CASSOULET
Layers of ingredients yield layers of flavor in this iconic casserole from southwestern France. From start to finish, this dish takes about 18 hours to prepare, although most of it is unattended.

- Bundle parsley, bay leaf, rosemary, thyme, celery, and leek to form a bouquet garni, wrapping kitchen twine around the aromatics several times to secure -- which ensures easy retrieval of the ingredients after they've infused the cooking liquid with flavor.
- Warm oil in a large pot over medium heat. Add fatback or pork belly, and cook until it is golden on all sides and has begun to render its fat, about 5 minutes. Add pork shoulder, and cook until golden on all sides, about 8 minutes total.
- Stick clove in half the onion, and add to pot along with bouquet garni, ham hock, carrot, tomatoes and juice, and beans. Add enough cold water to cover by 1 to 2 inches (about 8 cups). Bring to a boil. Reduce heat, and simmer gently until beans are tender throughout but not falling apart, 40 to 50 minutes.
- Remove pot from heat. Discard carrot, onion, and bouquet garni. Transfer ham hock to a cutting board, reserving liquid, and let cool slightly. Trim meat and gelatin from the bone, dicing and returning them to the pot. Discard the bone.
- Preheat oven to 300 degrees. Rub cut side of garlic clove over the entire inner surface of a small (5-quart) Dutch oven or other ovenproof vessel. This allows a subtle though distinct garlic flavor to infuse the resulting cassoulet.
- Using a wire skimmer or a slotted spoon, place half the bean mixture in the Dutch oven, spreading it evenly. Leave the cooking liquid in the pot.
- Arrange the duck confit and sausage on top of the beans in the Dutch oven to create a single, snug layer. Spoon the remaining beans over the meat, reserving the cooking liquid.
- Add enough cooking liquid so the beans are almost, but not quite, submerged. Reserve the remaining liquid. Transfer pot to oven and cook, uncovered, for 2 hours. Check the liquid every 30 minutes to make sure it is no more than 1/2 inch below the beans, and add liquid or water as necessary. Do not stir.
- After the cassoulet has cooked for 2 hours, toss bread and butter in a bowl. Sprinkle over cassoulet, and return to oven until beans are tender and bread is golden, 1 to 1 1/2 hours.
- Before serving, let cassoulet stand at room temperature for 20 minutes to cool and to allow the beans to absorb some of the liquid. You can refrigerate cassoulet in an airtight container for up to 3 days; rewarm in an oven heated to 300 degrees.
SHRIMP CASSOULET
This recipe came from my best friends mother-in-law, and she made it for me when I went out to visit her. The beans thicken it while it bakes, and the flavors blend together wonderfully. It's very hearty, yet low in fat and calories. Served with warm fresh french ( or Italian ) bread, it's delicious!!!

- In large pan, saute garlic, onion and red pepper in oil over medium heat until soft, about 5 minutes.
- Add beans, tomatoes, broth, herbs, olives, salt and pepper.
- Bring to a simmer.
- Add shrimp; cook 3 minutes.
- Turn into large baking dish.
- Top with bread crumbs mixed with parmesan cheese.
- Bake in preheated 400-degree oven until bubbly, about 20 minutes.
- Brown top under broiler if desired.
- Serve with French bread.

- Preheat oven to 375. Lightly spray six 8-ounce ramekins or a 1 ½ quart baking dish with olive oil cooking spray or lightly coat with olive oil.
- In a large nonstick skillet over medium heat, heat 2 tablespoons olive oil.
- Add leeks, garlic, and pepper flakes; cook, stirring frequently, until shrimp just begin to turn pink, about 1 minute.
- Stir in flour and salt until combined.
- Stir in wine, if desired; cook 30 seconds.
- Add beans and broth; cook, stirring, until mixture just comes to a simmer.
- Transfer mixture into ramekins.
- In a small bowl, combine bread crumbs, remaining tablespoon olive oil and remaining tablespoon parsley. Layer bread crumb mixture over top of filled ramekins.
- Bake until shrimp mixture is hot and tops are lightly browned, 12 to 15 minutes. Serve immediately.

