Get out your beach chairs and pass out the flower leis 'cause this Hawaiian Poke Cake is going to transport you to a tropical paradise. In this easy cake-mix dessert, we've included all the flavors you'd expect in a Hawaiian recipe, including coconut, pineapple, and macadamia nuts.

1 (15.25-ounce) package French vanilla cake mix
1 (20-ounce) can crushed pineapple, drained and juice reserved
2 (4-serving-size) packages instant coconut cream pudding mix
4 cups milk
1 (8-ounce) container frozen whipped topping, thawed
1/2 cup coconut, toasted
1/2 cup macadamia nuts, coarsely chopped

Steps:

  • Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  • In a large bowl, prepared cake mix according to package directions, replacing the water with reserved pineapple juice, and adding enough water for total amount required. Pour into baking dish.
  • Bake 25 to 30 minutes, or until toothpick inserted in center comes out dry. Let cool 10 minutes. Using the handle of a wooden spoon, poke large holes over entire cake.
  • In a large bowl, whisk pudding mix and milk just until pudding begins to thicken but is still pourable. Add pineapple and mix well. Pour mixture over cake and into holes, using handle of spoon to help fill holes, if necessary. Evenly spread whipping topping over pudding. Sprinkle evenly with coconut and nuts.
  • Cover and refrigerate 4 hours, or until ready to serve.

Nonstick baking spray, for the baking sheet
4 large eggs, cold (see Cook's Note)
1 cup sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1 stick (1/2 cup) unsalted butter, melted and cooled to room temperature
1 tablespoon pure vanilla extract
1 1/2 cups all-purpose flour, sifted (see Cook's Note)

Steps:

  • Position an oven rack in the center of the oven and preheat to 375 degrees F. Lightly coat an 18-by-13-inch sheet pan with nonstick baking spray. Line the bottom with parchment. Set aside.
  • Beat the eggs, sugar, baking powder and salt in a stand mixer fitted with a whisk attachment on high speed until the mixture is pale and very thick (enough to hold a wake from the whisk), about 10 minutes (see Cook's Note). Reduce the speed to medium-high and drizzle in the butter and vanilla until just combined, about 10 seconds. Reduce the speed to low and add the sifted flour all at once. Beat until just combined, about 5 seconds. Gently fold the batter once or twice using a rubber spatula, then scrape it into the prepared sheet pan. Spread it evenly using the spatula, using broad, gentle strokes to keep the batter airy.
  • Bake, rotating the pan halfway through, until the top is lightly golden, 15 to 18 minutes. Cool in the sheet pan for 10 minutes, then invert onto a wire rack and cool completely.

1/3 cup oil
3 eggs
1 1/4 cups water

2 cups non-dairy whipped topping
grated coconut (to garnish)
chopped nuts (to garnish)

Steps:

  • Prepare cake according to package directions using oil, eggs and water.
  • Bake in greased and floured 9X13 pan.
  • When cool, punch holes in cake with handle of wooden spoon.
  • Pour pineapple over top of cake.
  • Combine cream cheese, pudding and milk; beat until smooth and thick enough to spread.
  • Spread over top of cake.
  • Top with whipped topping, coconut and nuts.
  • Refrigerate until ready to serve.

1 cup water
⅓ cup vegetable oil
3 eggs
14 ounces sweetened condensed milk
15 ounces cream of coconut
20 ounces crushed pineapple (juice reserved)
2 cups heavy whipping cream
½ cup powdered sugar
1 teaspoon coconut extract
1 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, combine cake mix, water, vegetable oil and eggs until well combined.
  • Spray a half sheet pan (13"x18"x1") with nonstick cooking spray and spread batter in pan in an even layer.
  • Bake for 15-20 minutes, or until the center of the cake is set.
  • Remove from oven and let cool.
  • Use a fork and poke holes over the entire cake.
  • In a mixing bowl, whisk together sweetened condensed milk, cream of coconut and juice from can of crushed pineapple.
  • Pour over cake, filling all holes with mixture.
  • Spread crushed pineapple over the top of the cake.
  • In a mixing bowl or stand mixer, combine heavy whipping cream, powdered sugar and coconut extract until light and fluffy. Spread in an even layer on top of cake.
  • Sprinkle coconut on top and refrigerate cake until serving.
