CHICKEN, MUSHROOM AND WILD RICE CASSEROLE

Number Of Ingredients 17

5 cups chicken broth
4 tablespoons unsalted butter
2 large shallots, finely diced
10 ounces cremini mushrooms, bottoms of stems trimmed, and quartered
1 clove garlic, minced
1/2 cup dry sherry
One 8-ounce bag uncooked cultivated wild rice, washed and drained
6 large sprigs fresh thyme, tied into a bundle, plus more for garnish if desired
1 bay leaf
2 teaspoons ground coriander
2 teaspoons kosher salt, plus more to taste
2 teaspoons freshly ground black pepper, plus more to taste
4 small to medium (6 1/2 to 7 1/2 ounces each) boneless, skinless chicken breasts
1 tablespoon extra-virgin olive oil
1/2 cup dried cranberries
1 small lemon, sliced into 1/4-inch-thick slices
1 tablespoon chopped fresh parsley, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the broth in a medium saucepan until simmering.
  • Melt the butter in an oven-safe braiser (or large cast-iron skillet with a lid or 4-quart saute pan with a lid) over medium-high heat. Add the shallots and mushrooms, tossing to coat in the butter, and cook, stirring once or twice, until golden, about 5 minutes. Stir in the garlic and cook until fragrant, 1 to 2 minutes. Add the sherry, allowing the pan to deglaze. Add the rice and allow it to toast and soak in the flavors of the pan. Add about 4 cups of the hot broth to the pan. Add the thyme and bay leaf. Cover the braiser and place it in the oven to bake until the rice is almost cooked, 1 hour to 1 hour and 15 minutes.
  • Meanwhile, in a small bowl, mix together the coriander, salt and pepper. Brush the chicken with the olive oil, then dust all over with the seasoning. Set aside.
  • Fluff the rice with a fork and check on doneness. It should still have some chew with some grains just starting to pop open. Stir in the cranberries. Add the remaining hot broth to keep the dish brothy. Add the chicken breasts to the braiser, laying them at an angle so that most of the chicken is submerged in the rice. Shingle the lemon slices in between the chicken breasts. Cover and bake for 20 to 25 minutes. Uncover and continue to cook until the chicken registers an internal temperature of 165 degrees F, about another 10 minutes. Top with the parsley or thyme before serving.

Two 6-ounce boxes long-grain and wild rice mix, such as Uncle Ben's
1 cup (2 sticks) unsalted butter, plus more for greasing dish
16 ounces fresh mushrooms, sliced, or two 4 1/2-ounce cans sliced mushrooms, drained (reserve the liquid)
1 small onion, chopped
1/2 cup all-purpose flour
3 cups chicken broth
3 cups half-and-half
4 cooked boneless, skinless chicken breast halves, diced
1 cup toasted slivered almonds, coarsely chopped
1/2 cup sliced pimientos
1/4 cup chopped fresh parsley
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Cook the long-grain and wild rice mixes according to the package directions. Set aside.
  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch casserole dish.
  • In a large skillet, melt the butter. Add the mushrooms and onions and saute until the onions are translucent. Stir in the flour, cooking for 2 to 3 minutes. Slowly stir the broth (and reserved canned mushroom liquid if using) into the onion mixture, then stir in the half-and-half. Cook until the mixture has thickened, 7 to 10 minutes.
  • Add the chicken, rice, toasted almonds, pimientos, parsley, salt and pepper into the wet mixture. Pour everything into the prepared casserole dish and bake, uncovered, until most of the liquid has been absorbed, 30 to 45 minutes.

SHERRIED CREAM OF CHICKEN AND WILD RICE SOUP

You will need a large stock pot for this soup. This recipie has morphed from the original (which is so old I don't know where I got it from). I don't like a lot of fat in my cooking, but if you don't like 24 oz of evaporated skim milk, you can substitute 36 oz. of half and half. I also reduced the amount of butter from the original recipie from 1/2 cup to 1/4 cup. So if you want it richer, just add more butter or half and half. The easiest way to get the cooked chicken and the 7 cups of broth is to make your own chicken broth using chicken pieces. However, if you don't have home made broth on hand, just use cooked chicken and canned broth or bullion cubes.

