Taco night is the best (and easiest) night with these sheet pan roasted vegetable and chickpea tacos! Ready in 30 minutes, healthy, and delicious.

1 can chickpeas
3 cups cauliflower florets
1 red bell pepper, sliced (any color pepper works)
1 white onion, peeled and sliced
1 tbsp olive oil
Juice of half a lime
1/2 tsp cumin
1/4 tsp smoked paprika
1/2 tsp chili powder
1/4 tsp salt
1/4 tsp pepper
1-2 avocados, peeled and sliced
1 batch chimichurri sauce
8 corn tortillas

Steps:

  • Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper or silicone baking mat.
  • Drain and rinse the chickpeas. Use a clean tea towel to rub them to dry them off. Discard any of the skins that come off when you are drying them.
  • Toss the chickpeas, cauliflower, bell pepper, and onion in the olive oil, spices, salt, and pepper.
  • Spread everything out evenly on the baking sheet and roast for 20-25 minutes, until chickpeas are crispy and vegetables are fork tender and beginning to brown.
  • While veggies are in the oven, prepare chimichurri sauce and slice the avocado.
  • Once ready to serve, heat up tortillas directly on the burner of a gas range. Heat each side for about 1 minute, flipping with tongs when air bubbles appear.
  • Add a scoop of roasted veggies/chickpeas to each taco and top with a few avocado slices and big drizzle of chimichurri. Serve with extra lime slices, if desired!

8 zucchini, peeled and chopped
1 eggplant, peeled and diced
8 carrots, diced
16 cherry tomatoes
2 red onions, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
½ cup olive oil
1 teaspoon dried rosemary
1 teaspoon dried thyme
2 bay leaves, crushed
1 teaspoon dried oregano
2 cloves garlic, minced
2 tablespoons fresh lemon juice
1 teaspoon grated lemon zest
salt and pepper to taste

Steps:

  • In a large bowl mix the zucchini, eggplant, carrots, tomatoes, onions and peppers with the oil, rosemary, thyme, bay leaves, oregano, garlic, lemon juice, lemon zest, salt and pepper. Cover and chill for at least 2 hours, and preferably overnight.
  • Preheat oven to 400 degrees F (200 degrees C).
  • On a large roasting pan, roast the vegetables, uncovered, for 20 minutes, or until the tomatoes have split and the edges of some of the vegetables are starting to crisp. Remove from the oven and stir before returning to the oven for another 20 minutes. At this time reduce heat to 200 degrees F (95 degrees C) and continue cooking until vegetables are tender, turning every 20 minutes.

2 (15 ounce) cans chickpeas, rinsed and drained
½ butternut squash - peeled, seeded, and cut into 1-inch pieces
1 onion, diced
1 sweet potato, peeled and cut into 1-inch cubes
2 large carrots, cut into 1 inch pieces
3 medium russet potatoes, cut into 1-inch pieces
3 tablespoons vegetable oil
1 teaspoon salt
½ teaspoon ground black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground fennel seeds
1 teaspoon dried rubbed sage
2 green onions, chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a large sheet pan.
  • Place chickpeas, butternut squash, onion, sweet potato, carrots, and russet potatoes on the prepared sheet pan. Drizzle with vegetable oil and toss to coat.
  • Combine salt, black pepper, onion powder, garlic powder, ground fennel seeds, and rubbed sage in a bowl. Sprinkle over vegetables on the sheet pan and toss to coat.
  • Bake in the preheated oven for 25 minutes. Stir and bake until vegetables are soft and lightly browned and chickpeas are slightly crisp, 20 to 25 minutes more. Season with additional salt and black pepper to taste, and top with chopped green onion before serving.

Serve these easy vegetarian tacos with avocado, sliced red cabbage, fresh cilantro, and your choice between two creamy, delicious sauces. The ultimate meatless dinner made on one pan!

For the spices:
1 ½ teaspoons cumin
1 ½ teaspoons coriander
1 ½ teaspoons turmeric
¾ teaspoon garlic powder
½ teaspoon dried oregano
Optional: ¼ teaspoon cayenne
½ teaspoon salt
Freshly ground black pepper
For the veggies:
1 head cauliflower, cut into florets (about 3-4 cups cauliflower florets)
1 medium sweet potato, diced into ½ inch cubes
1 red bell pepper, cut into chunks
1 red onion, cut into chunks
Optional: 1 cup frozen or fresh corn
2 tablespoons olive or avocado oil
½ medium lime, juiced
For the black beans:
1 (15 ounce) can black beans, rinsed and drained
For serving:
8 tortillas of choice, charred for serving (I love soft corn tortillas!)
1 avocado, sliced or diced
Sliced red cabbage, for crunch
Jalapeno cashew cream sauce (DF, V)
OR Cilantro yogurt sauce
Fresh chopped cilantro

Steps:

  • First, make whatever sauce you are choosing to go with this recipe to save you time and so you are ready when it's time to eat. More in my note section below. The recipes are linked in the ingredients and can be found in the post itself and in the note section too!
  • Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper. Depending on the size of your sheet pan, you may need to use two pans in order to fit all of the veggies.
  • In a small bowl, mix together all of the ingredients for the spices so they are well combined: cumin, coriander, turmeric, garlic powder, oregano, cayenne, salt and pepper.
  • Add the cauliflower florets, diced sweet potato, red bell pepper, red onion, and corn (if using) to the prepared pan. Drizzle with avocado oil and lime juice. Sprinkle spices all over the veggies. Use a tong or clean hands to combine all the veggies so they are well coated with the spices and oil. I find that using hands is much easier!
  • Roast the veggies for 30-40 minutes, stirring halfway through. You'll know they are done when sweet potatoes are fork tender. During the last 5-10 minutes of baking, remove the pan from the oven and add the rinsed and drained black beans right to the sheet pan with the veggies. This is simply to warm the beans in the oven without needing to use another pot or bowl!
  • Serve on charred tortillas with my favorite jalapeno cashew cream sauce, a little red cabbage for crunch, avocado slices and cilantro. Enjoy! Serves 4, 2 tacos each.

