600g / 1.2 lb chicken thighs (4 - 5) (, boneless skinless (or breast or tenderloin, Note 1))
1 tsp garlic powder
Salt and pepper
1 tbsp olive oil
1 large onion (, chopped)
300g / 10oz mushrooms (, sliced (not too thin))
40g / 3 tbsp butter
2 tbsp flour ((Note 2))
2 cups / 500 ml beef broth/stock (, salt reduced)
1 tbsp Dijon mustard
2/3 cup (150g) sour cream ((or yogurt))
250 - 300 g / 8 - 10 oz pasta or egg noodles of choice ((Note 3))
Chopped parsley or chives (, for garnish (optional))

Steps:

  • Sprinkle chicken with garlic powder, salt and pepper on both sides.
  • Heat oil in a large skillet over medium heat. Place chicken in skillet smooth side down.
  • Press down lightly with with spatula. Cook for 4 minutes until golden.
  • Turn and press lightly with spatula. Cook for 2 minutes.
  • Remove chicken onto a plate.
  • Turn heat down to medium high. Add butter, melt. Then add onions, cook for 1 minute, then add mushrooms.
  • Cook mushrooms until golden. Scrape bottom of fry pan to get all the golden bits off (this is flavour!).
  • Add flour, cook, stirring, for 1 minute.
  • Add half the broth while stirring. Once incorporated, add remaining broth.
  • Stir, then add sour cream and mustard. Stir until incorporated (don't worry if it looks split, sour cream will "melt" as it heats).
  • Bring to simmer ,then reduce heat to medium low. Once it thickens to the consistency of pouring cream (3 minutes), adjust salt and pepper to taste.
  • Add chicken back in (including plate juices). Simmer for 1 minute, then remove from stove.
  • Serve over pasta or egg noodles, sprinkled with parsley or chives if desired.

1 pound Lean Ground Beef (I use 85/15 or 90/10 Hamburger Meat)
3 tbsp Butter
3 tbsp Flour
1 1/2 cups Low-Sodium Beef Broth
1 cup Light Sour Cream
1 can Fat-Free Cream of Mushroom Soup
Salt and Pepper, to taste
2 tsp Onion Powder
2 tsp Garlic Powder
Parsley, to taste
Egg Noodles, cooked according to package directions

Steps:

  • Start by bringing a large pot of water to boil and cook your egg noodles according to the package instructions.
  • While your noodles are boiling, begin browning your ground beef over medium heat in a large cast iron skillet until the beef is fully cooked and no pink remains. If desired, add in and cook fresh mushrooms and diced onion with the ground beef. Once fully cooked, drain beef and set aside.
  • Using the same skillet as before, begin melting butter in the pan over medium heat. Once melted, add flour and stir until combined.
  • Using a large whisk, add in beef broth and begin stirring vigorously to remove lumps. Turn the heat up to high and bring to a boil for 2-3 minutes until the sauce has thickened.
  • Lower heat to medium and add the cream of mushroom soup, stirring until combined. Remove from heat and let cool for 1-2 minutes. Slowly stir in the sour cream and season to taste. I love adding salt, pepper, garlic powder, and onion powder, and if I want a little kick will sometimes add some paprika.
  • Once you've seasoned it to perfection, re-add the cooked ground beef, stir, and let simmer on low heat for 5 minutes.
  • Add your drained noodles to the pan and stir until well combined. If desired, top with fresh parsley and enjoy!

7 ounces cremini mushrooms (sliced)
1/2 medium onion (chopped)

1 tablespoon Worcestershire sauce (or more, to taste)
1 tablespoon Dijon mustard (or more, to taste)
1 cup beef broth

Steps:

  • Add the oil and butter to a skillet over medium-high heat. Once the pan is hot, add the mushrooms and onions. Sauté, stirring occasionally, for about 7-10 minutes or until the water has been released from the mushrooms and it cooks off and they get a nice sear. Remove the mushrooms/onions from the pan and set aside.
  • Add the ground beef to the skillet and cook it until browned (about 8 minutes), breaking it up with your spoon as you go along. Once the beef starts cooking a bit, stir in the garlic. If there's a lot of excess fat (there shouldn't be if you used very lean beef), spoon most of it out once the meat is done browning.
  • Sprinkle the flour over the beef and stir it in. Let it cook for about a minute (stir it a few times).
  • Add in the Worcestershire sauce, Dijon mustard, and broth, and cook for another 1-2 minutes, stirring until the flour & mustard have dissolved and it's heated through (also be sure to scrape the bits from the bottom of the pan).
  • Add the mushrooms and onions back to the pan (stir them in).
  • Take the pan off the heat and stir in the sour cream. Season with salt & pepper as needed. Serve immediately over buttered egg noodles, mashed potatoes, or rice.

1 yellow onion (peeled and diced)

1 pound extra lean ground beef
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1.5 tablespoons Worcestershire sauce
3 tablespoons all-purpose flour
3 cups low sodium beef stock or broth
3 cups egg noodles (uncooked) (about 5 ounces)
1/3 cup sour cream
1/4 cup chopped fresh parsley

Steps:

  • Set Instant Pot to "Sauté."Note: Settings may vary on your Instant Pot, depending on the model. Please refer to the manufacturer's guide on how to use your Instant Pot.

I loved the cookbook series called "A Man and A Can", and developed this recipe based on one of the "Man-Can" recipes that used a pint of French Onion Dip as a main ingredient in the sauce. Brilliant!

1 1/2 lbs chicken breasts, raw, cut in half lengthwise
1/2 teaspoon garlic salt
1/8 teaspoon fresh ground pepper
1 tablespoon olive oil
1 cup onion, chopped
8 ounces mushrooms, raw, sliced
12 ounces French onion dip, prepared, from refrigerator section
8 ounces wide egg noodles

Steps:

  • Rinse off chicken tenders; pat dry with paper towels. Sprinkle raw chicken with garlic salt and pepper. **Thyme is another great herb in this recipe, if you have it in your pantry**.
  • Heat olive oil in a large, wide saute pan. Add chicken breast tenders to hot oil and saute 2 minutes on one side; flip and saute 1 minute on other side (may need to do this in two batches - add a little more oil if needed).
  • Remove chicken to a plate. Put chopped onions and sliced mushrooms back into pan; stir and saute 5-6 minutes until onion is soft.
  • Add French Onion Dip directly into sauteed vegetables; gently blend together. Return chicken to pan and allow everything to simmer about 10 minutes until chicken is cooked through.
  • While chicken is finishing, cook egg noodles in boiling water according to package directions. Drain noodles.
