This backyard grilling staple is nothing short of delicious. But the pre-made kebabs from the grocery store leave us underwhelmed--with tough pieces of meat and chunks of vegetables that always seem to end up either burnt or undercooked. For our beef, we chose tenderloin, which chars beautifully and stays tender during cooking. The vegetables are cut small enough to cook through without burning or falling apart and the tangy marinade brings everything together.

Nonstick cooking spray
1/2 cup red wine vinegar
4 scallions, finely chopped
2 tablespoons Dijon
2 large cloves garlic, finely grated
2 teaspoons granulated sugar
2 teaspoons Italian seasoning
1/2 teaspoon red pepper flakes
Kosher salt and freshly ground black pepper
1/2 cup olive oil
1 pound beef tenderloin, cut into 1- to 1 1/2-inch pieces (about 20 pieces)
1 medium red bell pepper, cut into 1-inch pieces (about 16 pieces)
1 medium yellow bell pepper, cut into 1-inch pieces (about 16 pieces)
2 medium red onions, root left intact, cut into 16 wedges
1 large zucchini, cut into 1/2-inch thick rounds (about 16 pieces)

Steps:

  • Soak the skewers in water for at least 15 minutes and up to overnight. Pat them dry and spray lightly with nonstick cooking spray.
  • Whisk the vinegar, scallions, Dijon, garlic, sugar, Italian seasoning, red pepper flakes, 1/2 teaspoon salt and a few grinds of black pepper in a medium bowl or large liquid measuring cup. Whisking constantly, slowly drizzle in the olive oil until emulsified.
  • Put the beef pieces, bell peppers, onions and zucchini in a large resealable plastic bag. Reserve 1/4 cup marinade and pour the rest into the bag and seal. Toss the bag so the meat and vegetables are well coated. Marinate in the refrigerator for 2 hours and up to overnight.
  • Prepare a grill for medium-high heat.
  • Thread the meat and vegetables onto a skewer in the following order: beef, zucchini, red pepper, yellow pepper and onion. Repeat the threading three more times, ending with a piece of beef (there should be 5 pieces of beef and 4 pieces of each vegetable on the skewer). Repeat with the remaining skewers and ingredients.
  • Sprinkle the kebabs with 1/2 teaspoon salt and a few grinds of pepper. Grill at an angle, uncovered, until deep char marks form and the vegetables start to soften, 5 to 6 minutes. Flip the skewers and continue cooking until the beef has reached an internal temperature of 125 degrees F when measured with an instant-read thermometer, about 5 minutes.
  • Remove from the grill and brush the kebabs with the reserved 1/4 cup marinade. Let rest for 5 minutes before serving.

1/2 teaspoon freshly ground black pepper
1 pound sirloin steak, cut into 1-inch cubes
1 orange, zested, then juiced, remainder discarded
1 lemon, zested, then juiced, remainder discarded
1 lime, zested, then juiced, remainder discarded
4 cloves garlic, minced
1 tablespoon fresh tarragon leaves
1/4 cup soy sauce
1/4 cup canola oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
3 cloves garlic, minced
2 shallots, minced
1 bay leaf (fresh or dried)
2 tablespoon fresh thyme leaves
1/4 cup finely chopped fresh Italian parsley
1 teaspoon chili pepper flakes
1/4 cup olive oil
2 tablespoons freshly squeezed lemon juice
1 pound (16 to 20 count) shrimp, shelled and deveined

Corn on the cob, husked and sliced into 1/2-inch-thick rounds
1/4 cup olive oil
2 tablespoons balsamic vinegar

Steps:

  • If using bamboo skewers, soak them in water for 1 hour to retard charring.
  • Whisk together all of the Dijon-rosemary steak ingredients (except the steak) in a bowl. Toss the steak in the mixture until evenly coated. Cover and marinate in refrigerator for 2 hours.
  • Whisk together all of the citrus-tarragon chicken ingredients (except the chicken) in a bowl. Toss the chicken in the mixture until evenly coated. Cover and marinate in refrigerator for 2 hours.
  • Whisk together all of the lemon garlic shrimp ingredients (except the shrimp) in a bowl. Toss the shrimp in the mixture until evenly coated. Cover and marinate in refrigerator for 2 hours.
  • Cut vegetables into bite-size pieces.
  • Puree balsamic basting vinaigrette ingredients in a blender for 30 seconds.
  • Place meats, shrimp, and veggies in individual bowls and set out buffet style. Instruct your guests to skewer their own kabobs and baste veggies with balsamic vinaigrette.
  • Grill kabobs directly over heat source for about 10 to 15 minutes, turning 1/4 rotation every 2 to 3 minutes, or until the meat and/or fish is cooked throughout.

This recipe has been used in my family forever. It's incredibly simple, easy and fast to prepare. There's not much to it, but the taste is amazing! Note: This is mostly a recipe for the marinade, so you may use anything you'd like on your shish kabobs (ie veggies, meat, etc), but this is what we put on ours. Also, cut everything up in 1 inch, bite-sized pieces to go on the skewers.

1/2 cup soy sauce (Kikkomans is the very best)
1/4 cup sugar
1 -2 chopped garlic clove
1 lb steak (cubed)
1 onion
3 hot sausages
2 green peppers
1 (20 ounce) can pineapple (bite-sized)
mushroom
cherry tomatoes
skewer (if you're using wood ones, soak them in water so they don't burn on the grill)

Steps:

  • In a bowl, whisk the soy sauce, sugar and garlic together. The marinade will be thick and syrupy. Throw in the steak and marinade for at least 2 hours. Marinade overnight for the fullest flavor.
  • When it's time to assemble your skewers, throw all the veggies together and pour the marinade over it and make sure all is coated. (You do not need to pour the marinade on the hot sausage or pinapple).
  • Assemble the skewers however you would like, alternating all the ingredients to give variety.
  • Heat up the grill on medium and cook until the meat is done as you please.

