to 4 weeks.
  • Prepare Strawberries: Wash the berries just before you plan to serve them. Rinse them, with stems still attached, under a gentle spray of cool water (do not soak them). Gently pat the strawberries dry with a paper towel. You want the strawberries pretty much totally dry as wet or damp berries will go downhill really quickly. Leave the caps (stems) on the strawberries to use as handles when dipping.
  • To Serve: Arrange the prepared fresh strawberries in a large bowl or arrange on a large platter. Place sour cream and brown sugar into two separate small bowls.
  • Let each guest dip a strawberry, using stem as a handle, into the sour cream and then into the brown sugar.
  • ENJOY!
  • Serves many.

2 pints strawberries, washed and hulled
Sugar, optional
Balsamic or raspberry vinegar, optional
Red wine, optional
Freshly ground black pepper, optional
Creme fraiche, sour cream, yogurt cheese or whipped cream, optional

Steps:

  • Leave strawberries whole or cut in half, depending upon size. Taste the strawberries and sweeten if necessary. Either toss with 1 to 2 tablespoons of vinegar and dust with freshly ground black pepper.
  • Or marinate in 1/4 cup of red wine with sugar and serve.
  • Or serve sugared only and topped with creme fraiche or other cream options.
  • Or puree 1 pint of strawberries and sweeten with sugar and toss with other pint of strawberries left whole or halved.

1 quart ripe strawberry, stemmed and frozen
5 tablespoons sugar
1/4 cup water

Steps:

  • Freeze strawberries for 2 hours or until hard.
  • Place strawberries and sugar into a food processor and pulse machine on and off until fruit is broken up.
  • Add water and continue processing until you have a smooth puree.
  • Transfer to a container and freeze for 2 hours, or until firm enough to scoop. I stir the mixture every 30 mins or so.
