HOMEMADE POTATO AND CHEESE PIEROGIES



Homemade Potato and Cheese Pierogies image

These homemade pierogies are made with a potato and cheese filling and dough that's a dream to work with. Saute in butter and serve with caramelized onions!

2 cups unbleached all-purpose flour (plus extra for the work surface)
½ teaspoon salt
1 egg
1 egg yolk
1 tablespoon vegetable oil
4 to 6 tablespoons cold water
4 tablespoons unsalted butter
3 large onions (halved and thinly sliced)
¼ teaspoon salt
1 medium russet potato (about 9 ounces, peeled and sliced 3/4 inch thick)
1 tablespoon salt
¼ cup reserved chopped caramelized onions
1½ ounces cheddar cheese (shredded (about ⅓ cup))
1½ ounces farmers cheese (cut into small pieces (about ¼ cup))
1 tablespoon unsalted butter
Salt and ground black pepper (to taste)
1 tablespoon salt
4 tablespoons unsalted butter (for sautéing)
Sour cream (for serving)

Steps:

  • Make the Pierogi Dough: Pulse the flour and salt together in a food processor until combined, about 4 pulses. With the machine running, slowly add the whole egg, egg yolk, and oil through the feed tube until the mixture resembles wet sand, about 30 seconds. With the machine running, slowly add 4 tablespoons of the water until the dough forms a ball. If the dough doesn't ball up, add the remaining water, 1 tablespoon at a time, with the processor running until a dough ball forms (you may not use all the water).
  • Transfer the dough to a lightly floured work surface and knead by hand until it firms slightly and becomes smooth, about 2 minutes. Cover with plastic wrap and set aside to relax for at least 15 minutes or up to 2 hours.
  • Make the Caramelized Onions: Meanwhile, melt the butter in a 12-inch nonstick skillet over medium heat. Add the onions and salt and cook until very soft and well browned, 15 to 20 minutes. Measure out ¼ cup of the onions, chop them fine, and reserve them for the filling. Cover the caramelized onions to keep warm.
  • Make the Potato and Cheese Filling: Cover the potatoes by 1 inch of water in a large saucepan and add 1 tablespoon salt. Bring to a boil, then reduce to a simmer and cook until the potatoes are tender and a fork can be slipped easily into the center, 10 to 12 minutes. Drain the potatoes into a colander.
  • Set a food mill or ricer over a medium bowl and process the potatoes into the bowl. Add the caramelized onions. Stir in the cheeses and butter until incorporated and season with salt and pepper to taste. Cool slightly before filling the pierogi or cover with plastic wrap and refrigerate until needed, up to 2 days.
  • Assemble the Pierogi: Dust a baking sheet liberally with flour; set aside. Divide the dough into 2 even pieces and cover with plastic wrap. Working with 1 piece of dough at a time, unwrap the dough and roll out on a lightly floured work surface into a 15-inch circle, about 1/16-inch thick. Using a 3-inch round biscuit cutter, cut out as many rounds as possible. Carefully gather up the dough scraps, wrap them in plastic wrap, and set aside.
  • Place 1 teaspoon of the filling in the center of each dough round and moisten the edge of the dough round with water, using either your finger or a pastry brush. Fold the dough in half over the filling, making a half-moon shape. Pinch the seam along the edge to secure. Crimp the seam using the tines of a fork. Transfer to the prepared baking sheet and cover with a damp kitchen towel. Repeat with the remaining dough.
  • Gently knead all of the dough scraps together into a ball and let relax for 5 to 10 minutes. Roll out, cut, and assemble additional pierogi, discarding any remaining dough scraps. [MAKE-AHEAD NOTE: The towel-covered baking sheet of pierogi can be wrapped with plastic wrap and refrigerated for up to 4 hours. The pierogi can also be frozen for up to 1 month; once completely frozen, the pierogi can be transferred to a zipper-lock bag. Do not thaw before boiling.]
  • Cook the Pierogi: Bring 4 quarts of water to a boil in a large pot. Add 1 tablespoon of salt and half the pierogi. Cook, stirring often, until the edges feel al dente, 5 to 6 minutes (8 to 10 minutes if frozen). Using a wire spider or slotted spoon, transfer the pierogi to a colander and set aside. Return the water to a boil and cook the remaining pierogi.
  • While the second batch of pierogi is boiling, melt 2 tablespoons of the butter in a 12-inch nonstick skillet over medium-high heat. Add the first batch of boiled and drained pierogi and sauté until golden on both sides, 1 to 2 minutes per side. Transfer the browned pierogi to a platter and cover to keep warm. Drain and sauté the remaining pierogi using the remaining 2 tablespoons butter. Sprinkle the caramelized onions over the top and serve with sour cream.

