GARLIC BUTTER SHRIMP AND CORN SHEET PAN DINNER



Garlic Butter Shrimp and Corn Sheet Pan Dinner image

This sheet pan dinner is loaded with summer corn, tomatoes, fennel and shrimp. The whole thing is broiled together, so you can have it on the table in a flash. Top with feta, fresh basil and a squeeze of lemon juice for the perfect summer weeknight meal.

4 ears of corn, shucked and kernels removed
1 bulb fennel, cored and thinly sliced, plus 1/4 cup fennel fronds
1 tablespoon olive oil
Kosher salt
1/2 teaspoon crushed red pepper flakes
6 tablespoons unsalted butter, melted
4 cloves garlic, minced
Zest of 1 lemon, plus wedges for serving
1 1/4 pounds large peeled and deveined shrimp, tails removed
1 pint cherry tomatoes (about 10 ounces)
1/2 cup crumbled feta
1/2 cup lightly packed fresh basil leaves, torn

Steps:

  • Preheat the oven to broil and line a rimmed baking sheet with aluminum foil.
  • Toss the corn, fennel, olive oil, 1/2 teaspoon salt and 1/4 teaspoon of the red pepper flakes on the prepared baking sheet until evenly coated and combined. Spread into an even layer. Broil until crisp-tender and starting to brown in spots, tossing halfway through, about 8 minutes. Remove from the oven.
  • Meanwhile, stir the melted butter, garlic, lemon zest, 1/4 teaspoon salt and remaining 1/4 teaspoon red pepper flakes together in a medium bowl until combined. Add the shrimp and tomatoes and toss to combine. Spread the shrimp mixture on top of the corn and fennel, then broil until the shrimp are opaque throughout and the tomatoes start to burst, about 6 minutes.
  • Top with the reserved fennel fronds, feta and basil. Serve with lemon wedges for squeezing.

1 tablespoon unsalted butter
1 green cubanelle pepper, chopped
2 medium diced tomatoes
1/2 diced onion
1 cup Sazón
1/4 cup adobo seasoning
2 ounces chicken base
2 ounces ground oregano
3 coriander leaves
2 cups unsalted cooking wine
1/2 cup minced garlic
1/2 cup all-purpose flour
1/2 pound jumbo shrimp, cleaned and tails removed
1 tablespoon unsalted butter
10 to 12 store-bought empanada dough rounds
1 cup (total) grated Colby jack, Cheddar and mozzarella
1 red bell pepper, sliced into thin strips (julienne)
1 yellow bell pepper, sliced into thin strips (julienne)
1 green bell pepper, sliced into thin strips (julienne)
1 orange bell pepper, sliced into thin strips (julienne)
Vegetable oil, for frying

Steps:

  • For the salsa criolla: In a pan on medium-high heat, add the butter, the cubanelle pepper, tomatoes and onion. Cook the veggies for about 5 minutes. Add the Sazón, adobo, chicken base, oregano, coriander leaves, cooking wine, garlic and 4 cups water; bring to a boil. In a separate bowl, combine the flour with 1 cup of water and stir. Add the flour mixture to the pan little by little until the desired thickness of sauce is reached.
  • For the empanadas: Chop the shrimp into medium pieces. In a pan over medium-high heat, add the butter, shrimp and 4 ounces salsa criolla. Stir. Cook until the shrimp is pink and fully cooked, about 7 minutes. Remove from the heat and allow the mixture to cool.
  • To the middle of a round of dough, add about a tablespoon of the shrimp mixture, 1 to 2 teaspoons grated cheese, and add several pieces of colored julienne bell peppers. Close and fold the round dough in half like a crescent. Press the edges together to seal and remove any air pockets. Using your thumb and index finger, pinch and twist along the edge of the dough to create a braided sealed edge. Repeat with the remaining ingredients. Place the empanadas on a plate lined with wax paper and freeze until the next day. (This will help unify the temperature of the empanada and help seal it before frying.)
  • In a fryer or deep pan, add enough vegetable oil to for the empanadas to float. Heat the oil to 350 degrees F.
  • Add the empanadas to the hot oil and fry until golden brown, about 3 minutes on each side. Remove the empanadas to a rack or paper towel to allow excess oil to drain. Empanadas can be served on a cutting board or plate. Cut in half and enjoy!

1 tablespoon corn oil
1 medium yellow onion, peeled and sliced
1 cup frozen corn
1/4 cup roasted red peppers, thinly sliced
Pinch sugar
Salt and freshly ground black pepper
1/2 cup shredded Mozzarella cheese
1/4 cup heavy whipping cream
1 package 5-inch frozen empanada shells
Cooking spray
1 egg
1 tablespoon water

Steps:

  • Preheat oven to 375 degrees F.
  • Heat 1 tablespoon corn oil in a medium skillet over medium-high heat. Saute onions for 3 minutes, until translucent. Add corn and roasted red peppers; saute for 5 minutes or until the corn is fully cooked. Season with sugar, salt and pepper. Transfer mixture to medium bowl, stir in cheese and heavy whipping cream. Let cool.
  • On a cutting board, place 6 empanada shells side by side. Place a spoonful of the corn-cheese filling on 1 side of the circle. Moisten the tip of your finger with a small amount of water and moisten the edges of the circle with your finger. Fold the dough over the filling to make a half-circle. Press the edges with a fork to seal.
  • Spray a baking sheet with cooking spray. Place the empanadas on prepared baking sheet.
  • In a small bowl, whisk together the egg and water to make egg wash. Brush the top of the empanadas with the egg wash and bake for 20 minutes or until top is browned.
  • Let cool and serve.

