1/4 cup butter, softened
1/2 cup sugar
1 cup all-purpose flour
1/4 cup chopped walnuts
FILLING:
1 package (8 ounces) reduced-fat cream cheese
3/4 cup confectioners' sugar
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed, divided
7 medium peaches, thinly sliced
GLAZE:
3 tablespoons cornstarch
2 cups water
1 package (.3 ounce) sugar-free lemon gelatin

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Gradually add flour (mixture will be crumbly). Stir in walnuts. Press into a 13-in. x 9-in. baking dish coated with cooking spray. Bake at 350° for 14-16 minutes or until lightly browned. Cool on a wire rack. , For filling, in a large bowl, beat cream cheese and confectioners' sugar until smooth. Fold in half of the whipped topping. Carefully spread over crust. Top with peaches. , For glaze, in a small saucepan, combine cornstarch and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Gradually stir in gelatin until dissolved. Cool to room temperature. Spoon over peaches. Cover and refrigerate until firm. Dollop with remaining whipped topping.

I was looking for something quick, simple and sweet, for dessert but not too sweet. I looked through the cupboards and this is what I came up with. It just hit the spot, not to sweet and definitely quick. My youngest son ate two bowls of it.

2 cup(s) special k vanilla almond cereal, crushed to 1 cup (could use a similar favorite)
1/3 cup(s) brown sugar, firmly packed
1/4 cup(s) all purpose flour
3 tablespoon(s) butter, softened
2 can(s) (16-oz each) sliced peaches in natural juice, drained
dash(es) cinnamon and/or nutmeg

Steps:

  • Preheat oven to 350*.
  • In small bowl combine cereal, sugar, flour, and butter; mix well and set aside.
  • Place drained peaches in ungreased 2-quart casserole dish. Sprinkle a little (or to taste)cinnamon and nutmeg over the peaches. I used a little sprinkle of both.
  • Top with cereal mixture. Bake 15-20 minutes or until golden brown.
  • Serve with either a little cream poured over the top while still warm, a scoop of vanilla ice cream, or a little (or a lot) of whip cream. I chose a little cream for my serving and it just kicked it up a notch on the comfort level.

I saw this on an episode of 'Come Dine with Me' the other day. The measures I have given are what I have tried and are approximate since none were given on the show. Feel free to add either more brown sugar or butter as per your taste. It is served along with a scoop or two of vanilla ice cream. I didn't have ice cream on hand so I had it just like that and quite liked the earthy flavour of the brown sugar sauce.

2 peaches, halved and stoned
2 tablespoons unsalted butter
5 tablespoons brown sugar

Steps:

  • Grill the peaches cut side down for about 5-10 minutes or until they are soft but not squishy.
  • Melt the butter in a small saucepan and add the brown sugar. Swirl around for a few seconds till it just starts bubbling.
  • Place 2 halves of the peaches cut side up on a plate and drizzle with the sauce. Serve warm with a scoop of vanilla ice cream.

This Peach Delight brings the flavors of cheesecake and fresh summer peaches together into one easy no bake summer dessert!

8 ounces cream cheese, softened to room temperature
1/2 cup powdered sugar
8 ounce tub whipped topping, thawed
5-6 peaches, sliced
2 cups crushed graham crackers (about 12-13 whole grahams)
8 Tablespoons butter, melted
2 Tablespoons brown sugar
1 cup sugar
4 Tablespoons cornstarch
Pinch salt
1 1/2 cups water
1 3 ounce package peach jello

Steps:

  • In a medium saucepan, stir together the sugar, cornstarch, and salt. Add the water then bring the mixture to a gentle boil, whisking often, until it forms a thick gel-like consistency. Stir in the jello and continue to cook until completely dissolved. Remove from heat and allow to cool while you prepare the remaining ingredients.
  • Combine the graham crackers, butter, and brown sugar in a bowl then press the mixture into the bottom of a 9 x 13 inch pan.
  • In the bowl of an electric mixer, beat the cream cheese and powdered sugar until smooth. Beat in the whipped topping. Spread the mixture over the graham cracker crust. Top with sliced peaches.
  • Once the jello mixture has cooled to room temperature or is just barely warm, pour it over the peaches. Cover and refrigerate at least 2 hours or overnight. Serve cold.

SYLIVA'S PEACH DELIGHT

This is a wonderful summer dessert. Everyone at the family reunion has gotten to expect it. It is easy to "lighten up" by using low fat and sugar free ingredients. If you use fresh peaches instead of canned sprinkle some lemon juice over them to prevent browning. I make the 4th layer first because it takes so long for it to cool. Is better if made a day ahead.

2 cups self-rising flour
1 cup melted butter
1 cup nuts
1 (8 ounce) package cream cheese
2 1/2 cups confectioners' sugar
1 (8 ounce) carton whipped topping
4 cups sliced peaches
1 cup sugar
4 tablespoons cornstarch
4 tablespoons peach Jell-O
1 cup water

Steps:

  • Layer 1.
  • Mix together first three ingredients and spread in 9'"x 12" baking dish. Bake at 375 for 15-20 minutes or until lightly browned. Cool completely.
  • Layer 2.
  • Mix together cream cheese , confectioners sugar and whipped topping well and spread on crust and refrigerate.
  • Layer 3.
  • Place peaches evenly over 2nd layer.
  • Layer 4.
  • Mix sugar, corn starch, and jello well. Stir in water and cook over medium heat until thick and clear. Cool completely. Pour over peaches and refrigerate.

10 rhodes dinner rolls, thawed and risen
8 ounces cream cheese, softened
1/2 cup powdered sugar
1/4 teaspoon almond extract
1 cup whipped topping
4 -5 medium size peaches, peeled and sliced
nutmeg, if desired

Steps:

  • Spray counter lightly with non-stick cooking spray. Combine rolls into a ball and roll into a 9x13-inch rectangle. Place in a sprayed 9x13-inch baking pan to cover the bottom. Poke several times with a fork. Bake at 350°F 15-20 minutes or until lightly browned. Remove from pan to cool. In a bowl, combine cream cheese, sugar and almond extract until smooth; fold in whipped topping. Spread evenly over cooled crust and top with peaches. Sprinkle lightly with nutmeg, if desired.

1 lb vanilla wafer
1 cup butter
2 cups powdered sugar
4 eggs
7 -8 ripe peaches, skinned and sliced
1 pint whipping cream
2 tablespoons powdered sugar
1 drop vanilla

Steps:

  • Grind box of cookies to course crumbs. Place 3/4 crumbs in a 13" X 9" pan. Reserve remaining crumbs.
  • Beat butter, powdered sugar and eggs for 15 minutes. Pour on top of the crumb layer.
  • Next layer peach slices evenly to cover.
  • Whip whipping cream to soft peaks and add 2T powdered sugar. Beat to medium peaks. Layer whipped cream evenly over the peaches.
  • Sprinkle remaining cookies on top.
  • Refrigerate 1/2 day before serving.