1 tablespoon unsalted butter
1 1/2 pounds russet potatoes, peeled and cut into 1/8-inch slices
1 teaspoon minced garlic
5 ounces goat cheese, crumbled
Salt and freshly ground black pepper
2 cups heavy cream

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease the bottom and sides of a 1 1/2-quart gratin dish with the butter.
  • Make a layer of overlapping potato slices on the bottom of the dish and sprinkle with half of the garlic and 1/3 of the goat cheese. Season with salt and pepper. Repeat with another layer of potatoes, the remaining garlic, another 1/3 of the cheese, and season with salt and pepper. Finish with a final layer of potatoes and the remaining cheese and season with salt and pepper. Pour the heavy cream over the top of the potatoes and, using your hands, press to condense the layers slightly. Make sure the potatoes are all covered with cream.
  • Bake for 1 hour and 20 minutes, or until the gratin is bubbly and golden brown on top and the potatoes are cooked through. Let cool for 5 minutes before serving.

1 (about 8 ounces) large Idaho potato
1 tablespoon plus 1 teaspoon salt
11 ounces soft fresh goat cheese
2 tablespoons minced shallot, (1 large)
1 large egg yolk
1 tablespoon heavy cream
1 1/2 teaspoons minced fresh sage
1/4 teaspoon freshly ground black pepper
Pierogi Dough for Potato and Goat Cheese Pierogi

Steps:

  • Place potato in a large pan, and cover by 2 inches with cold water. Add 1 tablespoon salt, and bring to a boil. Lower heat to medium, and cook until tender, about 40 minutes. Drain, and holding the potato with a kitchen towel, peel while hot. Pass potato through a food mill, fitted with the finest disk, or a potato ricer into a large bowl.
  • Add goat cheese, shallot, egg yolk, cream, sage, 1 teaspoon salt, and pepper, and mix well using a wooden spoon.
  • To form dumplings, place a circle of pierogi dough on a work surface, and put a heaping teaspoon filling toward the front of the circle. Moisten the edges of the dough with water, and fold in half around the filling to form a semicircle, firmly pinching the edges closed. Set aside on a lightly floured baking sheet. Continue to fill and form pierogi, keeping them covered with plastic wrap, until all the dough is used up.
  • Meanwhile, bring a large pot of salted water to a boil, and add half the pierogi. Boil gently until they float to the surface, about 2 minutes, and cook for 3 to 4 minutes more. Lift out with a slotted spoon, and repeat with remaining pierogi. Serve immediately.

After work, I used to hang out at the Eastern European coffee shop Veselka, which is known as much as an after-hours chef hangout as it is for its incredible pierogi. Some people eat pierogi as a main course, but I prefer them as a hearty appetizer. I add goat cheese to the potato filling for extra creaminess, and a dash of truffle oil to the creme fraiche for a luxe finish. My mom says this is her favorite dish of all my creations, and that's saying something.

4 cups (560 grams) unbleached all-purpose flour
1/4 teaspoon baking powder
1 teaspoon kosher salt
1/2 cup full-fat sour cream
1/2 cup warm water
2 large eggs
2 teaspoons canola oil
2 large Yukon Gold potatoes, about 9 ounces each, peeled
2 teaspoons extra-virgin olive oil
1/2 cup finely chopped red onion
3/4 cup (6 ounces) goat cheese, at room temperature
1 teaspoon minced fresh chives
2 tablespoons heavy cream
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
1 tablespoon canola oil
1 large yellow onion, cut into thin half-moons
1/2 teaspoon finely chopped fresh thyme
Kosher salt and freshly ground black pepper
3/4 cup creme fraiche or sour cream, for serving
2 teaspoons white truffle oil
Flour, for rolling out the dough
2 large eggs, beaten until foamy

Steps:

