Simple Baked Potato image

This recipe for baked potatoes is delicious with steak, meatloaf, or by itself. I never was fan of the potato's skin until I began making this recipe! These potatoes taste amazing loaded with cheese, sour cream, and/or chives! If you want to get fancy, use this recipe as a base recipe for one of the many potato skin, whipped baked potato, or other more-to-it recipes on here.

4 tablespoons butter
2 teaspoons olive oil
1 ½ teaspoons garlic powder
salt and ground black pepper to taste
6 medium potatoes, scrubbed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place butter in a microwave-safe bowl and microwave on high until melted, 20 to 30 seconds. Stir in olive oil, garlic powder, salt, and pepper.
  • Use a fork to poke about 5 holes into each potato. Place each potato on a sheet of aluminum foil about 6 inches wide. Brush butter mixture over potatoes, making sure to evenly coat each one. Wrap up completely in foil. Poke 5 more holes into the wrapped potatoes.
  • Bake potatoes in the center of the preheated oven until easily pierced with a fork, about 1 hour. Spread leftover butter mixture over potatoes after cutting them open.

EASY TWICE BAKED POTATOES



Easy Twice Baked Potatoes image

These are easy to cook and assemble and can be frozen to be used as needed. I use large potatoes, so 1/2 stuffed potato shell is one serving.

2 large baking potatoes
1/2 cup sour cream
1/4 cup milk
4 tablespoons butter
1/2 teaspoon refrigerated minced garlic
1/4 teaspoon salt
1/8-1/4 teaspoon pepper
3/4 cup grated cheese, divided
2 green onions (to garnish)
paprika (to garnish)

Steps:

  • Bake potatoes in a 375 degree oven 1 to 1 1/2 hours until done.
  • When potatoes are done let them cool 10-15 minutes.
  • Then slice them in half lengthwise.
  • Using a spoon carefully scoop out the potato, leaving a little on skin so they don't break. Save the skins.
  • In a large bowl mix all the ingredients except 1/4 cup cheese, green onion and paprika with a hand mixer until well blended and creamy. If not creamy enough add a bit more milk.
  • Taste and adjust seasonings if necessary.
  • Spoon potato mixture evenly into shells.
  • Top with remaining 1/4 cup of cheese and green onions.
  • Sprinkle lightly with paprika.
  • Return to oven until hot and cheese is melted, about 15-20 minutes.
  • Or you can wrap in saran wrap and put in a freezer ziplock bag and freeze for use at another time.

1 large russet potato (If it looks like Mr. Potato Head®, you've got the right one.)
Canola oil to coat
Kosher salt
Optional toppings, such as butter, sour cream, shredded Cheddar and/or scallions

Steps:

  • Heat oven to 350 degrees and position racks in top and bottom thirds. Wash potato (or potatoes) thoroughly with a stiff brush and cold running water. Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking. Place in a bowl and coat lightly with oil. Sprinkle with kosher salt and place potato directly on rack in middle of oven. Place a baking sheet on the lower rack to catch any drippings.
  • Bake 1 hour or until skin feels crisp but flesh beneath feels soft. Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another. It will pop right open. But watch out, there will be some steam. Add toppings if using.

6 small-medium russet potatoes ((roughly 110-215 grams each))
1/4 cup canola oil
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 375 degrees F. Wash and scrub potatoes until clean. Dry with a clean lint-free towel.
  • Rub each potato all over with half of the oil (2 tablespoons between 6 potatoes). Pierce the center of each potato with a knife and place on a baking sheet.
  • Bake for 1 hour, or until tender. If you have very large potatoes, you may need to add to the cook time.
  • Remove from the oven and adjust the temperature to 425 F (use the convection setting if you have it). Brush each potato with remaining oil, and season with salt and pepper.
  • Bake at 425 F for 15-20 minutes, until skins are crispy. Serve.

Steps:

  • Preheat the oven to 450 degrees Fahrenheit.
  • Wash the potatoes and slice them in half. Line a baking sheet with parchment paper. Place the potatoes on top and rub them with olive oil, just enough to coat. Sprinkle them with kosher salt.
  • Turn the potatoes cut side down and prick the tops several times with fork.
  • Bake until the potatoes are tender and lightly browned on the edges, about 25 to 35 minutes depending on the exact size of the potatoes. Prick them with a fork to assess doneness. Taste and add an additional sprinkle of salt if necessary.

8 potatoes peeled, thinly sliced
250 ml cream
300 ml milk
1 soup powder cream of chicken
2 garlic cloves, crushed
nutmeg ground, pinch
1/2 tsp fresh thyme
salt and freshly ground black pepper to taste
2 cup cheese grated

Steps:

  • Preheat the oven to 160°C.Grease an oven-proof dish well and start layering the sliced potatoes. Season each layer as you go.Combine the cream, milk, soup powder, garlic, nutmeg and thyme andwhisk well to en sure there are no lumps. Season lightly and gently pour over the potatoes. Take some cling wrap and just push down onthe potatoes to make sure the 'sauce' has distributed well. This isoptional of course.Top with the grated cheese and cover with foil.
