BREAD PUDDING WITH SHERRY SAUCE

1/2 cup cream Sherry
1/2 cup dried currants
2 cups whole milk (do not use lowfat or nonfat)
1/2 cup sugar
3 large eggs
2 large egg yolks
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
7 cups brioche or egg bread cubes (about 6 ounces)
1 cup half and half
3 egg yolks
2 tablespoons sugar
1 teaspoon cornstarch
2 tablespoons cream Sherry

Steps:

  • Bring 1/2 cup Sherry to boil in a heavy small saucepan. Add currants. Remove from heat. Cover and let stand 15 minutes to plump.
  • Preheat oven to 325 degrees F. Butter an 8 inch square glass baking dish. Whisk milk, sugar, eggs, yolks, vanilla and cinnamon in large bowl. Arrange half of bread on bottom of prepared dish. Spoon Sherry and currants over. Arrange remaining bread over. Pour egg mixture over all. Let stand 15 minutes, pressing bread into egg mixture occasionally. Bake pudding until puffed and golden, about 1 hour 15 minutes. Transfer to rack.
  • Bring half and half to a simmer in heavy medium saucepan. Whisk yolks, sugar and cornstarch in medium bowl. Gradually whisk in hot half and half. Return mixture to same saucepan. Stir over medium heat until mixture thickens and leaves path on back of spoon, about 3 minutes. Strain into bowl. Stir in Sherry. Serve pudding warm with warm sauce.

1 (5 ounce) jar sharp processed cheese spread
1 (6 ounce) can lump crabmeat, drained and flaked
1/4 cup half-and-half
1/2 teaspoon Worcestershire sauce
1/4 teaspoon garlic powder
green onion, cut into fans
paprika
1 loaf French bread, cut into 1 inch cubes and toasted
boiled shrimp (optional)
1 teaspoon sherry wine

Steps:

  • Combine cream cheese and cheese spread in 4-cup glass measure.
  • Microwave at medium 4 minutes stirring at 2-minute intervals until cheese melts.
  • Stir in crabmeat, half-and-half, Worcestershire sauce and garlic powder.
  • Microwave at medium-high (70 percent power) for 2 minutes or until thoroughly heated, stirring at 1 minute intervals.
  • Pour into fondue pot or chaffing dish.
  • Garnish with green onions and sprinkle with paprika.
  • Serve with French bread cubes and boiled shrimp if desired.

2 cups sugar
1 1/4 cups packed light brown sugar
3 2/3 cups fresh pumpkin puree or 29 ounces pumpkin puree
4 large eggs
1 cup nut oil (such as walnut, almond, or sunflower seed)
4 2/3 cups unbleached all-purpose flour
1 tablespoon baking soda
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1 1/2 teaspoons ground coriander
1 teaspoon salt
1/2 cup cream sherry

Steps:

  • Preheat oven to 350°; grease three 8 x 4 inch loaf pans.
  • In a big bowl, combine the sugars, pumpkin, eggs, and nut oil.
  • Beat with an electric mixer until smooth, about 1 minute.
  • In another bowl, combine the flour, baking soda, spices, and salt.
  • With a spatula, combine the wet and dry ingredients and beat until smooth.
  • Stir in the cream sherry; vigorously beat until thoroughly blended, about 1-2 minutes; the batter will be thick and fluffy.
  • Scrape the batter into the three prepared pans, filling each no more than ¾ full.
  • Bake immediately in the center of the oven for 65-75 minutes, or until a cake tester comes out clean; the top of the loaves will be crusty, and there will be a long crack down the center.
  • Let stand for 5 minutes in the pans before turning the loaves out of the pans onto a rack, then turning them right side up to cool completely.
  • Wrap tightly in plastic wrap and let sit at room temperature overnight or for up to 4 days before serving.

1 tablespoon baking powder
1 teaspoon salt
1 cup chopped nuts

Steps:

  • In large bowl, beat together oil, brown sugar, eggs, pumpkin, cinnamon, nutmeg and sherry. In separate bowl, combine flours, baking powder, salt and nuts. Add to wet ingredients and mix well.
  • Pour into 2 greased 9-inch loaf pans and bake in preheated 350°F oven for 30 minutes, or until top springs back when pressed with fingers. Cool 10 minutes, then remove from pans. Yield: Two 9-inch loaves.
