1 teaspoon olive oil
1/2 cup red onion, diced
1 cup tomato, cored, seeded and diced
4 whole eggs
4 egg whites
2 tablespoons water, optional
1 tablespoon fresh dill, finely chopped, or 1 teaspoon dried dill
Salt and pepper

Steps:

  • In a medium sized, non-stick skillet, heat the oil over medium heat. Add the onion and cook for 2 minutes, stirring once or twice. Add the tomatoes and cook for 1 minute more. Transfer the onion-tomato mixture to a bowl and set aside.
  • In a medium bowl lightly beat together the whole eggs, egg whites and water, if using. Pour the egg mixture into the skillet and cook over a medium-low flame, stirring frequently, until the eggs are almost set. Drain any excess water from the tomato mixture and stir the mixture gently into the eggs. Toss in the dill, season with salt and pepper, and serve.
  • Serving suggestion: Serve with a piece of whole-grain toast spread with 1/8 of an avocado, instead of butter.

When Bang Bang Shrimp first hit the menu at Bonefish Grill eight years ago, it was a flop. The dish - crunchy fried shrimp in Thai chili sauce - wasn't the problem. The name was. After chain founder Tim Curci changed the name from Creamy Spicy Shrimp to Bang Bang Shrimp, the appetizer became the restaurant's best-selling dish. And as the shrimp exploded in popularity, so did Bonefish Grill. The chain now has more than 150 locations across the country. Regulars everywhere have a nickname for the signature snack: They just order a "Bang." Many of these fans, including Lori Piscopo from Valley Township, PA, wrote to us asking for the recipe, and while Curci remained tight-lipped on the details, Food Network Kitchens managed to create this perfect imitation.

1/2 cup mayonnaise
1 tablespoon plus 1 teaspoon Asian chili sauce (such as sambal oelek)
2 teaspoons honey
Kosher salt
Vegetable oil, for frying
2 large eggs
3/4 cup all-purpose flour
1/2 cup cornstarch
Kosher salt and freshly ground pepper
1 1/4 pounds small shrimp, peeled and deveined
Bibb lettuce leaves, for serving
Thinly sliced scallions, for garnish

Steps:

  • Make the sauce: Mix the mayonnaise, chili sauce, honey, 1/4 teaspoon salt and 1 tablespoon water in a large bowl; set aside.
  • Prepare the shrimp: Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat until a deep-fry thermometer registers 350 degrees F. Meanwhile, whisk the eggs in a shallow bowl. Whisk the flour, cornstarch and 1 teaspoon each salt and pepper in another shallow bowl.
  • Working in batches, dredge the shrimp in the flour mixture, shaking off any excess, dip in the beaten eggs, then return to the flour mixture, turning to form a thick crust. Fry the shrimp in the hot oil until lightly golden, 1 to 2 minutes, adjusting the heat as needed to maintain the oil temperature. Transfer to a paper-towel-lined plate with a slotted spoon.
  • Toss the shrimp with the prepared sauce. Arrange the lettuce in a shallow serving bowl or on individual plates. Top with the shrimp and garnish with scallions.

3 tablespoons soy sauce
2 tablespoons lime juice
2 tablespoons brown sugar
1 tablespoon olive oil
1 tablespoon ketchup
2 garlic cloves, minced
1 teaspoon ground cumin
24 fresh jumbo shrimp or 24 frozen uncooked jumbo shrimp
3/4 cup orange section
3/4 cup apple, peeled, cored and diced
2 tablespoons lime juice
2 green onions, white part only, minced
1 tablespoon cilantro, chopped
1 teaspoon sugar or 1 teaspoon Splenda sugar substitute
1/2 teaspoon crushed red pepper flakes

Steps:

  • In a small bowl, combine all skewer ingredients, except shrimp to make a marinade.
  • Remove shells from shrimp, leaving tails on.
  • Place shrimp in a large ziplock back and pour marinade in the bag.
  • Push all the air out of the bag and seal it and refrigerate for 1 hour.
  • Place all of salsa ingredients in a blender or food processor and puree.
  • Pour into a small bowl and refrigerate until ready to serve.
  • Remove shrimp from marinade and thread 4 shrimp on each skewer.
  • Grill over medium hot coals for 3 to 4 minutes per side, basting with left over marinade.
  • Serve immediately with fruit salsa.

This is a recipe from the Crazy Plates cookbook. I have made it many times to rave reviews. It is a great grilled shrimp recipe and great for hot summer nights. Marinade time says 1 hour but I have left it in the marinade for up to 3 hours with good results. The fruit salsa is wonderful and I usually make this the day before. This recipe is easily doubled. I always double or more this recipe. Prep time includes marinade time.

3 tablespoons reduced sodium soy sauce
2 tablespoons lime juice
2 tablespoons brown sugar
1 tablespoon olive oil
1 tablespoon ketchup
2 garlic cloves, minced
1/2 teaspoon ground cumin
24 jumbo shrimp, peeled
fruit salsa
3/4 cup orange section (I use the mandarin oranges)
3/4 cup granny smith apple, peeled, cored and diced
2 tablespoons lime juice
2 green onions, white part only, minced
1 tablespoon of fresh mint, chopped (or cilantro)
1 teaspoon sugar
1/2 teaspoon crushed red pepper flakes

Steps:

  • In a small bowl, combine soy sauce, lime juice, brown sugar, olive oil, ketchup, garlic, coriander, and cumin.
  • Pour over shrimp in glass baking dish or ziploc bag.
  • Refrigerate 1 hour. Soak wooden skewers if you want to do skewers. (I find this the best).
  • Put all salsa ingredients in a food processor and pulse on and off until mixture is pureed. Put in a bowl and refrigerate until ready to serve.
  • Remove shrimp from marinade and thread 4 pieces onto each skewer.
  • Grill over medium-high grill for 3 to 4 mins per side basting with extra marinade.
  • Serve and enjoy.
