I hate cooking after work! This can be a great quickie side or main dish depending on your appetite and/or level of laziness. It's also a bit healthier, as I used smoked turkey leg instead of pork. Hope you enjoy!

¼ cup olive oil
½ smoked turkey leg, meat removed and chopped
¼ yellow onion, sliced
½ cup chicken broth
1 whole cabbage, chopped
1 teaspoon salt
1 dash ground black pepper
1 dash togarashi (Japanese red pepper condiment)

Steps:

  • Heat olive oil in a large skillet over medium heat. Cook and stir turkey in hot oil until warmed, about 3 minutes. Add onion; cook and stir until hot, about 1 minute.
  • Reduce heat to medium-low. Pour chicken broth over the turkey mixture; stir. Bring liquid to a simmer and cook, stirring occasionally, for about 3 minutes.
  • Stir cabbage with the turkey mixture; season with salt, pepper, and togarashi; cook and stir until the cabbage has begun to soften, 2 to 3 minutes. Reduce heat to low, place a cover on the skillet, and continue to cook until the cabbage is completely tender, 2 to 3 minutes more.

2 cups shredded Cheddar cheese
1 large onion, thinly sliced
1 (10.75 ounce) can condensed cream of celery soup
2 tablespoons butter, melted
1 ½ cups Italian-seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix cabbage, Cheddar cheese, onion, cream of celery soup, and butter in a large bowl. Mixture will be dry. Transfer to a large baking dish, spreading vegetables evenly; sprinkle with breadcrumbs. Cover baking dish with aluminum foil.
  • Baked in preheated oven for 45 minutes and remove foil. Continue baking until bubbly and lightly browned, about 15 minutes more.

1 large head cabbage, cored and coarsely shredded
3 tablespoons olive oil
3/4 teaspoon salt
1 lb ground turkey (or ground beef)
1/3 cup chopped onion
32 ounces spaghetti sauce
1 cup sliced fresh mushrooms
1 cup water
1/3 cup long grain rice
8 ounces shredded mozzarella cheese

Steps:

  • Heat oil in a 5-quart dutch oven over medium heat. Cook cabbage with salt until tender, stirring occasionally. Drain well.
  • Cook ground turkey and onion in large skillet until juices evaporate and meat is well-browned. Add spaghetti sauce, mushrooms, water and rice. Heat to a boil.
  • Reduce heat to low; cover and simmer 20 minutes or until rice is tender.
  • Preheat oven to 350 degrees. In a 9 x 13 baking pan, layer 1/2 of the meat sauce, 1/2 of the cooked cabbage, and 1/2 of the cheese. Repeat.
  • Bake 20 minutes or until heated through.

1/2 onion (diced)
1/2 head green cabbage
1 (14 1/2 ounce) can okra (cut okra)
2 (14 1/2 ounce) cans tomatoes (diced)
1 cup water
3 (14 1/2 ounce) cans chicken broth
1 (14 1/2 ounce) can green beans
1 (14 1/2 ounce) can corn (whole kernels)
1 tablespoon chili powder (optional)

2 medium onions, chopped
1 tablespoon canola oil
3 pounds potatoes, peeled and cut into 1-inch pieces

1 tablespoon prepared Dijon mustard
1-1/2 teaspoons prepared horseradish

1 cup water
½ cup uncooked long grain white rice
16 large cabbage leaves
2 tablespoons olive oil
1 pound ground turkey
⅓ cup chopped onion
1 egg, beaten
1 (8 ounce) can tomato sauce
½ teaspoon salt
½ teaspoon ground black pepper
1 (8 ounce) can tomato sauce
⅔ (6 ounce) can tomato paste
1 cup water
3 tablespoons brown sugar
2 teaspoons lemon juice
1 teaspoon Worcestershire sauce
2 cups baby carrots, sliced lengthwise

Steps:

  • In a pot, bring 1 cup water and rice to a boil. Reduce heat to low, cover and simmer for 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch casserole dish.
  • Bring a large pot of water to boil. Reduce heat to low and place cabbage leaves in pot. Simmer 4 to 5 minutes, until tender. Drain leaves and set aside.
  • Heat oil in a skillet over medium heat and cook turkey and onion until turkey is brown and onion is tender. Transfer turkey and onion to a bowl, cool slightly, and mix in cooked rice, egg and 1 can tomato sauce. Season with salt and pepper.
  • In a separate bowl, mix 1 can tomato sauce, tomato paste, water, brown sugar, lemon juice and Worcestershire sauce.
  • Scatter carrot slices evenly over bottom of casserole dish. Spread cabbage leaves on a flat surface and place about 2 tablespoons turkey mixture in the center of each leaf. Fold edges of leaves over filling, then roll into logs. Place cabbage rolls seam side down in dish over carrots. Pour sauce evenly over rolls.
  • Cover and bake 1 hour in the preheated oven. Remove cover during last 10 minutes of cook time. Allow to sit 5 minutes before serving.

2 small cloves garlic, pressed
4 cups fresh baby spinach
1/2 yellow onion, finely chopped
1 medium green cabbage
1 1/4 pound ground turkey
1/4 cup Parmesan cheese, grated
3/4 cup mozzarella, shredded
1/2 teaspoon Italian seasoning
2 cups marinara sauce

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 13- by 9-inch pan with cooking spray. In a medium skillet, heat 1 tablespoon olive oil over medium heat. Add the pressed garlic and cook until fragrant, about 1 minute. Toss in the fresh spinach and allow to cook for 1 minute, then use tongs to toss and cook for another minute. Cook for a total of 2 minutes, until the spinach is welted and cover with the garlic oil. Transfer to a cutting board and chop into small pieces. Set aside to cool. Wipe out the skillet and heat another 1-2 tablespoons of oil over medium-high heat. Add the onions and cook until translucent, about 5-7 minutes. Set aside to cool.
