4 cups uncooked small pasta shells
1 pound cooked small shrimp, peeled and deveined
1-1/2 cups frozen peas, thawed
1/2 cup thinly sliced green onions
1/4 cup minced fresh parsley
1/3 cup reduced-fat mayonnaise
1/3 cup reduced-fat plain yogurt
2 tablespoons lemon juice
1 tablespoon minced fresh dill
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. In a large bowl, combine the shrimp, peas, green onions and parsley. Stir in the pasta. , In a small bowl, combine the remaining ingredients. Pour over pasta mixture and toss to coat. Cover and refrigerate for at least 1 hour.

1 medium onion
2 tablespoons olive oil
3 garlic cloves, minced
2 cups canned whole tomatoes in puree
1 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon pepper
3/4 lb pasta (linguine)
1 lb medium shrimp
1/2 cup pitted black olives (chopped)
1 cup crumbled feta cheese

Steps:

  • Bring a large pot of water to a boil.
  • Cut onion into thin slices and mince garlic cloves.
  • In a large skillet, warm the olive oil over medium-high heat until hot but not smoking. Add the onion and garlic and cook until the mixture is golden, about 5 minutes.
  • Add the tomatoes, oregano, basil and pepper, and bring to a boil over medium-high heat , breaking up the tomatoes with a spoon. Reduce the heat to low, cover and simmer, stirring occasionally, while you cook the pasta and prepare the shrimp.
  • Add the pasta to the boiloing water and cook until al dente 10 to 12 minutes, or according to package directions .
  • Shell and devein the shrimp.
  • Uncover the sauce and bring to a boil over medium-high heat. Add the shrimp, reduce the heat to low, cover and simmer for 3 minutes.
  • Add the olives and half the feta cheese and stir to combine.
  • Drain the pasta and serve topped with the shrimp and sauce. Garnish each serving with remaining feta cheese.

I found the original recipe in an old (1990's) Southern Living Magazine. I changed a few things and tweeked a few things, and came up with this recipe. Hubby and I love it. I serve it hot, right out of the electric skillet with some crispy garlic bread.

1 lb uncooked linguine
1 lb unpeeled large raw shrimp
4 tablespoons butter or 4 tablespoons margarine
1 medium sweet onion, chopped
2 -3 cloves garlic, minced
1 tablespoon cajun seasoning or 1 tablespoon creole seasoning
1 cup heavy cream
1/2 cup freshly grated parmesan cheese
1 teaspoon dry crushed red pepper
1/3 cup chopped fresh parsley or 2 tablespoons dried parsley

Steps:

  • Cook linguine according to package directions; keep warm.
  • Peel and devein shrimp; set aside.
  • Melt butter in a large electric skillet set on medium temperature.
  • Add onions and garlic to skillet; saute until tender.
  • Stir in cajun or creole seasoning; cook, stirring constantly for 1 minute.
  • Stir in shrimp and saute until barely pink.
  • Add heavy cream; reduce heat to medium low, and simmer for 3 minutes, stirring often.
  • Stir in linguine, parmesan cheese, and crushed red pepper, cook mixture, stirring gently, until thoroughly heated.
  • Stir in parsley; serve immediately.

Southern Shrimp Salad is super easy and flavored with a little Old Bay and fresh dill. It's so creamy and makes a wonderful summer lunch.

1.5 pounds medium shrimp unpeeled
6 cups water
2 tablespoons Old Bay seasoning
1 tablespoon apple cider vinegar
2/3 cup mayonnaise
1 tablespoon lemon juice
1/3 cup finely diced red onion
1/3 cup finely diced celery
1/2 teaspoon Old Bay seasoning
1 tablespoon chopped fresh dill

Steps:

  • Place shrimp in a saucepan. Add water, Old Bay, and vinegar.
  • Place over medium-high heat. Stir frequently. When shrimp have turned completely white, they are done. You may see 1 or 2 start to float. This is a sign that they are done. The water may not come to a boil. Do not worry about this. You do not want the shrimp to overcook. If you are unsure, pick one up and gently squeeze it. It should feel firm.
  • Run cold water over shrimp to stop cooking. Let cool and then peel shrimp.
  • If shrimp are on the larger side, cut them in half or thirds.
  • In a medium bowl, stir together mayonnaise, lemon juice, onion, celery, and Old Bay.
  • Add shrimp and mix them in. Sprinkle dill on top.
  • If desired, Sprinkle a little more Old Bay on top. Serve immediately or refrigerate.

3/4 teaspoon salt
1/2 teaspoon freshly ground pepper
2 limes
2 tablespoons olive oil

2 mangoes, peeled, pitted, and cut into 1/2-inch dice
2 cucumbers, seeded and cut into 1/2-inch dice
1/2 small red onion, peeled and finely diced
1 small jicama (about 3/4 pound), peeled and cut into 1/2-inch dice
Olive-oil cooking spray

Steps:

  • Heat oven to 400 degrees. Place shrimp on a baking sheet coated with olive-oil cooking spray. Sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper. Place in oven, and roast until opaque, about 8 minutes.
  • Zest limes; squeeze to yield 1/4 cup juice. Combine lime juice, zest, olive oil, cilantro, and remaining salt and pepper. In a bowl, combine 2 tablespoons lime dressing with shrimp; toss to coat. In a large bowl combine mangoes, cucumbers, red onion, jicama, and remaining lime dressing; toss to coat. Divide salad and shrimp among six bowls. Garnish with remaining cilantro sprigs, and serve.

1 cup diced celery (about 2 stalks)
1 red bell pepper (cored and cut into a 1/4-inch dice)
1 cup frozen peas (thawed)
2 green onions (finely chopped (about 1/4 cup))
2 tablespoons finely chopped fresh dill
2/3 cup nonfat plain Greek yogurt
2 tablespoons freshly squeezed lemon juice (from about 1/2 lemon)

2 lbs shrimp, cleaned, peeled, and deveined
1 cup uncooked white rice
1/2 cup onion, chopped
1/2 cup green olives, chopped
fresh ground black pepper
1 cup mayonnaise
paprika, for garnish
lemon wedge, for garnish
tomatoes, wedges for garnish

Steps:

  • Bring 4 cups of water to a boil.Tie shrimp boil in a cheesecloth and add shrimp boil sachet to boiling water. Add shrimp and boil for 4 minutes.
  • Drain shrimp and reserve shrimp boil water. Chop shrimp into bite size chunks and place on paper towels to cool.
  • In the reserved shrimp boil water, add the rice, and cook until tender for 15 to 20 minutes.

One 24-ounce jar tomato sauce
1/2 cup cream cheese (4 ounces)

Steps:

  • Preheat the oven to 400°F.
  • Melt 2 tablespoons of the butter in a very large skillet over medium-high heat. Add the onions and cook for 5 minutes, or until translucent. Add the shrimp, corn, okra, salt, and Cajun seasoning. Cook, stirring, for 2 to 3 minutes, or until the shrimp are almost opaque. Add the tomato sauce and cream cheese and cook, stirring, for 3 to 4 minutes, or until the sauce is smooth.
  • Place the pasta in a 9 x 13-inch baking dish. Pour the shrimp mixture over the pasta and stir well.
  • Return the skillet to the heat and melt the remaining 3 tablespoons butter. Add the bread crumbs and stir until well coated.
