SWISS SHERRY CHICKEN



Swiss Sherry Chicken image

An elegant chicken dish for family and friends. You can leave dill out; it just gives the dish a little bit of extra flavor.

6 skinless, boneless chicken breasts
salt and pepper to taste
6 slices Swiss cheese
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup sherry
¼ cup sour cream
1 cup croutons
½ cup butter, melted
⅛ teaspoon dried dill weed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place chicken in a 9x13 inch baking dish and season with salt and pepper to taste. Cover each chicken breast with a slice of cheese.
  • In a medium bowl mix together the soup, sherry and sour cream, and pour mixture over chicken. Soften dill in melted butter; toss croutons in butter, and sprinkle them on top of chicken.
  • Bake in the preheated oven for 45 minutes, or until chicken is cooked through.

Sherry-Shallot Warm Brussels Sprouts Slaw - from Rachael Ray image

Rachael Ray has several Sprout recipes, we tried this one last night and really liked the flavor. I used a wok to toss this all together and cook until veggies are tender. Be careful not to over cook so that the sprouts are still bright green and the shallots are just opaque. I thought that the thinly sliced Italian Ham Rachael Ray added to her Sprouts in another recipe would have tasted good in this - or crumbled cooked bacon.

Number Of Ingredients 9

2 cups Brussels sprouts, thinly slice
2 tablespoons extra virgin olive oil
6 shallots, thinly sliced
salt and pepper
3 -4 tablespoons sherry wine (Sub -- Apple Juice)
2 teaspoons sugar (I used Splenda)
lemon zest
thinly sliced ham (Italian)
bacon, cooked and crumbled and sprinkled on top (turkey bacon)

Steps:

  • In wok, over medium-high heat,add two tablespoons of Extra Virgin Olive Oil.
  • Add shallots and sprouts and cook until the veggies are tender.
  • Season with salt and pepper and deglaze the pan with the sherry and sugar, cooking until most of the sherry has evaporated.
  • Remove the pan from the heat and stir in the zest of the lemon. Serve Warm.

This spicy red hot slaw recipe will be a hit at any barbecue.

Number Of Ingredients 10

1 medium head cabbage, chopped
½ head iceberg lettuce - rinsed, dried, and chopped
1 green bell pepper, chopped
1 onion, chopped
2 tomatoes, chopped
1 (20 ounce) bottle ketchup
1 cup white wine vinegar
1 cup white sugar
1 tablespoon ground cayenne pepper
1 tablespoon hot pepper sauce

Steps:

  • In a saucepan, combine the vinegar and sugar; cook over medium heat until sugar is dissolved. Remove from heat and refrigerate until chilled.
  • In a large bowl, combine cabbage, lettuce, bell pepper, onion, tomatoes, ketchup, cayenne pepper and hot sauce. Mix and pour cooled vinegar and sugar mixture over slaw. Toss and serve chilled.

This recipe for sour slaw is from "Southern Country Cooking from the Loveless Cafe," by Jane and Michael Stern. This side goes great with braised pork chops and hush puppies.

1/4 cup vegetable oil
1/4 cup white-wine vinegar
1 tablespoon dry sherry
2 cloves garlic, finely chopped
1 tablespoon sugar
1 teaspoon coarse salt
1/2 large head green cabbage, cored and thinly sliced (about 8 cups)
1/4 cup flat-leaf chopped parsley

Steps:

  • Combine oil, vinegar, sherry, garlic, sugar, salt, and 2 teaspoons water in the jar of a blender. Blend until smooth.
  • Place cabbage in a large bowl; sprinkle with parsley. Pour over oil mixture; toss until well combined. Refrigerate at least 1 hour before serving.
