Delicious easy haddock recipe that we always prepare for our Christmas Eve Feast of the Seven Fishes celebration. Haddock recipes are perfect for large crowds and not very fishy tasting so even kids will enjoy.

- Instructions below. Serves between 2 and 4 people.
- Add the olive oil, butter and garlic to the saucepan and cook on low for about 5 minutes then add the onions and and saute on low/medium heat for about 10 minutes.
- Next add sliced black olives and white wine.
- Add diced tomatoes and bring to a boil.
- Once the sauce comes to a boil, add the haddock. You can substitute with cod as well.
- Sprinkle with salt, pepper and parsley. Cover and let boil for 3-5 minutes then simmer for 15 minutes or until fish is cooked. The haddock will be done when it breaks off with a fork and is flakey. You will notice the fish start to break apart as it cooks.
- Serve over rice or angel hair pasta.

This is my favorite way to cook haddock. The recipe was originally for baked stuffed shrimp, so you could use it for that also.

Steps:
- Preheat oven to 350°F.
- Rinse fish and then soak in milk (This will take away any "fishiness").
- Melt butter in a small frying pan. Add onion and saute until softened, then add garlic.
- Remove from heat, add sherry, parsley, paprika and salt to taste.
- Mix bread crumbs with crushed cracker crumbs.
- Remove fish from milk, rinse again, then place in a baking dish.
- Pour crumb mixture over fish.
- Then pour butter/sherry mixture over crumbs.
- Bake at 350°F for about 25 minutes. Place under broiler on high until golden brown and slightly crispy. (Watch it closely, this does not take long.).
- Enjoy!

- Preheat oven to 350 degrees.
- Put a spoonful of the melted butter in a baking sheet or dish and spread to coat the bottom.
- Combine the bread crumbs (1 cup) with the rest of the 6 tablespoons of melted butter.
- Salt and pepper both sides of the fish liberally (I used about 1 teaspoon kosher salt and 1/4 teaspoon pepper), and lay in the buttered baking dish.
- Spread bread crumbs - all of them - evenly over the top of the fish. I use my hands to sprinkle it on (it won't really stick like traditional breading - it's more like a topping).
- Bake for 15 minutes, or until fish is cooked thoroughly (and flakes easily).

- Preheat the oven to 425 degrees F. Combine the cherry tomatoes, white wine, olives, 3 of the garlic cloves, capers, honey, 1/2 teaspoon salt and a few grinds of pepper in a 9-by-13-inch baking dish.
- Pat the haddock fillets dry with a paper towel and season the flesh side with the Italian seasoning, paprika, 1 teaspoon salt and a few grinds of pepper. Nestle the fillets into the sauce in the baking dish. Bake until the sauce is bubbling around the edges and the fillets are cooked through and easily flaked with a fork, 15 to 20 minutes.

- Preheat the oven to 425 degrees.
- Dry the fish filets very well with paper towels. Place the fish on a baking sheet that's been sprayed with cooking spray or use a piece of parchment paper to line the sheet. Season the fish with salt and pepper.

- Preheat the oven to 350° F.
- Line a small sheet pan or baking dish with parchment paper.
- Pat the haddock fillets dry with a paper towel. Place the dried fillets on the prepared sheet pan (or baking dish), putting them close together so that they almost touch.
- Squeeze a little fresh lemon juice over the fillets. Season well with garlic powder, paprika, salt and pepper.
