I generally make this with cream sherry, but you can use dry if you want it not quite so sweet. The refrigerating overnight is to allow the fruit and sherry sauce flavors to blend more thoroughly. It's good served hot out of the oven or cold later on (after baking of course). May be served in dishes or poured over pound cake, pudding or ice cream. Or you can put a dollop of vanilla ice cream on top. Times do not include chilling time overnight.

1/4 cup melted butter
2 tablespoons flour
1 (29 ounce) can pear halves in natural juice
1 (29 ounce) can peach halves in syrup
1 (20 ounce) can pineapple chunks
1 (14 ounce) can spiced apple rings
1 (17 ounce) can apricot halves
1/2 cup sugar
1 cup sherry wine

Steps:

  • Combine butter and flour in small saucepan over low heat, blending until smooth.
  • Stir in sugar.
  • Slowly add sherry, stirring constantly, until thickened.
  • Combine the sauce with the drained fruits in a 2-quart casserole.
  • Cover and refrigerate overnight.
  • Bake at 350° for 30 minutes.

4 bananas, peeled
½ cup brown sugar, firmly packed
¼ cup orange or pineapple juice
3 tablespoons sherry
1 dash nutmeg
2 tablespoons butter
½ cup chopped almonds or macadamia nuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the bananas into a small glass baking dish. Stir together the brown sugar, juice, and sherry; pour over the bananas, then sprinkle with nutmeg. Melt the butter in a small pan over medium heat. Stir in chopped nuts, and cook until lightly browned, about 4 minutes. Pour over the banana mixture.
  • Bake in preheated oven for 15 minutes until the bananas are tender, and have become lightly glazed.

1/4 cup dry sherry
1/4 cup dark brown sugar
3 tablespoons apricot jam (or preserves)
2 tablespoons butter, melted and cooled
2 tablespoons strained fresh lemon juice
4 large ripe bananas, peeled and cut lengthwise into halves

Steps:

  • Preheat oven to 350. Mix everything except bananas. Put bananas cut side down, single layer, in a pan only large enough to hold them snugly like that. Pour sherry mixture over them evenly. Bake for 30 or until completely tender. Serve at once, from baking dish.

4 bananas
1/2 cup brown sugar, firmly packed
1/4 cup pineapple juice
3 tablespoons sherry wine
1/2 cup macadamia nuts, chopped
2 tablespoons butter
1 dash nutmeg

Steps:

  • Peel bananas and place in a small baking dish.
  • Mix together brown sugar, orange or pineapple juice and sherry. Pour over bananas.
  • Saute the chopped nuts in butter until toasty and sprinkle over bananas.
  • Add dash of nutmeg to taste.
  • Bake at 350 degrees for 15 minutes or bananas are lightly glazed.
  • Serve bananas with a spoonful of sauce over each.

4 medium bananas
1/4 cup packed brown sugar
1/2 cup fresh-squeezed orange juice
1/4 teaspoon nutmeg, freshly grated
1/2 teaspoon cinnamon
1/2 cup sherry wine
1 tablespoon butter
2 tablespoons light rum (coconut rum would probably be good here, too)

Steps:

  • Preheat oven to 450 degrees F.
  • Peel the bananas, split them in half lengthwise, then place them in a buttered baking dish (10"x6"x2").
  • Combine the sugar, orange juice, nutmeg, cinnamon and sherry in a saucepan. Heat until sugar is dissolved, then pour over the bananas. Dot with butter.
  • Bake bananas for 10 to 15 minutes, or until the bananas are tender. Baste them once or twice during baking.
  • Remove from oven. Sprinkle with the rum before serving.
  • Serve as-is, or with a scoop of vanilla or coconut ice cream.