  • To make the dough: Whisk the flour, baking powder, and salt together in the bowl of a heavy-duty standing electric mixer (or in a large bowl). Whisk the sour cream, water, eggs, and oil together in a small bowl, then pour into the flour mixture. Using the paddle attachment, mix on low speed (or stir with a wooden spoon), adding more water if the dough is too dry, to make a soft dough. Change to the dough hook and mix on medium-low speed until the dough is smooth and supple, 6 to 8 minutes. (Or turn out the dough onto a lightly floured surface and knead by hand for 8 to 10 minutes.) Wrap the dough in plastic wrap and let stand at room temperature for 1 to 2 hours.
  • Meanwhile, make the filling: Put the potatoes in a large saucepan and add enough cold salted water to cover by 1 inch. Bring to a boil over high heat. Reduce the heat to medium and cook until the potatoes are tender, about 20 minutes. Drain well. Press the potatoes through a potato ricer (or rub them through a coarse wire sieve) into a medium bowl and let them cool.
  • Heat the olive oil in a small skillet over medium heat. Add the red onion and cook, stirring occasionally, until tender but not browned, about 3 minutes. Stir the onion into the potatoes, along with the goat cheese and chives. Stir in the cream and season to taste with salt and pepper.
  • To assemble the pierogi: Line a large rimmed baking sheet with parchment paper. Working with one half of the dough at a time, roll it out on a lightly floured work surface until about 1/8 inch thick. Using a 3-inch round cookie cutter, cut out rounds of the dough, reserving the trimmings.
  • Spoon about 1 teaspoon filling on the bottom half of each round. Brush the edge of each round with beaten egg, fold in half to enclose the filling, and seal closed with a fork. Transfer to the baking sheet. Knead the dough scraps together until smooth and let rest for about 10 minutes. Then repeat with the remaining dough and filling. (The pierogi can be covered with plastic wrap and refrigerated for up to 8 hours.)
  • To caramelize the onion: Melt the butter and oil in a large saucepan over medium heat. Add the yellow onion and cook, stirring occasionally, until very tender and caramelized, about 25 minutes. Stir in the thyme and season to taste with the salt and pepper. Let cool. Coarsely chop the onions and transfer to a small bowl. (The onions can be covered and refrigerated for up to 8 hours. Bring to room temperature before using.)
  • To make the truffle creme fraiche: Mix the creme fraiche and truffle oil in a small bowl. (The creme fraiche can be covered and refrigerated for up to 8 hours. Bring to room temperature before using.)
  • Position a rack in the center of the oven and preheat the oven to 200 degrees F. Line another large rimmed baking sheet with paper towels.
  • To cook the pierogi: Heat the oil in a large skillet, preferably nonstick, over medium heat. In batches, without crowding, add the pierogi, flat sides down, and cook, turning once, until golden brown on both sides, 4 to 5 minutes. Using a slotted spoon, transfer the pierogi to the baking sheet and keep warm in the oven while cooking the remaining pierogi, adding more oil to the skillet as needed.
  • Arrange the pierogi on a platter. Top each with a dab of the caramelized onions and sprinkle with the chives, if using. Serve immediately, with the truffle creme fraiche.

This recipe is an Ukrainian one of my Great-Grandmothers passed down from the years. They are great with melted butter and sauteed onions, or fry if desired. They can also be frozen between layers of plastic wrap.

3 eggs
1 pinch salt
water as needed
5 pounds potatoes, peeled
1 pound processed cheese, cubed

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain.
  • Combine flour, eggs and salt. Mix in a little water at a time until dough is somewhat stiff. Roll dough in small sections about 1/4 inch thick. Using a large biscuit cutter or drinking glass, make circle cuts.
  • To make filling: Mix together potatoes, cheese, salt, pepper and onion salt. Fill each with 1 to 2 tablespoons of the potato mixture, fold over and seal edges. To cook, bring a large pot of water to boil, carefully dropping in one at a time; stir once. They are done when they float to the top.

1 large egg
3 1/2 tablespoons creme fraiche, or sour cream
5 tablespoons unsalted butter, melted

Steps:

  • Place unpeeled potato in a large saucepan, and cover by 2 inches with cold water. Add 1 tablespoon salt, and bring to a boil. Lower heat to medium, and cook until tender, about 40 minutes. Drain, and peel while still hot, holding the potato with a clean kitchen towel. Pass the potato through a food mill fitted with the finest disk or a potato ricer into a large bowl.
  • Sift flour, potato starch or cornstarch, and remaining salt into the bowl with the potato, and combine with a wooden spoon. In a small bowl, whisk together egg, creme fraiche or sour cream, and butter, and add to the potato mixture. Mix with a wooden spoon until well combined.
  • Turn dough onto a lightly floured surface, and knead for 5 minutes, until smooth and firm. Let rest, covered, for about 10 minutes. Lightly flour a clean work surface, and roll out the dough to slightly thinner than 1/8 inch. Use a 3 1/2-inch-diameter cookie cutter to cut out circles; set them aside on a parchment-lined baking sheet, and cover them with plastic wrap while preparing the filling.

