A touch of sweet white wine and citrus makes this lovely pear sorbet so refreshing. You can use canned pears when fresh ones aren't available. And lime juice is a nice substitute for lemon.- Deirdre Cox, Kansas City, Missouri

Number Of Ingredients 4

5 small pears, peeled and sliced
3/4 cup sweet white wine or apple juice
1/3 cup sugar
4-1/2 teaspoons lemon juice

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until pears are tender. Cool slightly. , Pour into a food processor; cover and process for 1-2 minutes or until smooth. Transfer to a 13-in. x 9-in. dish. Cover and freeze for 4 hours or until firm. , Just before serving, process again in a food processor for 1-2 minutes or until smooth. Spoon into dessert dishes.

Most pear ice recipes I'd seen look good are either too labor-intensive and/or sugar-heavy. Pears are naturally sweet enough for my taste, but I added honey because of its health-boosting properties and because sweetness diminishes with freezing. This calls for canned pears that were canned in water or juice, not syrup or added sugars. Prep/cook time doesn't include freezing time, I'd freeze overnight.

1 (14 ounce) can pear halves in natural juice (NOT syrup!)
1 1/2 teaspoons honey
1/4 teaspoon almond extract
1/4 teaspoon ground cloves
1 dash cardamom

Steps:

  • Pour the entire can of pears-- juice and all-- into a blender or food processor. Pulse until you reach the desired consistency, I do a few rough chops to get them mostly pureed but still a little bit of fruit in there.
  • Add the honey and spices and pulse again.
  • Pour into ice pop molds for pear-sicles, or silicone cups or ramekins for Italian ice style, and freeze for at least 4-6 hours or overnight. This yields about two generous servings, or 5-6 2-oz ice pops.

2 cups water
1 1/2 cups sugar
6 pieces cloves
6 pieces allspice

Steps:

  • In a saucepan, combine the pears, water, and sugar and spices.
  • cook and stir occasionally over medium heat for about 15-20 minutes or until pears are soft.
  • chill in refrigerator until completely cold.
  • puree through a sieve, blender or food processer.
  • process in ice cream machine according to manufacturers instructions.

3 medium ripe pears, peeled, cored, and thinly sliced (about 4 cups)
3/4 cup water
1/2 cup lemon juice
1/2 cup granulated sugar
3 tablespoons firmly packed light brown sugar
1 bay leaf
1 teaspoon vanilla extract

Steps:

  • In a large saucepan, bring the pears, water, lemon juice, sugars, and bay leaf to a boil over moderate heat. Lower heat and simmer, uncovered, for 25 minutes or until the pears are very tender. Let cool then remove and discard the bay leaf and stir in the vanilla.
  • Transfer mixture to a food processor (or blender) and whirl for 1 minute or until pureed. Pour into an 8x8x2 pan, cover with plastic wrap and freeze for 2 hours until the center is almost frozen. Remove the mixture from the freezer and beat until smooth. Return to the freezer for 45 minutes and beat again until smooth. Freeze 2-3 hours more or until firm.
