CLASSIC CREAM SCONES
You're best off describing scones to a German by saying that they are like a cross between a Kuchen (cake), a Plaetzchen (cookie), and a Broetchen (roll), but are very unique and not really like anything else found in Germany. My German husband *loves* this recipe: Classic Cream Scones (from Simply Scones, by Leslie Weiner and Barbara Albright)

Steps:
- Preheat oven to 425F.
- Lightly butter a baking sheet. In a large bowl, stir together the flour, sugar, baking powder, and salt. Cut the butter into 1/2-inch cubes and distribute them over the flour mixture. With a pastry blender or two knives used scissors fashion, cut in the butter until the mixture resembles coarse crumbs.
- In a small bowl, stir together the cream, egg, and vanilla.
- Add the cream mixture to the flour mixture and stir until combines.
- Stir in the currents/raisins (optional). With lightly floured hands, pat the dough into a 1/2-inch thickness on a lightly floured cutting board.
- Using a floured 2 1/2-inch-diameter round biscuit cutter or a glass, cut out rounds from the dough and place them on the prepared baking sheet. Gather the scraps together and repeat until all the dough is used.
- Lightly brush the tops of the scones with the egg mixture, if desired.
- Bake for 13-15 minutes, or until lightly browned.
- Remove the baking sheet to a wire rack and cool for 5 minutes.
- Using a spatula, transfer the scones to the wire rack to cool.
- Serve warm or cool completely and store in an airtight container.
- Makes about 14 scones.
- Variation: Add about 1 1/2 teaspoons of grated lemon peel to the dry ingredients.
- My variation: Classic Scones 280 grams all-purpose flour 65 g granulated sugar 2 teaspoons baking powder 1/8 teaspoon salt 110 g unsalted butter, chilled 6 tablespoons milk 1 large egg 1 teaspoon vanilla sugar 125 g raisins Preheat oven to 220C.

SIMPLE SWEET SCONES
This is a simple perfectly delicious recipe my mom used to make for our family. It origioually came from a biscuits and scones recipe book, this one was always my favorite of all the recipes.

Steps:
- Heat oven to 425°F (220 Celsius).
- Put flour, baking powder and salt into a large bowl; stir mix well Add butter and cut in with a pastry blender or rub in with your fingers, until the mixture looks like fine crumbs.
- Add sugar; toss to mix.
- Add milk and stir with a wooden spoon until dough forms,(the dough may be a bit crumbly).
- Place dough on floured counter and knead gently until the dough comes together in a ball.
- Pat or roll into a circle about 1 1/2 inches thick.
- cut each circle into 6 or 8 wedges.
- place wedges on a greased cookie sheet- slightly apart for crisp sides, touching for soft.
- Bake about 12 minutes, or until medium brown on top.

SIMPLY SCONES
Wonderful, traditional style scones. Goes great with coffee and tea. You can experiment with different fruit. Fruit can be fresh, frozen or dried. I particularly like using fresh blueberries when they are plentiful in the summer.

- In a small bowl, blend the sour cream and baking soda and set aside.
- Preheat oven to 350 degrees. Lightly grease a large baking sheet.
- In a large bowl, mix the flour, sugar, baking powder, cream of tartar and salt. Cut in the butter. Stir the sour cream mixture and egg into the flour mixture until just moistened. Gently fold in the blueberries (or fruit of your choice).
- Halve the dough. Turn one half dough out onto a lightly floured surface and knead briefly. Roll or pat dough into a 3/4" thick round. Sprinkle with sugar. Cut into 8 wedges and place them 2" apart on baking sheet (they will expand).
- Bake 12 - 15 minutes in preheated oven, until golden brown on the bottom.
- Repeat with second half of dough.

SIMPLE SCONES

- Adjust oven rack to lower-middle position and preheat oven to 400 degrees.
- In a medium bowl, mix flour, 1/3 cup sugar, baking powder, baking soda and salt. Grate butter into flour mixture on the large holes of a box grater; use your fingers to work in butter (mixture should resemble coarse meal), then stir in raisins.
- In a small bowl, whisk sour cream and egg until smooth.
- Using a fork, stir sour cream mixture into flour mixture until large dough clumps form. Use your hands to press the dough against the bowl into a ball. (The dough will be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)
- Place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. Sprinkle with remaining 1 tsp. of sugar. Use a sharp knife to cut into 8 triangles; place on a cookie sheet (preferably lined with parchment paper), about 1 inch apart. Bake until golden, about 15 to 17 minutes. Cool for 5 minutes and serve warm or at room temperature.

- Pre-heat oven to 200C and line baking tray with paper.
- Combine all ingredients together in a large bowl and mix well.
- Knead together until a soft dough and turn onto a floured board.

SUPER SIMPLE SCONES
These are perfect with morning coffee or tea. By the time the oven is heated, the scones can be ready to be baked. To obtain the best results remember, Don't Handle the Dough! Don't be tempted to work it or squish it. Just lightly shape into the two discs and cut.

- Heat oven to 375 degrees F.
- Mix together flour, sugar, baking soda and
- cream of tartar.
- Cut in butter to half a pea size, as for pie dough.
- Beat eggs slightly with milk.
- Mix egg mixture into flour mixture with fork only until dough begins to leave sides of bowl.
- Divide dough into two parts with a fork, right in the bowl.
- Sprinkle some flour, about 1 to 2 tablespoons, onto one corner of cookie sheet.
- Dump half the dough onto that floured corner and shape into a five-inch circle.
- You might have to sprinkle some flour on top of dough circle.
- Cut with a knife into 8 pie shaped wedges.
- They will be small but don't worry about it because they'll expand while baking.
- Dip the knife in some of the flour if needed so it doesn't stick to dough.
- Arrange the cut pieces on the other end of cookie sheet, four pieces to a row.
- Repeat with other half of dough and arrange those cut pieces on the half of the cookie sheet you worked on.
- Bake at 375 degrees F. about 12 to 15 minutes or until golden brown.
- Makes 16 pieces.
