CHICKEN WITH WALNUT SAUCE
Steps:
- Bring a pot of chicken stock or water to a boil (starting with stock will mean even more flavorful chicken and even better stock when you're done). Add the chicken, onions, carrots, celery, parsley stems, salt, and pepper; the liquid should just cover the chicken. Simmer, uncovered, over low heat, until the chicken is cooked through, about 30 minutes. Remove the chicken and cool to room temperature. Strain the stock and set aside.
- Put the bread in a bowl and saturate it with some of the stock. Squeeze any excess liquid out of the bread, then place it in a food processor with the parsley leaves, walnuts, garlic, and chile. Process until the walnuts are ground, then, with the machine running, pour in enough of the reserved stock to form a creamy sauce, about 2 cups. Reserve the remaining stock for another use.
- Season the sauce with salt and pepper. Carve the chicken and serve it with the sauce.
- Walnut Chicken Salad
- When the chicken is cooked, remove the meat from the bones and chop into small pieces; combine with enough of the sauce to create a chicken salad. Serve at room temperature.

Steps:
- Heat the grill to medium. Put the chicken on a baking tray, drizzle with ½ tbsp oil and season. Grill for 8-10 mins on each side or until cooked through. Shred the meat with two forks.
- Meanwhile, soak the bread in the milk for 5 mins, then tip into a food processor with the walnuts, remaining oil, garlic, lemon zest and juice. Pulse to a smooth creamy texture. Season.
- Bring a large pan of salted water to the boil. Add the spaghetti and cook according to pack instructions.
- Drain the spaghetti, reserving a mugful of cooking water (about 200ml). Return the spaghetti to the pan and toss with the walnut sauce, shredded chicken, most of the pasta water and the parsley. Toss to coat, and add a little more pasta water to loosen, if you need to. Check for seasoning and serve in bowls topped with the parmesan.

SHREDDED CHICKEN SANDWICHES
This Ohio potluck staple tends to be made with canned chicken, cream of mushroom soup, saltine crackers, and other iffy components. I developed this version using real ingredients so you can enjoy the warm comfort of shredded chicken sandwiches in a healthier, more delicious way.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Pulse almonds in the bowl of a food processor to fine crumbs. Add bread, oil, salt, and pepper and pulse mixture to coarse crumbs. Spread evenly on a rimmed baking sheet.
- Bake in the preheated oven for 10 minutes, stirring halfway through. Set aside to cool.
- Season chicken with salt and pepper, then place in a Dutch oven or deep skillet in a single layer and cover with chicken broth. Bring to a boil over medium heat, skimming foam. Reduce heat to low, cover, and simmer until no chicken is no longer pink in the center, 10 to 14 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken and let cool a bit on a cutting board, then shred with two forks.
- Strain chicken broth to remove solids.
- Return chicken to the pot, then add bread crumb mixture and 4 cups chicken broth. Boil over medium heat, adding more broth if necessary, until mixture reduces and reaches desired consistency, about 20 minutes. Season with salt and pepper.
- Melt butter in a skillet over medium-low heat. Toast flat sides of buns until golden brown, 1 to 2 minutes. Fill with a generous scoop of chicken mixture and serve.

CHICKEN WITH A MUSHROOM AND WALNUT SAUCE
I like this dish because it is versatile in that you can change the seasonings to alter the flavor even though the flavor in itself is wonderful. The walnuts add a great nutty flavor to the mushrooms and chicken strips. It is a filling meal. It can easily be divided for more depending on what you are serving or if it is the only meal.

Steps:
- Salt and Pepper the chicken.
- I like to add a little homemade Essence to this, or paprika.
- Then dredge your chicken into the crumbs.
- Bake the chicken at 350* for about 15 minutes until you lose the pink.
- Of course, this will take longer if your chicken are larger.
- Cut the chicken diagonally in strips when done.
- Keep each piece relatively together as one and hot until you are ready with the sauce.
- Place the chicken on top of the pasta.
- The following sauce will cover all.
- Heat 2 Tblsp. oil in a large skillet where you will saute the mushrooms and the walnuts.
- Let the mushrooms reach a nice golden color.
- Add the cream and continue stirring until the mixture begins to thicken approximately 5 min.
- Turn your heat down to warm.
- When the sauce slows and stops simmering, add pepper and cheeses.
- Stir until the sauce is smooth, but do not boil.
- Serve this sauce over your chicken and pasta.
- Don't forget your parsley sprig for that added touch.
- I like mint sprigs too.
- I've even made this with veal cutlets, and the sauce is very good with it.
- Very versatile-- can be elegant or just plain.
- Serve with a variety of vegies, I like a broccoli asst.
- ,and a pasta, or potato etc.

CHICKEN WITH WALNUT SAUCE
I got this recipe from a cookbook called "The Best of Slavic Cooking," by Alojzije Kapetanovic and Ruzica Kaptanovic. I like to serve it with rice and a green salad. (Of course, I like to serve almost everything with rice and a green salad).

- Place the chicken, olive oil, mustard, white wine, garlic, and dried thyme in a large zipped-top bagger container. Seal shut, give it a shake to combine, and refrigerate for at least 4 hours and up to 12 hours.
- Combine the walnuts, flour, salt, and pepper together in a shallow dish such as a 9×9 inch baking pan or a pie dish. Remove the chicken, shake off a little excess marinade and dip both sides of the chicken in the walnut mixture. Coat it really well so there’s lots of walnut coating on each.
- Heat a couple Tablespoons of olive oil in an oven-safe skillet* over medium heat. Add the chicken and sear for 2 minutes, 1 minute on each side. Transfer skillet to the oven and bake, covered loosely with aluminum foil, for 15-20 minutes or until the chicken is fully cooked through. (Chicken is considered done when an instant read thermometer reads the center of the thickest part as at least 165°F (74°C).)
