Steps:
- Trim the roast of any excess fat, and cut into four pieces. Rub with black pepper, and place into a slow cooker. Add the onions, green chiles, chili powder, cayenne pepper, garlic powder, cumin, chipotle peppers, and beef bouillon. Pour in enough water to cover 1/3 of the roast.
- Cover, and cook on High until the meat begins to fall apart, about 8 hours. Add water if needed to keep the roast from drying out.
- Turn the slow cooker to Low, and remove meat to a large bowl with a slotted spoon. Shred the meat into bite-sized pieces using two forks. Return the meat to the slow cooker; cook about 20 minutes to reheat before serving.

SHREDDED BEEF WRAPS
These are SO good! They make a really nice casual dinner, and are a fantastic wrap to take for lunch (fold both ends in before rolling if taking in a lunchbox.) I use Roast Shredded Beef ( Recipe #457009 ) and Honey Mustard Mayonnaise ( Recipe #460263 ). My whole family love them! We use sun-dried tomato flavoured tortillas, and they really add to th eflavour, but if you can't get them, just use regular ones. The measurements for the filling are approximate, basically just sprinkle small amounts on, to your own tastes.

ROAST SHREDDED BEEF
This recipe comes from Madagascar, and was posted for ZWT7. It also works well in the slow cooker, takes around 4 hours on high, then shred it and bake it. It goes perfectly in Shredded Beef Wraps ( Recipe #460264 ), with Honey Mustard Mayonnaise ( Recipe #460263 ). I also think it could be tasty if you added some flour to the leftover liquid to make a gravy, and serve the beef and gravy with mashed potatoes...I had the thought when I was cooing it tonight..think it would be good winter comfort food!

SHREDDED BEEF WRAPS
I needed an appetiser that was easy to transport and used leftover roast beef. Searched zaar and found papergoddess' Beef & Onion Wraps. Tweaked it for our taste, added additional ingredients and came up with this. They were inhaled. You could substitute deli roast beef or prepackaged beef lunchmeat if you don't have leftovers. Cook time is refrigerator time.

SHREDDED BEEF TAQUITOS RECIPE - RECIPES.NET
From recipes.net
- Cook shredded beef according to directions. Drain beef well, set aside. Heat a non-stick griddle over medium high heat. Cook tortillas for about 15 - 30 seconds on each side until soft and flimsy (can't think of a better word =). Immediately remove tortillas to a plate in a stack and cover with a saucepan lid large enough to cover diameter of tortillas (this seals in moisture and helps them roll well without cracking). Repeat this step until all the tortillas have been cooked.
- Fill a non-stick sauce pan with mixture of a few tablespoons vegetable oil and a few tablespoons extra virgin olive oil, it should be a layer of oil about 1/2 inch high (this is where the extra virgin olive oil is optional, you can use all vegetable oil, I just prefer both for flavor and health benefits). Heat oil over medium heat.
- Remove one tortilla at a time, place about 1/4 cup shredded beef on tortilla in a line down the center of the tortilla. Roll the tortilla snugly then insert a toothpick through the center so ends of tortillas stay in place. Using metal tongs, gently place taquitos into hot oil (I usually fit 4 - 5 taquitos in at a time). Cook until lightly browned then remove toothpick, and using tongs, rotate taquito and cook opposite side until lightly browned. Using tongs, remove from oil to a paper towel covered plate. Add additional oil to pan as needed while cooking taquitos. Serve warm with salsa, sour cream, guacamole or cilantro lime ranch for dipping.
