OVEN ROASTED SEA BASS

Steps:
- Gut, scale and rinse the fish throughly. Pat dry with paper towels. Heat the oven to 350F. Cut one large pieces of foil that is big enough to wrap each whole fish. In each piece lay the fish. Coat wit olive oil on both sides. On the inside of the fish rub the Jerk seasoning inside. Sprinkle with sea salt and freshly ground black pepper on both sides. Stuff lemon slices in the fish. Sprinkle the garlic on top. Place the butter and thyme on top. Fold and crimp the foil to make a pocket. Lay on a baking sheet and place in center of oven. Bake for 30-40 minutes depending on the size of fish. The skin will feel soft but the meat will be firm.
- Note: If you would like to make the skin crispier, unwrap the fish after it has cooked through and set under broiler. Keep checking because the broiler can burn the fish easily. Also this might make the fish stick to the foil a bit and the tail might burn. So don't walk away.
SIMPLE OVEN ROASTED SEA BASS
A super simple way to do a whole fish in the oven. Using a Sea Bass as our main ingredient, we'll enhance things with some ginger, scallion, lemon and sliced fennel.

- Preheat your oven to 400 degrees F (200 degrees C).
- Give the Whole Sea Bass (1 pound) two cuts on the belly. Drizzle half the Olive Oil (1 tablespoon) in your roasting dish, place a layer of the Fennel Bulb (1) and rest the fish on top of it.
- Open the cavity of the fish and add Salt (1/4 teaspoon) and Freshly Ground Black Pepper (1/16 teaspoon). Then add the Fresh Ginger (3/4 piece) and white parts of the Scallion (2). Place some Cherry Tomato (to taste) inside fish and finally, tuck in the Red Bird's Eye Chili Pepper (1) for a little kick and some Lemon (1/2) for a citrus punch.
- All you have to do next is put the Fresh Ginger (1/4 piece), Lemon (1/2) and Cherry Tomato (to taste) on the top and sides of the fish. Drizzle the remaining Olive Oil (1 tablespoon) and go in with the rest of the Salt (1/2 teaspoon) and Freshly Ground Black Pepper (1/16 teaspoon). Drizzle on the Light Soy Sauce (1 tablespoon) over the fish as well. Then place on the middle rack of the oven uncovered for 25-30 minutes, depending on the size of your fish.
- By roasting uncovered we'll char the tomatoes so they'll burst with sweetness. After about 25 minutes, crank the heat to "broil", about 525 degrees F (275 degrees C) for about 5 minutes to give everything a lovely color. Serve hot and enjoy!

SIMPLE OVEN-BAKED SEA BASS
If you're looking for a simple recipe that really preserves the delicate flavor of sea bass, then I highly recommend you try this one. You can try this with other types of fish but my version used a Chilean sea bass. The original recipe came from SparkRecipes and this is my simplified version of it. Enjoy!

Steps:
- Preheat oven to 450F°.
- In a cup, mix garlic, olive oil, salt, and black pepper.
- Place fish in a shallow glass or ceramic baking dish.
- Rub fish with oil mixture.
- (Optional) Pour wine over fish.
- Bake fish, uncovered, for 15 minutes; then sprinkle with parsley or Italian seasoning and continue to bake for 5 more minutes (or until the thickest part of the fish flakes easily).
- Drizzle remaining pan juices over fish and garnish with lemon wedges.
- Enjoy!
QUICK OVEN ROASTED GINGER SCALLION LIME SEA BASS
A twist on an epicurious.com recipe. So quick and flavorful. Serve with jasmine rice or some type of asian green such as bok choy.

Steps:
- Pre heat oven to 500°F.
- Mix first 5 ingredients and 3 tsp of oil. Season with pepper or salt if needed.
- Brush oven proof glass dish with 2 tsp oil.
- Arrange fish in dish.
- Spoon sauce over fish, leaving enough to drizzle over when serving.
- Roast fish for 12 minutes until opaque.
- Top with remaining sauce.