4 cups water
3 -4 cups chicken, cooked and chopped
7 cups chicken broth

1 teaspoon thyme, ground
2 bay leaves
24 ounces skim evaporated milk
12 ounces water
1/4 cup butter
2 chicken bouillon cubes
3/4 cup cooking sherry

Steps:

  • Bring 4 Celsius water to a boil.
  • Add wild rice to boiling water.
  • Simmer for 45 minutes.
  • Remove from heat.
  • Add cooked chicken to rice.
  • In a seperate frying pan, heat 2 T. olive oil and saute the celery, onions and mushrooms until the onions are clear.
  • Add flour to vegetables and mix well.
  • Add chicken broth to vegetables and stir until flour is dissolved.
  • Add this mixture to the rice and chicken. Stir well.
  • Add spices, evaporated milk, water, butter, and chicken bullion to the stock pot.
  • Bring to a boil. Reduce heat and simmer for 35 minutes.
  • Finish y adding sherry cooking wine.
  • Enjoy!

The boyfriend loves creamy chicken-rice soups, and this is my effort to that end. I like the addition of sherry and a dash of curry powder and it's a great way to use up leftover chicken (and presumably turkey). This soup will thicken up overnight; it can be thinned with more chicken stock without losing flavor; adjust salt and pepper to taste. Almonds are optional but add an interesting crunch; this soup is also "crockpot-able" if you prefer.

4 tablespoons butter
1/2 onion, finely chopped
1/2 cup celery, chopped
1/2 cup carrot, sliced
1/2 lb fresh mushrooms, sliced

4 cups chicken stock
1 cup cooked wild rice
3/4 lb boneless skinless chicken breast, cooked and shredded
1/2 teaspoon salt
1/2 teaspoon curry powder

2 tablespoons sherry wine (not cooking sherry)

Steps:

  • Saute onion, celery and carrots in a large sauce pan for 5 minutes.
  • Add mushrooms and saute another 5 minutes.
  • Add flour and stir well.
  • Gradually pour in chicken stock, stirring constantly (use a whisk if necessary to blend).
  • Bring just to boil, reduce heat and bring to simmer.
  • Add wild rice, chicken, salt, curry powder, parsley, black pepper, almonds (if using) and sherry.
  • Allow to heat through, then pour in half-and-half.
  • Simmer soup for 1 to 2 hours- do not boil.

1 (6 ounce) container uncooked wild rice
3 tablespoons butter
1/3 cup all-purpose flour
1 cup milk
2 1/2 cups chicken broth

1/2 cup finely chopped country ham or 1/2 cup bacon
2 tablespoons olive oil, divided
1 cup chopped yellow onion
1 large carrot, finely chopped
8 ounces assorted fresh mushrooms, chopped
3 garlic cloves, finely chopped
2 tablespoons dry sherry or 2 tablespoons white wine
4 boneless skinless chicken breasts (about 1 1/4 pounds)

  • Bring 1/2 teaspoons kosher salt and 1 quart water to a boil in a 3-qt. saucepan over high heat. Stir in rice, and return to a boil. Reduce heat to medium; cover and cook 30 minutes.
  • Meanwhile, melt butter in a heavy saucepan over low heat; whisk in flour until smooth. Cook, whisking constantly, 1 minute. Gradually whisk in milk and next 2 ingredients. Cook, stirring occasionally, about 6 minutes or until onions are tender. Stir in garlic, and cook 1 minute. Add sherry, and cook, stirring constantly, 1 minute or until sherry is evaporated. Remove mixture from skillet.
  • Preheat oven to 375°. Sprinkle chicken with remaining 1/2 teaspoons each salt and pepper. Add remaining 1 tablespoons oil to skillet. Cook chicken in hot oil over medium-high heat 4 minutes on each side or until brown. Remove skillet from heat; transfer chicken to a plate.
  • Drain rice. Stir together rice, ham mixture, and sauce in skillet. Place chicken on top of rice mixture.
  • Bake at 375° for 30 minutes or until mixture is bubbly and chicken is done. Let stand 10 minutes before serving.