For the Empanada Dough:
1/2 cup cold water
1 large egg
1 large egg white
1 teaspoon vinegar
3 cups all-purpose flour, plus more for kneading
1 teaspoon salt
3 tablespoons shortening
For the Shrimp Filling:
8 ounces tomato sauce
3 tablespoons sofrito
10 ounces medium raw shrimp (peeled and cleaned)
Salt, to taste
Freshly ground black pepper, to taste
2 cups Colby Jack cheese (shredded)
Oil, for frying

Steps:

  • Gather the ingredients.
  • In a medium bowl, beat the water, egg, egg white, and vinegar together. Set aside.
  • In a separate large bowl, whisk together 3 cups of flour and salt.
  • Cut the shortening into the flour mix with a pastry blender or 2 butter knives.
  • Make a well in the center of the flour mix and pour the liquid ingredients from the first bowl into the center.
  • Mix the wet and dry ingredients with a fork until the dough becomes stiff.
  • Turn the dough out onto a lightly floured surface. Knead it just until all the flour is incorporated, and the dough is smooth.
  • Wrap the dough in plastic and refrigerate for at least 1 hour but never more than 24 hours. If you want to keep the dough longer than 24 hours, you can freeze it.
  • Gather the ingredients.
  • In a saucepan over medium heat, bring the tomato sauce and sofrito to a simmer.
  • Pat the shrimp dry. Season with salt and pepper to taste.
  • Place the shrimp into the saucepan with the tomato sauce mix. Add the cheese and stir thoroughly.
  • Cook the shrimp until it turns pink, about 3 to 5 minutes. Do not overcook the shrimp because it will become rubbery.
  • Remove the pan from the heat and allow to cool before filling the empanadas.
  • Roll the empanada dough out on a floured surface until 1/8-inch thick.
  • Cut the dough into circles with a round cookie or biscuit cutter. For large empanadas, use 6-inch cutters, and for smaller ones, use 3-inch cutters.
  • Place the shrimp filling by the spoonful into the center of the circles.
  • Fold the dough over the filling into a half-circle shape, and crimp the edges with a fork. If the edges won't stay sealed, you can dip the fork in water before crimping or use an egg wash . Do not overfill the empanadas. They will burst, and you will lose your filling in the oil.
  • Heat a few inches of oil in a heavy-bottom pot over medium heat until the oil reaches 375 F.
  • Fry the filled empanadas at 375 F for 1 to 2 minutes per side. They should be lightly golden. Drain on paper towels. Cool slightly before serving.

This bright, tangy, one-pan meal comes together quickly and is packed with bright flavors - perfect for a summer evening. If you can't find fresh corn, frozen will work in a pinch; just defrost it and pat it dry before throwing it into the skillet. You can also add a little more spice by leaving the ribs and seeds in the chile that goes into the dressing. Serve the shrimp and corn over rice or with a big green salad. Depending on what you serve this dish with, you may have a bit of dressing leftover, which can be saved for salad or drizzled over grilled meat or vegetables.

1 pound large shrimp (preferably tail-on), peeled and deveined
2 teaspoons ground coriander
Kosher salt and black pepper
1/4 cup fresh lime juice, plus 2 teaspoons lime zest, and 4 lime wedges (from 3 limes)
2 tablespoons thinly sliced mint, plus a few mint leaves for garnish
1 teaspoon honey
1 garlic clove, finely minced
1/2 Fresno chile, finely minced, seeds and ribs removed if desired

3 cups fresh corn kernels (from about 4 ears)

Steps:

  • Pat the shrimp dry, then toss with the coriander and a sprinkle of salt and pepper. Let sit while you prepare the dressing.
  • Make the dressing: In a medium bowl, combine the lime juice, lime zest, mint, honey, garlic, chile, 1 teaspoon kosher salt and 1/4 cup olive oil. Whisk until well combined and emulsified.
  • Heat a large nonstick skillet over medium-high. Add 2 tablespoons olive oil, then add the shrimp in an even layer. Cook the shrimp until pink and just cooked through, about 2 to 3 minutes per side. Remove the shrimp to a plate.
  • Reduce the heat to medium and add the corn to the pan. Season with salt and pepper, and cook the corn without stirring until it begins to brown on one side, about 2 minutes. Give the corn a stir and cook for another minute.
  • Add the shrimp back to the pan, along with 2 tablespoons of the dressing, and stir to coat everything in the dressing and to rewarm the shrimp.
  • Transfer to a serving platter, drizzle with more dressing, and garnish with more mint. Serve with lime wedges.