1/4 cup sour cream
4 tablespoons unsalted butter, at room temperature
1/2 teaspoon kosher salt
1 cup all-purpose flour, plus more for rolling dough
1/2 cup leftover mashed potatoes
1/4 cup farmer's cheese
1 teaspoon finely sliced chives
Sour cream
Finely sliced chives
Freshly cracked black pepper

Steps:

  • For the dough: Work the egg, sour cream, butter and salt in a small bowl with a whisk or fork to form a batter. Pour the flour onto a work surface and make a well in the center. Add the sour cream mixture and mix thoroughly with your hands until a dough forms. (The dough is ready to use right away but if you are not forming the pierogies immediately, wrap in plastic and refrigerate the dough for at least 2 hours or up to 2 days.)
  • For the filling: Stir together the mashed potatoes, cheese and chives in a medium bowl until well combined. Chill the filling so it is easier to work with.
  • To form the pierogies: Roll the dough mass out to 1/8-inch thickness and cut 3-inch rounds. Place 1 to 2 tablespoons of filling in each round, and then fold over into half-moons, being careful not to push filling into the seam. Press closed and crimp with a fork if scalloped edges are preferred.
  • Bring a pot of salted water to a rolling boil. Add the pierogies and wait until they float, 3 to 4 minutes. Drain well.
  • Serve with a dollop of sour cream and garnish with chives and a crack of black pepper.

2 3/4 c flour plus more for dusting
1 tsp salt
1/2 tsp pepper
1 c sour cream
1 Tbsp dried parsley (optional)
1 1/2 tsp dried dill weed (optional)
1 tsp dried basil (optional)
1 large egg
FILLING**EDITED SPICE ADDED AND CHANGE TO ONION**
1 lb baking potatoes, peeled and quartered
1 stick butter plus 2 tablespoons
3/4 c shredded white cheddar cheese
2 Tbsp chopped chives or green onion snipped with sissors (can use fine chopped sweet onion if you prefer)
1 clove garlic, minced or grated with microplane
1/8 tsp dried thyme (optional)
salt and pepper to taste

Steps:

  • 1. **EDITED- REFLECTING ADDITION OF SPICES and CLEANED UP INSTRUCTIONS**
  • 2. In a small pot of boiling salted water, cook the potatoes until fork-tender, about 8 minutes. Drain and transfer to a medium bowl. Mash with 2 tablespoons butter and let cool. Stir in the cheddar cheese, onion, garlic and season with salt and pepper to taste. and thyme (optional). Set aside or cover and refrigerate.
  • 3. In a large bowl, combine the flour, 1 teaspoon salt, 1/2 teaspoon pepper and parsley, dill and basil (optional). Make a well in the center of the flour, add the egg and sour cream and stir into the flour. Let the mixture rest for 10 minutes, then transfer to a work surface and knead until a smooth, stiff dough forms. Cut the dough into quarters, wrap each in plastic and refrigerate for 30 minutes.
  • 4. After 30 minutes, remove from refrigerator and on a floured work surface, working with one-quarter of the dough at a time, roll out each piece into an 11-inch circle. (you can also use a bowl as a guide) Using a 4-inch biscuit cutter or drinking glass, cut the dough into rounds. Place a tablespoon of potato filling slightly off center on each circle. Moisten the edge, fold the dough over the filling and press the edges firmly to seal. You can also use a fork to help it along. Trim off any excess dough with a knife or pizza cutter to get rid of rough edges.
  • 5. At this point, if you choose to freeze these, or food save them, place the pierogies on a plate or baking sheet and let them become slightly hardened in the freezer. Package into containers that are freezer safe, use food save bags, or plastic wrap & freezer bag after plastic wrap. Label these as uncooked. Will be good for approx a month. When you are ready to have these, pull amount from freezer, and cook as follows.
  • 6. In a large pot of boiling, salted water, cook the fresh, unfrozen pierogi, about 9 at a time, 5-7 minutes (up to 15 if frozen). They should float like a dumpling. Toss them in a saucepan with melted butter, browning before serving (5-8 minutes). If you have a little green onion/chive left, you can use this as a garnish.
  • 7. Note: You can serve appetizer style with plain or flavored sour cream for dipping or with a marinara sauce. I love white cheddar which is why it is in this particular recipe. You could also use a sharp cheddar cheese if you prefer.

