Steps:
- First, begin heating mashed potatoes, as instructed, for 3 minutes in the microwave.
- Meanwhile, peel the skins off of the garlic cloves and finely chop or mince them. Divide the cream cheese into several smaller chunks for easier mixing.
- Next, transfer potatoes to a larger, microwavable dish. Add all ingredients and mix lightly.
- Microwave for an additional 1-2 minutes.
- Stir. Add salt and pepper to taste. Enjoy.

- 1. Heat oven to 350 degrees. In 2 quart saucepan cook bacon over medium heat until slightly crisp. Drain and set aside.
- 2. In mixing bowl combine Ranch, White Vinegar. and pepper. Stir until well mixed.
- 3. Place half of Simply Potatoes in 8" non stick baking dish. Sprinkle with half of bacon slices. Top with half of ranch sauce. Repeat layer with remaining Simply Potatoes, bacon and sauce. Cover; bake 20 minutes. Uncover, continue baking 20-25 minutes until potatoes are tender.

- Preheat oven to 375 degrees.
- In a large bowl combine Simply Potatoes with Greek vinagrette salad dressing, olive oil and pitted olives, stir to combine.

- Mix together in a bowl one 20 oz. package of Simply Potatoes Southwestern Style Shredded Hash Browns, one 16 oz of package of ground turkey, and one egg in a mixing bowl. Mix by hand and form into 10 round balls, and then flatten into patties for grilling or frying in a non-stick pan.

- Roast poblanos over gas stove burner or beneath broiler, turning frequently, until blistered and beginning to blacken in spots. (Stove top is best, but if you don't have a gas burner, use the broiler carefully - do not overcook - need to have firm texture) Place hot poblanos in paper bag, fold bag to close and allow peppers to steam 5 minutes.
- Preheat oven to 350?F.
- While peppers are steaming, lightly spray interior of 12 inch non-stick skillet with non-stick cooking spray.
- Heat over medium high heat until hot and add potatoes in a single layer. Cover and cook over medium high heat for 4 minutes without stirring. Remove lid, and turn potatoes over, re-cover and continue to cook over medium high heat 4 minutes. Do not stir - this allows potatoes to lightly brown on the edges which contributes a great texture to the finished dish. Repeat steps one more time and cook an additional 4 minutes.
- While potatoes are cooking, remove peppers from bag, cut each pepper open, remove stems, seeds and veins, and open up to flatten each pepper onto cutting surface, skin side up. Scrape off blistered skin (ok if some remains) and slice peppers into ¼ inch strips.
- When potatoes have cooked a total of 12 minutes, remove lid and stir pepper strips into potatoes. Add 1 cup heavy cream, stir and continue to cook over medium high heat, uncovered, until cream thickens 2-3 minutes.
- Stir in cheese, remove from heat and cover.
- Bake Taco Shells according to package directions until desired degree of crispness.
- Spoon potatoes rajas into warm taco shells and serve.

The adults enjoy ours especially when accompanied by a fresh green salad with vinaigrette. It's also great for lunch, brunch or breakfast (of course).

Steps:
- Heat two large skillets over medium heat and preheat the broiler of your oven. (Leave your oven rack in the middle setting.).
- Melt 2 tablespoons of butter in one pan and 1 tablespoon of butter in the second pan.
- Remove the pan with less butter from the heat.
- To the other pan, add the hash browns and spread to evenly distribute in a single layer. Use the back of a metal spatula to press down on the hashbrowns to compress them. Sprinkle with about 1/2 teaspoons of seasoned salt and cook undisturbed for about 2-3 minutes until the bottom achieves a beautiful, golden brown crust.
- Place a large rimless baking sheet (or large plate) on top of the skillet and invert it to flip the hashbrowns browned side up. Place the skillet back on the heat and melt the remaining tablespoon of butter. Immediately slide the hashbrowns back into the hot pan. (This maneuver is a little tricky, but if the hashbrown cake falls apart, it will still taste just as yummy!) Sprinkle the cake with 1/2 of the shredded parmesan. Leave it to cook undisturbed for another 2-3 minutes. (If your cheese is not melted at the end of this time, just cover the skillet for a few seconds after you remove it from the heat. The residual heat will do the trick!).
- While the second side is browning, return the second skillet to the heat. Crack your eggs carefully into the hot pan, trying not to break the yolks. Sprinkle with 1/4 teaspoons of seasoned salt. As soon as the bottoms have turned opaque (after just a few seconds), place the skillet under the broiler. Watch for the top of your egg whites to set. Depending on the heat of your broiler, this will likely take 1-2 minutes. Remove when the whites are set and the yolks are still very loose.
- To serve, remove the hashbrown cake from the hot skillet. Cut into four wedges. Top each wedge with two eggs and a sprinkle of cheese. (It's important to put the eggs on TOP, so that the runny yolks will dress the hashbrown cake when you cut into them--bistro-style!).
