SLOW COOKER SHREDDED BEEF SANDWICHES



Slow Cooker Shredded Beef Sandwiches image

Slow cooked beef is shredded and piled high on toasted buns along with mushrooms and cheese.

2.5 Pound Beef pot roast (boneless)
1 Can Beef consumme
1/2 Cup Beef broth (low sodium)
1 Tbsp Onion flakes
2 tsp Minced garlic (or 3-4 cloves fresh)
2 Tbsp Worcestershire sauce
3 Cups Mushrooms (sliced)
1.5 Cups Monterey jack cheese (shredded)
6 Ciabatta buns or hogie rolls
1/3 Cup Mayonaise
1-2 Tbsp Horseradish

Steps:

  • Place the beef in the slow cooker, then add the consumme, beef broth, worcestershire sauce, onion flakes, and minced garlic. Close the lid, set the cooker to high, and cook 2 hours.
  • After 2 hours reduce the cooker to low and cook for approximalty 5 hours.
  • In a smal bowl, mix the mayonaise and horseradish. Set aside.
  • When the beef is almost ready, sautee the mushrooms in a skillet with a bit of butter or oil until soft.
  • Pre-heat oven to 400 degrees
  • Remove the beef from the pot and place it in bowl. Pull the meat apart with 2 forks until it is shredded.
  • Cut each bun open and lay them on a baking sheet. Spread some of the horseradish sauce on each side of the buns. Then place a large pile of beef on one side of each bun.
  • Top the beef with a scoop of mushrooms, then a handful of cheese.
  • Place the tray in the oven and bake for about 5-7 minutes until cheese is melted and bubbly.
  • Remove the tray from the oven and close each sandwich.
  • Whisk the remaining juices in the slow cooker to help emmusify any seperation, then ladle it in to small bowls.
  • Cut each sandwich in half and serve with a bowl of the jus for dipping.

1 cup ketchup
½ cup packed brown sugar
½ cup lemon juice
3 tablespoons steak sauce
2 cloves garlic, minced
1 tablespoon ground black pepper
1 teaspoon Worcestershire sauce

1 (3.5 pound) beef eye of round roast, cut in half
16 sandwich buns, split

Steps:

  • Whisk beef broth, ketchup, brown sugar, lemon juice, steak sauce, garlic, pepper, and Worcestershire sauce together in a small bowl.
  • Pour 1/2 of the mixture into a 5-quart slow cooker. Sprinkle salt over beef. Add beef to the slow cooker and cover with the remaining broth mixture.
  • Cook on Low until tender, 10 to 12 hours. Shred beef on a cutting board using 2 forks; return to the slow cooker.
  • Use a slotted spoon to place about 1/2 cup of the beef mixture on each sandwich bun.

½ cup Ketchup
½ cup Chile Sauce
¼ cup Brown Sugar ((light or dark))
1/3 cup Worcestershire Sauce
1 teaspoon Liquid Smoke
½ teaspoon Kosher Salt
¼ teaspoon Garlic Powder
¼ teaspoon Black Pepper (, freshly ground)
1/3 cup Apple Cider Vinegar
1 tablespoon Ground Mustard
½ teaspoon Smoked Paprika
Dash of Crushed Red Pepper Flakes ((or more if you want it spicy; taste first then add more if desired))
3 pound Boneless Beef Chuck Roast
Hamburger buns or rolls

Steps:

  • In a mixing bowl combine all ingredients except for the beef roast; whisk to fully combine.
  • Add the beef roast to a 6-7 quart oval slow cooker (it can also be cut in half and placed in a round slow cooker). Pour the sauce over the roast and turn the roast to coat fully.
  • Place the lid on the slow cooker and cook for 8 hours on LOW. When the meat is cooked, skim any fat from the surface of the liquid and discard. Using two forks, scrape the roast to shred it. Serve on buns or rolls. Extra portions can be combined with the sauce and stored in the refrigerator or frozen.

This sandwich is delicious. I found this recipe in one of my old Taste of Home magazines. This is a crock pot recipe..so delicious! If you want to lighten it up, use diet coke.. I usually double this recipe for leftovers. Or when taking for pot - luck

3/4 c cola
1/4 c worcestershire sauce
2 clove garlic, minced
1 Tbsp white vinegar
1 Tbsp beef bouillon granules
1/2 tsp chili powder
1/2 tsp ground mustard
1/2 tsp cayenne pepper
1/4 tsp red pepper flakes, optional
2 lb rump roast or bottom round
2 medium onions, chopped
1/2 c ketchup
8 kaiser rolls, onion rolls are good also

Steps:

  • 1. Gather ingredients. I used almost a 4 pound rump. So I doubled the ingredients.
  • 2. In a medium bowl, combine cola, worcestershire sauce, garlic, vinegar, bouillon and seasonings; set aside.
  • 3. In a nonstick skillet, brown meat in oil on all sides.
  • 4. Place onion in 3 quart. slow cooker. Top with meat. pour half of cola mixture over the meat. Cover and cook on low for 6 - 8 hours. Mine us usually tender after 6 hrs. Cover and refrigerate remaining cola mixture.
  • 5. Remove meat from cooking liquid and cool. Strain cooking liquid, reserving onions and discarding the liquid.
  • 6. When meat is cool enough to handle, shred with two forks.
  • 7. Return meat and onions to slow cooker.
  • 8. In a small saucepan, combine ketchup and reserved cola mixture; heat through. Pour over meat mixture and heat through, serve on rolls.
  • 9. When I poured the sauce over the meat, I added about 1/2 tsp of garlic powder and 1/2 tsp of onion powder.. These are delicious...Enjoy!!

