Crispy, homemade chicken nuggets are sure to be a hit with kids and adults alike. Who could resist crunchy, golden nuggets of joy?! No one, that's who!

500 g (1lb) chicken breasts (sliced into bite sized chunks)
2 cups flour
2 tsp paprika
1½ tsp garlic powder
1½ tsp onion powder
1½ tsp salt
½ tsp pepper
3 eggs

Steps:

  • Heat vegetable oil in a large pot.
  • Whisk together the flour and spices in a shallow bowl.
  • In a separate bowl, whisk the eggs together.
  • Coat the chicken first in the flour, then in the eggs and finally in the flour again. For a thicker coating, repeat the breading.
  • Fry the chicken nuggets in the oil until golden brown and crisp. Remove with a slotted spoon then drain on kitchen paper before serving.

3 tablespoons extra virgin olive oil
2 tablespoons prepared Dijon mustard
2 tablespoons lemon juice
1 small clove garlic, minced
Salt and freshly ground black pepper
1 1/2 pounds skinless boneless, chicken breasts or chicken "tenders"
1 cup dried bread crumbs
Salt and pepper
2 tablespoons butter
1 tablespoon vegetable oil

Steps:

  • In a mixing bowl combine the olive oil, mustard, lemon juice and garlic. Blend until smooth and season to taste with salt and pepper. Cut the kids portion of chicken breasts into 1-inch cubes; leave the adults' portion whole. Marinate all of chicken in the mustard mix for as long as possible. Season bread crumbs with salt and pepper. Dip the chicken in bread crumbs so all sides are well coated. Heat the butter and vegetable oil in a large skillet and saute for 5 minutes a side or until just cooked through. Variations: if kids don't like mustard mix, marinate their portion of chicken cubes in ketchup, a barbecue sauce or some dressing they love, then dip in bread crumbs and proceed with recipe.

1 cup all-purpose flour
1 tablespoon seasoned salt
Salt and freshly ground black pepper
2 large eggs
2 cup seasoned breadcrumbs
2 chicken breasts, cut into small pieces
Vegetable oil, for frying
Ketchup, for serving

Steps:

  • In a plastic bag, mix the flour, seasoned salt and some salt and pepper. In a bowl, mix the eggs with 2 tablespoons water. In a separate bowl, add the breadcrumbs.
  • Shake the chicken pieces in the bag to coat. In batches, dip them in the egg wash, then in the breadcrumbs.
  • Heat about 2 inches of vegetable oil in a large skillet over medium-high heat until a few breadcrumbs dropped in the oil start to sizzle immediately. Fry the chicken, in batches if needed, until golden brown and cooked through, a couple minutes per side. Drain on a paper towel and serve with ketchup.

1 lb boneless skinless chicken breast, cut into chunks
1/4 cup old fashioned oats (also known as 5 minute oats)
1/4 teaspoon dried parsley
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon kosher salt
3/4 cup panko breadcrumbs
1 tablespoon parmesan cheese, grated

Steps:

  • 1. Preheat oven to 375°F.
  • 2. Place the first 6 ingredients in a food processor until chicken is finely chopped and ingredients are combined.
  • 3. Place the bread crumbs and parmesan cheese in a shallow bowl or on a plate and stir to combine.
  • 4. With moistened hands, roll 1 tablespoon of chicken mixture between your palms and flatten it into a "nugget" shape.
  • 5. Gently press nuggets into bread crumbs to evenly coat them.*.
  • 6. Place nuggets on a cooling rack. Place cooling rack over a foil-lined baking sheet.
  • 7. Lightly spray nuggets with cooking spray.
  • 8. Bake for 15 minutes and serve.**.
  • * To freeze, place nuggets on a sheet tray after this step and freeze for one hour. Place nuggets in labeled freezer bags for up to 3 months. When ready to cook, follow the directions starting with step #6.
  • ** If you want your nuggets to be golden brown, place under the broiler for 2 minutes after cooking.

1 cup club brand multigrain cracker crumb (approx 1/2 sleeve)
1/2 cup shredded parmesan cheese
1/4 cup low fat ranch dressing
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400 degrees.
  • Place cut up chicken into a bowl or gallon ziplock bag. Add in ranch dressing and coat chicken.
  • Place all remaining ingredients in a bowl and mix.
  • Coat chicken in cracker crumb mixture.
  • Place nuggets in a single layer on a greased cookie sheet. Bake for 12 to 13 minutes.
