1 tablespoon olive oil
4 6-ounce pieces skinless salmon fillet
kosher salt and black pepper
1 pound green beans, trimmed
0.5 cup sour cream
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh dill
1 tablespoons chopped capers

Steps:

  • Heat the oil in a large skillet over medium heat.
  • Season the salmon with ½ teaspoon salt and ¼ teaspoon pepper. Cook until opaque throughout, 5 to 6 minutes per side.
  • Meanwhile, in a large saucepan fitted with a steamer basket, bring 1 inch of water to a boil. Place the beans in the basket, cover, and steam until tender, 4 to 5 minutes.
  • In a small bowl, combine the sour cream, lemon juice, dill, capers, and ¼ teaspoon each salt and pepper. Serve with the salmon and green beans.

2 teaspoons olive oil
¼ teaspoon sea salt
¼ teaspoon black pepper
½ cup Daisy Brand Light Sour Cream
1 teaspoon dried dill weed
1 teaspoon fresh grated lemon zest
1 teaspoon honey
1 teaspoon Dijon mustard
1 tablespoon lemon juice
1 tablespoon capers, drained
1 garlic clove, minced

Steps:

  • 1.Spray a grill grate with cooking spray or brush with oil.
  • 2.Heat a gas or charcoal grill.
  • 3.Brush the top of the salmon with the olive oil; sprinkle with the salt and pepper.
  • 4.Grill over medium heat, skin side up, for 3 minutes.
  • 5.Using a broad spatula, turn the fish over; grill for 5 to 7 minutes or until the salmon flakes easily with a fork.
  • 6.Meanwhile, in a medium bowl, mix all of the remaining ingredients. Serve the sauce over salmon.

1 (2 pound) salmon fillet
1 teaspoon lemon-pepper seasoning
1 teaspoon onion salt
1 small onion, sliced and separated into rings
6 slices lemon
¼ cup butter, cut into small chunks
⅓ cup sour cream
⅓ cup mayonnaise
¼ cup dry white wine
1 tablespoon capers
1 tablespoon finely chopped onion
1 tablespoon caper brine
1 teaspoon lemon juice
1 teaspoon prepared horseradish
¾ teaspoon dried dill weed
¼ teaspoon garlic salt
ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil; grease the foil lightly.
  • Place salmon fillet with skin side down on foil. Season salmon with lemon-pepper and onion salt; top with onion rings and lemon slices, dot with butter. Fold foil around salmon and seal tightly.
  • Bake in preheated oven for 20 minutes. Unseal the foil and turn the oven's broiler on. Continue cooking the salmon under the broiler until the flesh flakes easily with a fork, 8 to 12 minutes.
  • While the salmon bakes, stir sour cream, mayonnaise, white wine, capers, chopped onion, caper brine, lemon juice, horseradish, dill weed, garlic salt, and black pepper together in a bowl. Serve with the salmon.

A quick and simple roast fish dish that's packed with flavour and moisture - perfect for batch cooking

140g Greek yogurt
2 tbsp Dijon mustard
zest 1 lemon
1 tbsp chopped dill
1 tbsp small caper , lightly chopped
8 portions or 1 side of fresh salmon , scaled (see tips below if using whole)
lemon wedges, to serve

Steps:

  • Mix the yogurt with the mustard, lemon zest, dill and capers and season with pepper. Now use to coat the salmon really well.
  • If serving now, either grill the salmon on foil for 6-8 mins (there is no need to turn), or barbecue for 3-4 mins on each side, preferably in fish grill to make turning easier. Serve with new potatoes and lemon wedges, alongside green veg and salad leaves.

This is a wonderful (and easy) recipe I got from my Aunt. The flavors of lemon and dill really complement the fish. I like to use wild Alaskan salmon for this recipe, but any salmon will work. I usually don't measure, so these are all estimates. Play with the ingredients to suit your own tastes!

1 lb salmon fillet
2 teaspoons dried dill
1 teaspoon lemon pepper seasoning
1/3 cup fat free sour cream (for Sauce)
1 tablespoon dried dill (for Sauce)
1 teaspoon parsley (for Sauce)
1 teaspoon lemon juice (for Sauce)
1/2 teaspoon honey mustard (for Sauce)
1 dash lemon pepper seasoning (for Sauce)
olive oil flavored cooking spray

Steps:

  • Preheat oven to 450 degrees.
  • Spray glass baking dish with olive oil cooking spray.
  • Sprinkle lemon pepper and dill seasonings on both sides of the salmon.
  • Bake Salmon at 450 for 7 minutes.
  • Turn over and bake for another 7 minutes.
  • To make the Zippy Dill Sauce, combine sour cream, parsley, lemon juice, honey mustard, and a dash of lemon pepper seasoning.