1 (14 1/2 ounce) can tomatoes, chopped
1 (7 ounce) can chipotle chili sauce or 1 (7 ounce) can salsa
1 (4 ounce) can jalapeno peppers, diced and drained
1 onion, chopped
3 garlic cloves, minced
2 tablespoons chili powder
1 tablespoon honey
1 1/2 teaspoons kosher salt (or other coarse salt)
1 teaspoon ground cumin
2 cups beef broth
French rolls or sandwich bun
onion, sliced, garnish
cilantro, garnish
sour cream, garnish
tomatoes, slices garnish

Steps:

  • Rinse beef and trim excess fat.
  • Put beef in crock pot and reminder of ingredients (through beef broth).
  • Cover and cook on low for 8-10 hours.
  • Shred meat with forks.
  • Return shredded beef to crock pot and serve with sauce.
  • Serve on sandwich rolls with sauce and your favorite toppings. Some of our favorite toppings are onion slices, grated cheese, sour cream and extra salsa.

3 medium green peppers, diced
2 large onions, diced

Crock-Pot Pulled Beef Pot Roast Sandwiches are one of my all-time favorite dump-and-go summer meals. After searing the beef and onions on the stove-top, the crock-pot does the rest of the work, cooking the meat to pulled perfection.

1 TB extra virgin olive oil
2 medium yellow onions (halved (remove the outside skin))
1 pinch salt (and pepper)
2 1/2 lb beef chuck roast
1 cup chicken broth (Vegetable or beef broth will also work.)
1 TB chopped fresh rosemary (about 3 sprigs)
burger buns (I like Silver Springs brand)
1 TB softened butter (per sandwich)
2 pickles (per sandwich)
1 slice cheese (per sandwich, I like sharp cheddar)
sauerkraut
mayonnaise

Steps:

  • Sprinkle the chuck roast with a generous helping of salt and pepper on each side. Set aside.
  • In a large skillet, over medium-high heat, add the olive oil until hot, but not smoking. Add the halved onions and saute just until brown and translucent, about 4-5 minutes. Note: I've learned some ceramic crock-pots may be used on the stove-top in place of a skillet. You will want to check with your crock-pot manufacturer before trying this. Push the onions off to the side of the skillet.
  • Add the chuck roast to the center of the hot skillet and brown on each side for 3-4 minutes. Remove the skillet from the heat.
  • Add the onions and chuck roast to the crock-pot. Pour the broth over the top and the fresh rosemary.
  • Cook on high for 4-5 hours, or on low for 8 hours.

Juicy, tender and flavorful Crock Pot Italian Beef is an easy dinner recipe that's perfect for busy days. Serve the shredded meat and pepperoncini on a hoagie roll with giardiniera and melted Provolone cheese for a classic sandwich!

2 small onions, thinly sliced
4 garlic cloves, minced or pressed
1 (3-4 lb.) boneless beef chuck roast
Kosher salt and ground black pepper, to taste
2 tablespoons vegetable oil
1 (14.5 oz) can beef broth
1 (0.7 oz) packet dry Italian salad dressing seasoning mix ((such as Good Seasons brand))
1 tablespoon Worcestershire sauce
8 pepperoncini peppers, from a 12-ounce jar, plus 1 tablespoon of liquid from the jar
Optional, for serving: hoagie rolls; provolone cheese; giardiniera

Steps:

  • Arrange the onions and garlic in the bottom of a slow cooker. Set aside.
  • Pat beef dry and season with kosher salt and black pepper on all sides.
  • Heat oil in a large pot or Dutch oven over medium-high heat. Place beef in the pot and sear for about 5-7 minutes on each side, or until browned all over. Transfer beef to the slow cooker (on top of the onions and garlic).
  • Pour the beef broth into the Dutch oven; turn the heat down to medium. Using a wooden spoon, scrape up any browned bits from the bottom of the pot. These bits add a lot of flavor to the broth!
  • Pour beef broth over the roast. Add Worcestershire sauce and sprinkle with dry Italian salad dressing mix. Add pepperoncini to the slow cooker, along with 1 tablespoon of liquid from the jar.
  • Cover and cook on LOW for 8-10 hours or on HIGH for 4-5 hours.
  • Shred the beef with two forks (it should practically fall apart when it's done). Discard any big fatty pieces. Stir the shredded beef into the juices in the pot.
  • To assemble sandwiches: split the hoagie rolls in half and toast lightly in a 350°F for 5 to 7 minutes. Add beef to each roll and top with provolone. Return to the oven just until cheese melts. Top with giardiniera and serve!

2 2-3 pound beef roasts (or one up to 5 pounds)
2-3 cups water (approximately)
Lawry's seasoning salt (sprinkly liberally )
Fresh cracked pepper (sprinkly liberally )
garlic powder (sprinkly liberally )
onion powder (sprinkly liberally )
other optional seasonings: (tarragon, parsley, basil, worchesterchire sauce, soy sauce, teriyaki sauce)

Steps:

  • Preheat your slow cooker to low heat.
  • Remove the chuck roast (or roasts) from their packaging and use a knife or fork to stab a few holes on all sides. Put in the bottom of the pot. Add water to the pot.
  • Sprinkle evenly with Lawry's seasoning salt, freshly ground pepper, and any optional spices you choose.
  • Cover and cook on low for 8-10 hours or until the beef shreds easily with a fork. If you check it after 8 hours, and it's not easy to pull apart, continue cooking for another 1-2 hours. Before cooking put a piece of saran wrap over the pot before putting on the lid. It helps the meat to cook faster and the juices to not evaporate.
  • When done cooking, pull the beef apart while still in the pot with just your two forks. Beef can be served immediately with juices over noodles or mashed potatoes. It also makes a great sandwich, nachoa, taco, or burrito!