MOM'S BEEF SHISH KABOBS

My Mom has cooked this recipe for as long as I remember. Now that I live on my own, I can't wait to go back home over the holidays to have this excellent dish. Mom would probably be upset that I gave it away, but it is so delicious that I think everyone should have a chance to experience it. Technically shish kabobs use lamb, so these should be called beef kabobs, but this is the family recipe and what we call it.

⅓ cup vegetable oil
½ cup soy sauce
¼ cup lemon juice
1 tablespoon prepared mustard
1 tablespoon Worcestershire sauce
1 clove garlic, minced
1 teaspoon coarsely cracked black pepper
1 ½ teaspoons salt
1 ½ pounds lean beef, cut into 1-inch cubes
16 mushroom caps
8 metal skewers, or as needed
2 green bell peppers, cut into chunks
1 red bell pepper, cut into chunks
1 large onion, cut into large squares

Steps:

  • Whisk the vegetable oil, soy sauce, lemon juice, mustard, Worcestershire sauce, garlic, black pepper, and salt together in a bowl; pour into a resealable plastic bag. Add the beef, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 8 hours or overnight.
  • Add the mushrooms to the bag, coat with the marinade, squeeze out excess air, and reseal the bag; marinate in the refrigerator another 8 hours.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove the beef and mushrooms from the marinade, shaking off any excess liquid. Pour the marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low, and simmer for 10 minutes; set aside for basting.
  • Thread pieces of green bell pepper, beef, red bell pepper, mushroom, and onion onto metal skewers, repeating until all ingredients are skewered.
  • Cook the skewers on the preheated grill, turning frequently and brushing generously with the reserved marinade until nicely browned on all sides and the meat is no longer pink in the center, about 15 minutes.

A bit of work, but a fun dish to serve to company and is always praised for its taste! For best flavour, marinade overnight. You can also baste with your favourite barbecue sauce during grill time.

500 g boneless chicken breasts
500 g round steaks
500 g pork loin (my kids are not big meat eaters and I will sometimes use sliced up smokies in addition to this meat)
mushroom
green pepper
yellow pepper
red pepper
cherry tomatoes
onion (I occasionally use pineapple tidbits as well)
1 (16 ounce) bottle Catalina dressing
1 (16 ounce) bottle Italian salad dressing
bamboo skewer (approx. 32)

Steps:

  • Cut meat into small bite size cubes and place in ziploc bags.
  • Pour Catalina dressing over meat and refrigerate overnight.
  • Cut vegetables into small bite-size pieces and place in a ziploc bag about 5-6 cups.
  • Pour the Italian dressing over vegetables and refrigerate overnight.
  • You can also soak the bamboo skewers overnight to prevent them from burning.
  • The next day, place meat and vegetables onto skewers, alternating colors for appeal.
  • Be sure sure to start and end with meat to prevent everything from slipping off during grilling.
  • I usually use 3-4 pieces of meat per skewer and lots of veggies.
  • Barbecue over medium heat for approx 10-15 minutes or until done.
  • Serve with your favorite salad and enjoy!

I got this recipe from a friend of mine. It is so easy to make and works for chicken, pork, beef or venison. Cook time is "marinating" time.

1/2 cup soy sauce
1/2 cup ketchup
1/2 cup sugar
1 teaspoon ginger
1 teaspoon garlic powder

Steps:

  • Mix all ingredients together.
  • Add meat (chicken, pork, beef or venison) and vegetables (cut into bite size pieces) (I use green pepper, onion, mushrooms and cherry tomatoes).
  • Marintate in refrigerator for at least a couple hours.
  • Thread onto skewers and grill.

1 cup sugar
1 cup reduced-sodium soy sauce
1 cup ketchup
2 teaspoons garlic powder
2 teaspoons ground ginger
2 pounds beef top sirloin steak, cut into 1-1/2-inch cubes
2 to 3 small zucchini, cut into 1-inch slices
1/2 pound medium fresh mushrooms
1 large green or sweet red pepper, cut into 1-inch pieces
1 small onion, cut into 1-inch pieces
2 cups cubed fresh pineapple

Steps:

  • For marinade, mix first five ingredients. Place beef and half of the marinade in a large resealable plastic bag; seal bag and turn to coat. Cover and reserve remaining marinade. Refrigerate beef and marinade overnight., On metal or soaked wooden skewers, thread vegetables and, on separate skewers, thread beef with pineapple. Discard remaining marinade in bag. Grill, covered, over medium heat until vegetables are tender and beef reaches desired doneness, 12-15 minutes, turning occasionally., In a small saucepan, bring reserved marinade to a boil, stirring occasionally; cook 1 minute. Remove vegetables, pineapple and beef from skewers before serving. Serve with sauce.

I have not tried this recipe. I got this recipe from Kickin Carb Clutter. For Memorial Day, I made a double recipe so there would be enough food for two days. We used onions, bell peppers, fresh pineapple chunks, Italian sausage chunks (both sweet and hot), and whole fresh mushrooms. Other possible additions might be zucchini chunks, slightly steamed carrot pieces, radishes, olives, apple slices, cucumber slices, shrimp wrapped in bacon, etc. On Memorial day we barbecued them with low carb bbq sauce, but the sausage dried out and burned before the steak cubes were done, so the next day we took the leftovers and baked them in the oven at 350 degrees for 30 minutes. They were wonderful baked. Much better than bbq'd.