Ready, Set, Cook! Special Edition Contest Entry: Growing up my mom always made pierogies around the holidays. And, being a picky little girl, I always turned my nose up at them. My Hungarian relatives would hang their heads in shame and worry that too much Texas had rubbed off on me. Oh how times have changed! I love pierogies now and especially love playing with different fillings that are far from the traditional sauerkraut filling from my childhood. Simply potatoes mashed potatoes makes it so easy to whip up the pierogie dough and makes for a delicious pierogie. If you haven't ever tried a pierogie, you absolutely must give this recipe a try!

1 1/2 cups bread flour, plus an additional 1/2 cup to cup for kneading and rolling
1 cup Simply Potatoes Traditional Mashed Potatoes, chilled
1 teaspoon salt
1 egg yolk
1 egg white, for sealing the pierogie
1/3 cup crumbled goat cheese
4 green onions, chopped
1/2 cup spinach, chopped
1/2 cup sun-dried tomato, chopped
1/3 cup low-fat sour cream (pierogie chef's choice!) or 1/3 cup cottage cheese (pierogie chef's choice!)
1/2 teaspoon garlic salt
1/2 teaspoon kosher salt
1/2 teaspoon pepper
4 cups salt water
2 tablespoons butter
1/4 cup onion

Steps:

  • In a medium size bowl, combine potatoes, flour, salt, and egg yolk. Work together until a dough forms. Flour a countertop with additional flour and begin to knead the dough for about two minutes. You do not want the dough to be too sticky, so add more flour as kneaded (ha, get it?).
  • Let dough sit while you prepare the filling. In a medium bowl stir together all the ingredient for the filling until combined.
  • Roll pierogie dough out and cut out small circles about 2 1/2 inches in diameter and 1/6 of an inch thick. I know these measurements sound specific, but don't worry if it isn't exact. You just want the dough to be somewhat thin, but not paper thin, and want a wide enough circle so you can stuff the pierogie.
  • Place slightly less than a tablespoon worth of filling into each dough circle. Brush the edges of the dough with egg white and fold one side over top of the other and seal. Make sure the seal is tight. Do this until you have used all the filling.
  • Bring 4 cups of salted water to boil. Once water is boiling, drop pierogies into the water. They will float to the top when they are ready to be pan fried. Let them take their time.
  • In a large skillet melt butter and add onions. Once pierogies are floating transfer them from the water to the skillet. Pan fry about 2 minutes per side. I let mine get pretty brown, but you can opt to cook them for less time. Again, pierogie maker's choice!
  • Once done, remove pierogies from skillet. Serve with chopped onion and sour cream.

  • For the dough: Combine flour, 1/2 teaspoon salt, and baking powder in a bowl and mix well. Add egg, sour cream, water, and canola oil and knead by hand or in a stand mixer fitted with dough hook attachment for 8 to 10 minutes.
  • For the potato filling: Mix together the potatoes, goat cheese, red onion, chives, salt, and pepper, to taste. Add the heavy cream as needed to adjust the consistency.
  • For the caramelized onions: Cook the onions with 3 tablespoons butter very slowly over low heat. Season the onions with salt, freshly ground black pepper, and chopped thyme.
  • For the truffe creme fraiche: Roll dough into 1/8-inch sheets and then cut 2-inch circles out of that. Place heaping tablespoon of filling onto each circle and fold into half-moon shape. Seal with beaten egg.
  • To serve, gently saute pierogies in olive oil, top with onions and creme fraiche.

I used to help my mother make pierogies every spring for Easter and every fall for Thanksgiving.. they're time consuming to make, but well worth the effort!

1 large egg
2 tablespoons sour cream
1 cup milk
4 1/2-5 cups all-purpose flour
4 tablespoons unsalted butter, melted
5 lbs baking potatoes, peeled and quartered (about 10 medium potatoes)
1/4 lb unsalted butter, melted
2 ounces cheddar cheese, grated (about 1/2 cup)
4 ounces cream cheese
coarse salt
fresh ground black pepper
2 tablespoons cornmeal

Steps:

  • In a medium bowl, whisk the egg.
  • Add the sour cream, and whisk until smooth.
  • Add the milk and 1 cup water, and whisk until combined.
  • Slowly add about 3 cups flour, and stir with a wooden spoon to combine.
  • Turn dough out onto a well-floured surface, and work in about 1 cup flour as you knead.
  • Use a plastic scraper to lift the dough as it will stick to the counter before the flour is worked in. Continue kneading for about 8 to 10 minutes, working in another 1/2 cup flour.
  • The dough should be elastic and no longer sticky.
  • Be careful not to add too much flour as this will toughen the dough.
  • Place dough in a lightly floured bowl, and cover with plastic wrap; set aside while you prepare the filling.
  • Cook potatoes in salted boiling water until fork-tender.
  • Drain, and mash with a potato masher.
  • Add melted butter and cheeses, and continue to mash until well-incorporated.
  • Season with salt and pepper to taste.
  • Place a large pot of salted water over high heat, and bring to a boil.
  • Lay a clean linen towel on your counter, and evenly distribute cornmeal on it to prevent sticking.
  • On a floured surface, roll out dough to about 1/8-inch thickness.
  • Using a 2 1/2-inch-diameter glass or cookie cutter, cut out as many circles as possible.
  • Gather dough scraps together, roll out again, and continue cutting.
  • Form filling into 1 1/2-inch balls, and place a ball in the center of each dough circle.
  • Holding a circle in your hand, fold dough over filling, and pinch the edges, forming a thoroughly sealed crescent.
  • Transfer to linen towel.
  • Continue until all dough circles are filled.
  • Add pierogi to the boiling water in batches.
  • They will sink to the bottom of the pot, then rise to the top.
  • Once they rise, let them cook for about 1 minute more.
  • Meanwhile, drizzle platter with melted butter.
  • Remove pierogi from pot, and transfer to platter to prevent sticking.
  • Serve immediately.

Around the holidays (and throughout the year), pierogies are a must have in my parent's house. Growing up, I have to admit, they were not my favorite. My Hungarian relatives would be so ashamed to hear me admit that. The recipe for our pierogie dough has been passed down for years in my family. My Aunt and Nana always had lots of pierogies hidden away in their deep freeze, waiting for my dad to come and devour them. My mom is also an expert pierogie maker and helped me figure out how to do it. While the stuffing I used isn't traditional, it is delicious!

FOR THE PIEROGIE
1 1/2 cup(s) bread flour, plus additional 1/2 cup for kneading
1 cup(s) mashed potatoes
1 teaspoon(s) salt
1 - egg, yolk and egg whites separated
FOR THE FILLING
1/3 cup(s) crumbled goat cheese
4 - green onions, chopped
2 - roma tomatoes, chopped
1/2 cup(s) spinach, chopped
1/3 cup(s) sour cream
1/2 teaspoon(s) garlic salt
1/2 teaspoon(s) salt
1/2 teaspoon(s) pepper
FOR BOILING
4 cup(s) water
FOR PAN FRYING
2 tablespoon(s) butter
1/4 cup(s) chopped onions

Steps:

  • In a medium size bowl, combine potatoes, flour, salt, and egg yolk. Work together until a dough forms. Flour a countertop with additional flour and begin to knead the dough for about two minutes. You do not want the dough to be too sticky, so add more flour as kneaded (ha, get it?)
  • Let dough sit while you prepare the filling. In a medium bowl stir together all the ingredient for the filling until combined.
  • Roll pierogie dough out and cut out small circles about 2 1/2 inches in diameter and 1/6 of an inch thick. I know these measurements sound specific, but don't worry if it isn't exact. You just want the dough to be somewhat thin, but not paper thin, and want a wide enough circle so you can stuff the pierogie.
  • Place slightly less than a tablespoon worth of filling into each dough circle. Brush the edges of the dough with egg white and fold one side over top of the other and seal. Make sure the seal is tight. Do this until you have used all the filling.
  • Bring 4 cups of salted water to boil. Once water is boiling, drop pierogies into the water. They will float to the top when they are ready to be pan fried. Let them take their time.
  • In a large skillet melt butter and add onions. Once pierogies are floating transfer them from the water to the skillet. Pan fry about 2 minutes per side.
  • Once done, remove pierogies from skillet. Serve with chopped onion and sour cream.

  • Start by making the mashed potatoes. Wash, peel and cut your potatoes into chunks and then bring them to a boil. Continue to boil for about 10 minutes or until they are fork tender. Drain the potatoes and then add in the butter, onions, salt and cheese. Mash to combine and set aside in the refrigerator to cool. Once your potatoes are cold, make your pierogi dough.

Pinch edges together until the entire pocket edge is sealed
  • Once your pierogi are made, simply add the pierogi to a boiling pot of water and let them boil for approximately 3-4 minutes or until they all float. You can eat them at that point as is or you can then move them to a skillet with melted butter and saute them up for two to three more minutes and then serve them immediately
