FRESH SALMON WITH THAI NOODLE SALAD
Ideal for a quick midweek meal, whip up this nutritious salmon and noodle salad in just 20 minutes. The balance of protein and carbs make it super satisfying

Steps:
- Put a pan of water on to boil. Line a steamer with baking parchment, add the salmon fillets and scatter with a little of the orange zest. When the water is boiling, add the beans to the pan, put the salmon in the steamer on top and cook for 5 mins. Take the salmon off, and if it is cooked, set aside but add the peas and mange tout to the pan and cook for 1 min more, or if not quite cooked leave on top for the extra min. Drain the veg, but return the boiling water to the pan, add the noodles and leave to soak for 5 mins.
- Put the curry paste and fish sauce in a salad bowl with the orange juice and a little of the remaining zest and the spring onions. Drain the noodles when they are ready and add to the salad bowl, toss well, then add the chopped orange with the basil or coriander and the cooked vegetables. Tip in the juice from the fish, then toss well and serve in bowls with the salmon on top.

Steps:
- Cook the noodles as normal and prepare all the vegetables while the noodles are cooking. When they are done rinse under cold water and add to the salad.;
- Mix all of the ingredients together in a jam jar, shake and pour over the salad. Garnish with cashew nuts or sesame seeds.;

- Cook the noodles following the pack instructions, rinse and drain. Heat the oil in a deep saucepan and fry the curry paste for 1 min until fragrant. Add the spring onions, reserving 1 tbsp, the sweet potato, stock and milk, bring quickly to the boil and simmer for 5 mins until the potato is tender. Add the salmon pieces and cook for 2 mins, then stir in half the coriander.
- Divide the noodles between 4 bowls and spoon over the salmon and sauce. Sprinkle over the remaining coriander and spring onions.

- To a small bowl add, 2 tablespoons honey, tamari sauce, 1 tablespoon lime juice, 1 tablespoon rice vinegar, 1 garlic clove, 1 teaspoon ginger, and garlic chili paste. Whisk together.
- Add salmon filets to large ziplock bag. Pour the marinade mixture into the ziplock bag with the salmon. Close and place in the refrigerator for 15-20 minutes.
- In a small bowl, add 4 1/2 tablespoons rice vinegar, 3 tablespoons sesame oil, 2 1/2 teaspoons honey, 1 teaspoon lime juice, 1 teaspoon sriracha, 1 garlic clove, and 1/2 teaspoon fresh ginger. Whisk together until combined. Set aside.
- Bring a large pot of water to a bowl. Add rice noodles in a cook for 1-2 minutes. Immediately remove. Drain with cold water.

- Prepare the noodles: Bring a large pot of water to a boil. Add the noodles, stir, and cook until just ‘al dente’. Drain well , rinse under cold water until cool, and set aside.
- In a small bowl, whisk together the chili paste, fish sauce, sugar, and two tablespoons cold water. In a large non-stick skillet or wok, heat the oil over medium-high heat. Sauté the shallots for 1 to 2 minutes, stirring frequently. Add the garlic and sauté for another 30 seconds or so, or until fragrant. Add the bok choy leaves to the pan, and stir until just beginning to wilt. Add the cooled noodles, and the chili paste mixture. Don’t stir and allow the noodles to caramelize slightly the pan before stirring gently. Add one tablespoon of lime juice. Transfer the noodles to a large serving platter or bowl, gently stir in the remaining lime juice, scallions, cilantro leaves, basil, mint, and peanuts. Season to taste, adding more fish sauce and lime juice as desired. Set aside to cool slightly while you prepare the salmon.
- Prepare the salmon: In a small bowl, whisk together the red chili paste, oil, and 1 teaspoon cold water until mostly smooth. Brush the tops of the salmon fillets liberally with the chili paste mixture. Season very lightly with salt and pepper.
- Heat roughly one tablespoon neutral cooking oil over medium-high heat in a large 12-inch non-stick skillet. Add the salmon fillets, skin-side down, and cook for 3 to 4 minutes (time will vary depending on the thickness of your salmon fillets – my filets were about 1-inch thick). Flip the fillets and continue cooking until the flesh is slightly opaque in the center and the the salmon is caramelized, about 1 to 2 minutes. Distribute the Thai noodle salad, top with a piece of glazed salmon, and serve. Garnish with lime wedges for squeezing.
