CREAMY GARLIC CHICKEN BREAST RECIPE

Lightly floured boneless chicken breasts are pan fried in until golden and crispy before being added to a mouth-watering garlic cream sauce! Filled with caramelized flavour, you will LOVE how easy this is!

2-3 large boneless and skinless chicken breasts (halved horizontally to make 4)
4 tablespoons flour ((all purpose or plain))
4 tablespoons finely grated fresh Parmesan cheese
2 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon Black cracked pepper
5 tablespoons olive oil
2 tablespoons butter
1 small onion (finely chopped)
1 whole head of garlic (peeled and divided into 10-12 cloves)
1 1/4 cup chicken broth ((stock))
1 1/4 cup half and half or heavy cream ((or evaporated milk))
1/2 cup finely grated fresh Parmesan cheese
2 tablespoons fresh parsley, (to serve)

Steps:

  • Season the chicken with salt, garlic powder and pepper.
  • In a shallow bowl, combine the flour, parmesan cheese. Dredge chicken in the flour mixture; shake off excess.
  • Heat 2 tablespoons of oil and 1 tablespoon butter in a large skillet over medium-high heat. Swirl pan to coat evenly.
  • Fry 2-3 chicken breasts until golden on each side, cooked through and no longer pink (about 4-5 minutes each side, depending on the thickness of your chicken). Transfer to a warm plate. Set aside.
  • Wipe pan over with a sheet of paper towel. Repeat with remaining oil, butter and chicken breasts. When cooked, transfer the chicken onto the same plate.
  • Reduce heat to medium. Sauté the onion in the remaining oil/juices in the pan until softened.
  • Smash 6 whole cloves of garlic with the blunt edge of the back of a knife
  • Add the remaining oil to the pan and heat through, mixing it through the onions. Sauté smashed garlic cloves and whole garlic cloves until fragrant, about 2-3 minutes. Add the broth to deglaze the pan. Scrape up any browned bits and let simmer and reduce to half, about 5 minutes.
  • Reduce heat to medium-low. Pour in the cream. Bring the sauce to a gentle simmer for about 2-3 minutes, combining all of the flavours together.
  • Mix in the parmesan cheese. Continue cooking gently for about 2-3 minutes until cheese melts, while stirring occasionally. Season with salt and pepper to your taste.
  • Add the chicken back into the pan and let simmer for a further 2-3 minutes to thicken the sauce to your liking. The chicken breast will soak up all of the delicious flavours.
  • Garnish with parsley and a little black cracked pepper. Serve over pasta, cauliflower mash, zucchini noodles, rice or mashed potatoes.

2/3 cup breadcrumbs
2/3 cup grated parmesan cheese
1/4 cup minced fresh parsley
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
5 tablespoons butter or 5 tablespoons margarine
3 garlic cloves, minced
3 lbs chicken, cut up

Steps:

  • Preheat oven to 350.
  • In a shallow bowl, blend together bread crumbs, Parmesan cheese, parsley, salt, and pepper.
  • In a small saucepan, heat butter and garlic over very low heat until butter melts.
  • Remove from heat.
  • Brush chicken pieces with garlic butter, then roll in bread crumb mixture to coat.
  • Place chicken skin side up on a large foil-lined baking sheet.
  • Mix together any remaining crumb mixture and butter and sprinkle over chicken.
  • Place in oven and bake 1 hour.

2 large eggs
2/3 cup buttermilk (must be thick buttermilk; see notes for substitutes)
1 cup white flour
⅔ cup grated Parmesan cheese
4 tablespoons bread crumbs
1 teaspoon baking powder
2 teaspoons salt (or less to taste)
2-3 teaspoons garlic powder
1 teaspoon ground paprika
1 teaspoon onion powder
1/2 teaspoon ground black pepper
2 pounds chicken tenders
1/3 cup butter

Steps:

  • Prep: Preheat oven to 410°F (210°C). Place a dark-colored roasting pan WITHOUT non-stick coating (a rimmed baking sheet works as well) in the oven to heat up.
  • Prepare egg mix: In a medium bowl, whisk together eggs and buttermilk.
  • Prepare dry flour mix: In a separate bowl, mix flour, parmesan, breadcrumbs, baking powder and seasoning together.
  • Bread chicken: First toss all chicken pieces in dry ingredients to lightly coat.Then, toss chicken pieces in egg mixture to generously coat.Finally, coat each piece individually with dry ingredients again, but this time in a thick layer. Make sure there is enough mix underneath the chicken piece, else it sticks to the dish. Generously spoon flour mixture over top of chicken. Use the back of a tablespoon to pound breading onto the chicken, flattening the chicken pieces lightly to create a uniform thickness and a thick layer of breading.
  • Bake: Take hot pan out of the oven and melt 2/3 of the butter on it. Place breaded chicken pieces on pan, dot with remaining butter.Bake for 10-15 minutes until bottom is golden and crisp, CAREFULY flip (use an offset spatula to slide under chicken, otherwise breading may fall off!) and bake for another 5-10 minutes (depending on how thick chicken pieces are).Finish by broiling for 2-3 minutes until golden brown and crispy.
  • Rest: CAREFULLY remove chicken from pan and onto a cooling rack. Rest for 5 minutes, then serve immediately.

4 boneless skinless chicken breasts (pounded semi-thin or leave thick see step 6)
1 cup oil (or as needed for frying)
1 tablespoon garlic powder
1 teaspoon onion powder
1 teaspoon fresh ground black pepper
1 1/2 teaspoons seasoning salt
1 teaspoon paprika
1 cup all-purpose flour
1/2 cup dry breadcrumbs
1/4-1/2 teaspoon cayenne pepper (adjust to suit heat level) (optional)
1 large egg
3/4 cup milk
2 tablespoons fresh minced garlic
1 1/2 teaspoons cumin (you may use more if desired)

Steps:

  • In a bowl whisk the egg then whisk in milk, fresh garlic and cumin.
  • Place the chicken in the mixture and refrigerate for 1 or more hours.
  • In a shallow dish combine garlic powder with onion powder, black pepper, seasoned salt, paprika, flour, breadcrumbs and cayenne pepper (if using).
  • Heat 1 cup oil in a heavy skillet to 350 degrees F.
  • Remove the chicken from the egg/milk mixture allowing excess to drip off, then coat in the flour/breadcrumb mixture.
  • Fry the chicken in hot oil about 5-6 minutes per side or until cooked through (if you do not pound the chicken breasts thin you may partially cook the chicken in the skillet then remove to a baking sheet and finish cooking in the oven if desired).
  • Remove to paper towels or a brown paper bag to absorb the oil.