TUSCAN SHRIMP WITH WHITE BEANS

- Drain the beans over a bowl and reserve the liquid. Put the white beans in a large skillet with just enough of their liquid to moisten them. Add 2 tablespoons of the olive oil and bring the beans to a low simmer. Keep them warm while you prepare the shrimp.
- Heat 1/4 cup oil in a large skillet over high heat. Add the shrimp, season with salt and cook for about 1 minute, tossing frequently. Remove the shrimp with tongs to a bowl. Add the garlic to the pan and saute until the garlic browns. Add the serrano chile or chili flakes and cook for 1 minute. Add the tomato and basil and stir briefly, then add the lemon juice. Season with salt and pepper. Cook for about 1 minute, and then stir in the shrimp. Toss well and cook briefly to reheat the shrimp. Remove the shrimp mixture to a plate and sprinkle with parsley.
- Spoon the white beans on a platter or individual plates. Drizzle them with the best olive oil you have, and then top with the shrimp. Serve warm.

- Put the ham hocks, pork shoulder cubes and skin in a large dish; season lightly with salt and pepper. Cover and refrigerate overnight. In a bowl, cover the beans with 3 inches of water and soak overnight.
- The next day, in a medium saucepan, cover the salt pork and the seasoned skin with water. Bring to a boil, then simmer over moderate heat until the skin is supple, about 30 minutes.
- Dry the ham hocks and pork shoulder cubes with a paper towel. In a very large, enameled cast-iron casserole, heat the duck fat. Add half of the pork cubes and cook over moderately high heat until lightly browned all over; transfer to a plate.
- Drain the beans. In a large saucepan, cover the beans with water and bring to a boil over moderate heat. Simmer the beans for 3 minutes, then drain.
- Remove as much of the solidified fat as you can from the surface of the ragout; reserve 1/4 cup of the fat. Let the ragout return to room temperature.
- Preheat the oven to 400°. Bring the ragout to a simmer. Cut the blanched salt pork into small pieces. Squeeze the cooked garlic cloves into a food processor.
- 7. Meanwhile, arrange the duck confit legs in a baking dish and roast just until heated through, about 15 minutes. Remove the meat from the bones in large pieces.
- Turn the oven down to 325°. Untie and unroll the pork skin bundles. Line the bottom of a 5- to 6-quart earthenware casserole with the pork skin, fat side down.
- Heat the vegetable oil in a medium skillet. Add the sausages and cook over moderately high heat until browned all over. Let cool, then cut the sausages into 3-inch pieces.
- 10. Reduce the oven temperature to 275°. Gently stir in the skin that has formed on the cassoulet. Nestle in the sausages and drizzle with the remaining 2 tablespoons of reserved fat.

- Finely chop the celery, onion and garlic for the cassoulet. Put a pan on a medium-low heat and add a splash of olive oil. Add the veg and gently fry for 10-15minutes. You want it soft and translucent, but not brown.
- Scoop out the veg and set aside. and turn the heat up. Now add the pancetta or bacon and fry until golden and crisp. Add the red wine to deglaze the pan. Add the tomato puree and cook for a minute before adding the veg back in. Add the tin of plum tomatoes. Finely chop the parsley stalks (save the leaves for later) add them to the pan and put the lid on. Turn the heat down and cook slowly for 30 minutes.
- Make the salsa verde by finely chopping your selection of herbs. Add them to a small bowl and cover with the olive oil. Now finely chop all the other ingredients and add to the bowl with the vinegar. Season with salt and pepper.
- After the tomato base for the cassoulet has cooked for 30 minutes, remove the lid and add the drained cannellini beans. Turn the heat up slightly and let it bubble away until you have a nice thick bean stew.
