HONEY-GARLIC SHRIMP SKEWERS



Honey-Garlic Shrimp Skewers image

1/2 cup honey
2 tablespoons sriracha
1 teaspoon crushed red pepper
3 cloves garlic, grated
1 lime, zested and juiced
2 tablespoons chopped fresh parsley
20 shrimp (16-20 count), peeled and deveined
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
12 ounces baby spinach
2 cloves garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • Heat a grill pan over medium-high heat and a large skillet over medium heat.
  • For the shrimp: In a small bowl, mix together the honey, sriracha, crushed red pepper, garlic, lime zest and juice and 1 tablespoon of the parsley. Set the glaze aside.
  • Thread the shrimp onto 4 metal skewers, 5 shrimp per skewer. Season both sides with salt and pepper. Place on the grill pan and cook for 2 minutes. Flip the shrimp, brush the top with the glaze and cook for an additional 2 minutes. Flip the glazed side down, brush the top with the glaze and cook for an additional minute. Flip, glaze and cook until the shrimp are cooked through, up to an additional minute per side. Remove from the grill and drizzle with any remaining glaze.
  • For the spinach: Meanwhile, heat the oil in the skillet and add the spinach and garlic. Season with salt and pepper and cook until wilted, about 1 minute.
  • Make a bed with the spinach on a serving platter. Top with the shrimp skewers and garnish with the remaining parsley.

CHUCK'S SHRIMP BROCHETTES

12 jumbo shrimp, peeled and deveined, tails on
2 tablespoons queso fresco
1 large jalapeno, half of the seeds removed (to control heat), minced
6 slices thin-cut bacon, cut in half crosswise
8 tablespoons salted butter
1 heaping tablespoon adobo sauce
1 pinch garlic powder
1 lime, juiced
Olive oil, for brushing the grill

Steps:

  • Make a deep slit along the back of each shrimp and spread to butterfly. Stuff each shrimp with 1/2 teaspoon queso fresco and some jalapeno. Close the shrimp around the cheese and jalapeno. Wrap the stuffed shrimp with a half-piece of bacon and secure with a toothpick or small skewer.
  • Melt the butter in a small saucepan over medium heat. Stir in the adobo sauce, garlic powder and lime juice. Pour half of the butter mixture into a bowl for serving and divide the remaining half between 2 bowls for brushing and basting.
  • Heat a grill or grill pan over medium heat; brush with olive oil. Brush one side of the shrimp with the butter mixture and put the shrimp on the grill buttered-side down. Using the same brush and same butter, brush the second side. Grill for a few minutes, checking to make sure the bacon is not sticking to the grill.
  • Flip the shrimp and cook, flipping as needed and frequently basting with the second small bowl of butter and a clean brush, until the bacon is completely cooked and the shrimp are opaque, about 8 minutes total. Serve the shrimp on a platter with the remaining chipotle butter.

1/4 cup minced fresh parsley
1/4 cup minced fresh basil
1 teaspoon dry mustard
2 teaspoons Dijon mustard
2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup good olive oil
Juice of 1 lemon
2 pounds jumbo shrimp (16 to 20 per pound), peeled (tails left on) and deveined

Steps:

  • Combine the parsley, basil, mustards, salt, pepper, olive oil, and lemon juice. Add the shrimp and allow them to marinate for 1 hour at room temperature or cover and refrigerate for up to 2 days.
  • Prepare a charcoal grill with hot coals, and brush the grilling rack with oil to prevent the shrimp from sticking. Skewer the shrimp on 6-inch skewers and grill for 1 1/2 minutes on each side.

1/2 cup olive oil
3 cloves garlic, crushed
1 tablespoon Calabrian chile flakes
1 tablespoon fresh oregano leaves, plus for garnish

1 pound extra-large (16 to 20 per pound) shrimp, shelled and deveined, tail-on

Steps:

  • Put the olive oil, garlic and chile flakes in a small skillet. Turn the heat to low and let the mixture heat for about 10 minutes; the oil should just barely simmer around the garlic in the last few minutes. Remove from the heat and cool slightly. Transfer to a blender, add the 1 tablespoon oregano and some salt and pepper, and blend until the garlic and oregano are finely chopped. Set aside half of the chile-garlic oil for serving.
  • Heat the grill to high. Thread the shrimp onto skewers, about 4 or 5 shrimp per skewer, threading so that the skewers goes through the tail and thick end of each shrimp. Brush the shrimp with some of the chile-garlic oil and season with salt and pepper. Grill until lightly golden brown on both sides and opaque, 1 to 1 1/2 minutes per side. Transfer the skewers to a platter and immediately drizzle with some of the reserved chile-garlic oil (not the oil you used for brushing the raw shrimp). Garnish with oregano, and serve with more of the reserved oil.

12 shrimp, jumbo uncooked, deshelled
6 small wooden skewers
2 garlic cloves, peeled and crushed
1/4 cup olive oil
1/8 cup lemon juice, fresh squeezed
2 tablespoons red wine vinegar
1 teaspoon dried oregano, greek
1/2 teaspoon dried rosemary
1/2 teaspoon onion salt
1 teaspoon white sugar
1/4 teaspoon sea salt (to taste)
1/2 teaspoon black pepper, freshly ground
1 cup chicken stock (use own preference)
6 slices Italian bread, coarsley sliced
1 garlic clove, cut in halve
1/2 cup olive oil
3 large fresh tomatoes, diced
2 garlic cloves, peeled, chopped
1/4 cup fresh basil, finely chopped
1 teaspoon dried oregano, greek
1/4 cup sweet onion, finely chopped
1/4 cup kalamata olive, chopped
1/8 cup feta, crumbled
1/8 cup parmesan cheese, coarsley shredded
1/4 teaspoon sea salt, coarse
1/4 teaspoon black pepper, freshly ground

Steps:

  • Deshell jumbo shrimp and place in plastic ziplock bag.
  • To the bag add 2 cloves of crushed garlic, olive oil, lemon juice, red wine vinegar, greek oregano, rosemary, onion salt, white sugar, sea salt and black pepper.
  • Marinate over night or for at least 3 hours.
  • Reserve the marinade.
  • Thread two jumbo shrimp on each of the 6 skewers.
  • Place the skewers in a pan and pour the chicken stock and reserved marinade over the shrimp and bake in a 425 degree oven for 5-10 minutes (personal preference).
  • Chop the tomatoes into cubes, add 2 crushed garlic cloves, basil, oregano, sweet onion, black olives, feta cheese, salt, pepper and 3/4's of the olive oil.
  • Mix well and reserve tomatoe mixture.
  • Slice bread, toast it lightly, rub with the garlic halves and lightly brush top of bread with the remaining olive oil.
  • Add tomatoe mixture to toasted bread, top with parmesan cheese and put under the broiler for 2 minutes, until the cheese starts to melt.
  • Serve with a skewer of shrimps ontop of the cooked brushetta and enjoy.
