Shrimp and Asparagus Skillet is a quick and healthy one pan meal loaded with fresh citrus flavors.

1 pound shrimp peeled and deveined (16/20 count size)
½ teaspoon kosher salt
¼ teaspoon black pepper
3 tablespoons extra virgin olive oil (divided)
1 tablespoon lemon juice
½ teaspoon lemon zest
1 tablespoon minced garlic
¼ cup chopped shallots (¼ -inch dice)
1 pound asparagus spears (3 cups cut spears)
1 cup baby tomatoes (cut in half)
Lemon wedges (for serving)

Steps:

  • In a medium bowl combine shrimp with salt, pepper, 1 tablespoon olive oil, lemon juice, zest, and garlic.
  • Trim off the tough bottoms of the asparagus, and then cut into 2-inch spears.
  • Heat a large 12-inch skillet over medium heat, add 1 tablespoon of olive oil.
  • Once the oil is hot, add the shallots, stir and cook until tender and fragrant, 1 minute.
  • Add the shrimp in one layer to the pan. Cook for 2 minutes, not moving the shrimp.
  • Flip shrimp over and cook until just cooked through 1 minute. Transfer to a clean plate.
  • Add 1 tablespoon of olive oil to the pan. Once hot add the asparagus spears and saute until crisp-tender, 3 to 4 minutes.
  • Add the tomatoes and saute for 1 minute.
  • Add the shrimp back to the pan, cook until warmed through, 1 minute.
  • Season shrimp and asparagus skillet with salt and pepper.
  • Serve immediately with lemon wedges.

1 lb shrimp, medium to large, peeled and deveined
1 pinch black pepper, to taste
1 lemon
4 tablespoons olive oil or 4 tablespoons extra virgin olive oil
4 medium garlic cloves, sliced thinly
3/4 lb asparagus, tough ends snapped off and cut into 2 inch lengths (about 2 cups)
1/4 teaspoon crushed red pepper flakes
2/3 cup reduced-sodium chicken broth
1/2 teaspoon cornstarch

Steps:

  • Place shrimp on paper towels and dry very well.
  • Sprinkle shrimp with a bit of the pepper.
  • Using a vegetable peeler, peel off strips of the lemon peel and then cut the strips into very thin long pieces; be sure to peel only the yellow part of the peel, not the bitter white part.
  • Cut lemon in half and juice it into a small dish, removing seeds.
  • Heat a deep 12 inch skillet (preferably NOT non-stick) over medium high heat for 1 minute.
  • Add 2 Tbsp of the oil and heat until it's shimmering hot -- just a few seconds.
  • Add the shrimp in a single layer and do not disturb it; let cook for about 2 minutes until browned.
  • Turn shrimp over and brown the other side, about 1 1/2 minutes, then transfer to a plate. Shrimp should not be cooked through.
  • Reduce heat to medium-low and add garlic, stirring for 30 seconds.
  • Add asparagus, lemon zest strips, red pepper flakes and cook, stirring for 2-3 minutes.
  • Add chicken broth and cover, simmering for 1-2 minutes until asparagus is almost done.
  • Stir cornstarch with 1 Tbsp water and stir into the pan.
  • Add shrimp back to the pan and cook another 1-2 minutes until done.
  • Stir in 1 Tbsp lemon juice, then taste and add more juice and pepper if needed.

1/4 cup soy sauce
5 teaspoons lemon juice
1/2 teaspoon grated lemon zest
2 teaspoons cornstarch
1 tablespoon cold water
Hot cooked rice, optional

Steps:

  • In a 2-qt. microwave-safe bowl, combine the asparagus, red pepper, garlic and water. Cover and microwave on high for 4 minutes. Add shrimp; cover and cook for 2 minutes or until shrimp turn pink and asparagus is tender. With a slotted spoon, remove shrimp and vegetables; keep warm. , Add the soy sauce, lemon juice and zest to the microwave dish. In a small bowl, combine the cornstarch and cold water until smooth. Stir into soy sauce mixture., Microwave, uncovered, on high for 1-2 minutes or until thickened. Return the shrimp mixture to the bowl; toss to coat. Serve with rice if desired.

2 tablespoons olive oil, divided
4 cloves garlic, minced
salt, divided
1 pinch ground black pepper, divided
1 ½ pounds uncooked medium shrimp, peeled and deveined
1 teaspoon paprika
3 tablespoons butter, cubed
3 tablespoons lemon juice

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a rimmed 9x12-inch baking pan with parchment paper and grease with cooking spray.
  • Place asparagus on the prepared baking pan and drizzle with 1 tablespoon olive oil. Sprinkle with garlic, 1 teaspoon salt, and 1/2 teaspoon pepper; toss until well coated. Arrange asparagus in a single layer.
  • Bake in the preheated oven until slightly tender, about 6 minutes.
  • Remove from oven and place shrimp on one side of the pan. Drizzle with remaining 1 tablespoon olive oil, 1 teaspoon salt, 1/2 teaspoon pepper, and smoked paprika; toss until well coated. Place shrimp in a single layer next to the asparagus. Top asparagus and shrimp with cubed butter.

1 lb extra-large shrimp, peeled and deveined
2 teaspoons low-sodium soy sauce plus 2 tablespoons low sodium soy sauce (keep divided)
2 teaspoons dry sherry plus 1/4 cup dry sherry (keep divided)
3 green onions
3 medium garlic cloves, minced
1 tablespoon grated gingerroot
5 teaspoons peanut oil or 5 teaspoons vegetable oil
6 tablespoons low sodium chicken broth
1 lemon (juice only)
2 teaspoons cornstarch
1/4 teaspoon fresh ground black pepper, plus additional to taste
1 lb asparagus, tough ends removed, sliced on the bias into 2-inch lengths
2 carrots, cut into 2-inch-long matchsticks
salt
jasmine rice, cooked

Steps:

  • In a medium bowl, toss the shrimp with 2 teaspoons of the soy sauce and 2 teaspoons of the sherry. Set aside.
  • Cut the green parts of the green onions into 1/4-inch lengths and reserve in a bowl large enough to hold the shrimp. Mince the white parts of the green onions and in a small bowl, combine them with the garlic, ginger and 2 teaspoons of the oil. Set aside.
  • In a medium bowl, combine the chicken broth, lemon juice, the remaining 1/4 cup sherry, the remaining 2 tablespoons soy sauce, the cornstarch and pepper and mix well. Set the sauce aside.
  • In a large nonstick skillet (or wok) over high heat, add 1 teaspoon oil and heat just until it is smoking. Add the shrimp and cook, stirring occasionally, until they are curled and bright pink, about 1 1/2 minutes. Transfer to the bowl with the scallion greens.
  • Add 1 teaspoon oil to the skillet and return to high heat until the oil is shimmering. Add the asparagus and cook, stirring occasionally, until it is crisp-tender, 2 to 3 minutes. Remove from pan. Add the remaining 1 teaspoon oil and the carrots to the skillet and cook, stirring occasionally, until they are crisp-tender, about 2 minutes. Return the asparagus to the skillet. Make a well in the center of the skillet and add the garlic-ginger mixture. Cook, mashing the garlic-ginger mixture until it is fragrant, about 30 seconds. Incorporate the mixture into the vegetables. Add the green onion tops and the shrimp and stir to combine.
  • Whisk the sauce to recombine, then add it to the skillet and heat until bubbles just break the surface. Remove from the heat and toss to coat all ingredients with the sauce. Add salt and pepper to taste and serve promptly with jasmine rice.