These winter vegetables sweeten with roasting and contrast beautifully with the chipotle-spiked cooked tomato salsa. It's another easy do-ahead dish that can be reheated when the crowds are hungry.

Number Of Ingredients 17

1 pound butternut squash, peeled and cut in 3/4-inch dice
2 medium turnips (about 10 ounces), peeled and cut in 3/4-inch dice
1 medium fennel bulb, cored and cut in 3/4-inch dice
2 tablespoons plus 1 teaspoon extra virgin olive oil
Salt and freshly ground pepper to taste
1 red onion, cut in 3/4-inch dice
1 can chickpeas, drained and rinsed (optional)
12 corn tortillas
2 ounces queso cotija, queso fresco or feta
1 small onion, cut in half, or .5 medium onion
1 14-ounce can tomatoes, with juice
1 or 2 serrano chilies or jalapeños (more to taste), seeded for a milder salsa, roughly chopped
1 garlic clove, roughly chopped
1 chipotle chili in adobo, stemmed
1 tablespoon canola oil
Salt to taste
Water as needed

Steps:

  • Preheat oven to 400 degrees. Cover a large sheet pan with foil, and oil the foil. Place all of the vegetables except the onions in a large bowl, season with salt and pepper and toss with the olive oil until all of the vegetables are coated. Spread in an even layer on the prepared pan. Place in the top third of the oven and bake 20 minutes, stirring halfway through. Meanwhile, rinse the onion, drain on paper towels and toss with a teaspoon of olive oil.
  • Add the onions to the vegetables and toss together. Turn the heat down to 375, move the baking pan to the middle rack and continue to bake until the vegetables are lightly browned on the edges and tender all the way through when pierced with a knife, about 10 to 15 minutes. Transfer to a bowl and add the chickpeas if using.
  • Make the salsa while the vegetables are roasting. Preheat the broiler. Line a baking sheet with foil and place the onion on it. Broil 5 to 10 minutes, turning once, until charred. Remove from the heat and when cool enough to handle, cut in large dice and place in a blender with the tomatoes, serranos, garlic and chipotle. Purée until smooth.
  • Heat the canola oil in a heavy saucepan or skillet over medium-high heat until a drop of the puree sizzles immediately on contact. Add the purée, season to taste with salt and cook, stirring often, until the sauce darkens and thickens, leaving a canal when you run the cooking spoon across the bottom of the pan, about 15 minutes. If you want a thinner sauce, thin out with water as needed. Remove from heat. Taste and adjust salt.
  • Warm the tortillas. Stir some of the salsa (to taste) into the vegetables. Spoon onto the tortillas, sprinkle on the cheese and serve, with more salsa as desired.

Roasted chickpeas aren't just a fun snack, they make an excellent plant-based filling for tacos. The trick to getting them super crispy is to pat the chickpeas completely dry before seasoning. For the finishing touch, channel the flavors of falafel and drizzle the tacos with a spicy tahini sauce!

Two 15-ounce cans chickpeas, rinsed, drained and patted dry
1 tablespoon olive oil or neutral oil
2 teaspoons ground cumin
1 teaspoon garlic salt, or 1/4 teaspoon garlic powder mixed with 3/4 teaspoon kosher salt
Kosher salt and freshly ground black pepper
1 small red or yellow onion, thinly sliced
3 radishes, thinly sliced
1/3 cup red wine vinegar, white wine vinegar or apple cider vinegar
1 tablespoon sugar
1/4 cup tahini
Juice of 1 lime or lemon
1 teaspoon hot sauce
1 orange
1 avocado, pitted and peeled
Six 6-inch flour or corn tortillas
1/3 cup corn nuts or corn chips or tortilla chips, crushed

Steps:

  • Preheat the oven to 450 degrees F.
  • Toss the chickpeas with the oil, cumin, garlic salt and a few grinds of pepper in a medium bowl. Spread evenly on a rimmed baking sheet and roast until golden and crispy in spots, about 20 minutes.
  • While the chickpeas roast, combine the onion, radishes, vinegar, sugar, 1/2 teaspoon kosher salt and a few grinds of pepper in another medium bowl. Make sure the vegetables are completely submerged and set aside to slightly pickle, about 20 minutes.
  • Meanwhile, whisk together the tahini, lime or lemon juice, hot sauce, 1/4 cup water and 1/4 teaspoon kosher salt in a third medium bowl until smooth.
  • Using a sharp knife (chef's or paring), cut both ends off the orange. Stand the orange on one end and cut away the peel and white pith, following the contour of the fruit. Working over a small bowl, carefully cut in between the membranes to remove the orange segments, letting them drop into the bowl; discard any seeds. Cut the segments in half crosswise. Squeeze the juice from the membranes into a fourth medium bowl, then add the avocado and 1/4 teaspoon kosher salt and mash together with a potato masher.
  • Carefully toast 1 of the tortillas directly over a medium-high flame on a gas burner, watching closely, until dark char marks appear, about 1 minute. (If you have an electric burner, toast the tortillas in a dry cast-iron skillet.) Use heatproof tongs to flip the tortilla and repeat on the other side. Transfer to a large serving platter and repeat with the remaining tortillas.
  • Spread some of the mashed avocado on each of the tortillas (this will act as a ''glue'' for the chickpeas). Dividing evenly, top with the roasted chickpeas, pickled onions and radishes, oranges and corn nuts (or crushed chips), then drizzle with the tahini sauce.
