CHICKEN PARMESAN HOAGIE SANDWICH

I made these for dinner last night and my husband LOVED them! In fact, my 22-month old daughter loved them, too! You can actually make a bunch of the chicken breasts ahead of time and freeze them. When ready to eat, just add the tomato sauce and mozzarella cheese and you're golden! Quick, easy, yummy chicken parm sandwiches. Perfect for Superbowl Sunday or any other time you need a great hoagy sandwich! We really liked these. Hope you do, too. :D Oh yeah, the chicken breasts I use are sliced to make them thinner and easier to cook evenly. If you have thicker breasts, you'll need to cook these longer in the oven. ENJOY!

4 boneless skinless chicken breast halves
1 egg, beaten
1/2 cup breadcrumbs
1/4 cup grated parmesan cheese
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
1 cup tomato sauce (I use Authentic Italian Tomato Sauce)
3/4 cup shredded mozzarella cheese
4 hoagie rolls
canned jalapeno (optional)
olive oil (for frying)

Steps:

  • Add the breadcrumbs, Parmesan cheese, oregano, paprika, garlic powder, salt and pepper to a Ziplock bag and shake to mix well.
  • Pour into a low flat bowl or onto some waxed paper.
  • Drop each chicken breast into the beaten egg and dredge in the breadcrumb, Parmesan cheese and herb mixture.
  • Heat a few tablespoons of olive oil over medium high heat in a pan.
  • Add the breaded chicken breasts, two at a time so as not to over-crowd the pan.
  • Cook on medium high heat for about 3 minutes per side.
  • Remove breasts to a paper towel-lined plate and fry the other two chicken breasts.
  • Place the cooked chicken breasts on a baking dish and cover each breast with 1/4 cup tomato sauce.
  • Sprinkle shredded mozzarella cheese over each one.
  • Place in a 400-degree oven for 8 to 10 minutes or long enough to melt the cheese and get the tomato sauce nice and hot.
  • I add the hoagie rolls to the oven when there is about 5 minutes left to get them nice and toasty and crusty.
  • Slice the hoagie rolls, add the chicken Parmesan breast and top with sliced jalapenos, if desired.
  • YUM!

1 cup packed fresh basil leaves
5 cloves garlic
2 cups mayonnaise
2 tablespoons lemon juice
Kosher salt
1/4 cup red wine vinegar
1/4 teaspoon red pepper flakes
2 tablespoons honey
1/4 cup olive oil
Kosher salt and freshly ground black pepper
4 heads romaine, finely shredded
2 red bell peppers, very thinly sliced
2 yellow bell peppers, very thinly sliced
Kosher salt and freshly ground black pepper
One 6-foot hoagie roll
4 pounds spicy capicola, sliced
4 pounds mortadella, sliced
4 pounds genoa salami, sliced
1 pound provolone, sliced
12 Roma tomatoes, sliced
2 cup sliced green olives
2 cups sliced pepperoncini
2 cups sliced roasted peppers

Steps:

  • For the basil mayo: Puree the basil, garlic, mayonnaise, lemon juice and salt to taste in a blender until smooth. Transfer to a bowl.
  • For the red wine dressing: In a Mason jar with a lid, combine the red wine vinegar, red pepper flakes, honey, olive oil, and salt and pepper to taste. Shake vigorously until well combined.
  • For the hoagie: Mix together the romaine, bell peppers and some vinaigrette and season with salt and pepper.
  • Cut the roll horizontally, then remove the insides of the top of the roll to create a well. Spread basil mayo on each side.
  • Place the capicola, mortadella, and salami along the bottom, then top with the provolone. Add the tomatoes, and then top with the olives, pepperoncini and roasted peppers.
  • Fill the well in the top of the roll with the dressed romaine and bell peppers and form a sandwich. Cut into small slices and serve immediately.

1 cup mayonnaise
3 tablespoons Calabrian chili paste
1 teaspoon lemon zest
1/4 teaspoon kosher salt
1 tablespoon olive oil
2 pounds mixed Italian sausage, casing removed
3 cups baby arugula
1 cup fresh basil leaves, torn
1 1/2 teaspoons apple cider vinegar
1/4 teaspoon kosher salt
2 large (11 inch) hoagie rolls
1 1/2 cups chopped giardiniera

Steps:

  • For the spread: In a small bowl, whisk together the mayonnaise, Calabrian chili paste, lemon zest and salt. Set aside.
  • For the sandwich: Heat a large skillet over medium-high heat. Add the oil and sausage and cook, breaking the sausage into large pieces with a wooden spoon, until golden brown, cooked through and crispy in parts, about 15 minutes. Drain off excess fat if necessary.
  • Meanwhile, in a medium bowl, combine the arugula, basil, cider vinegar and salt. Toss well to coat.
  • Split the rolls in half horizontally, leaving one side intact. Open the rolls like a book and remove and discard some of the inside of the bread. Spread 1/3 cup of the spicy mayonnaise evenly on each roll. Fill the bottom half of each roll with the crispy sausage mixture. Fill the top half of each roll with 3/4 cup of the giardiniera. Divide the dressed arugula between the sandwiches and close them, pressing gently on the top. Cut each sandwich in half and serve.

1 sliced large onion
1 -2 sliced green bell pepper
1 (8 ounce) can sliced mushrooms
2 tablespoons kraft zesty Italian dressing
2 tablespoons vegetable oil
4 -6 inches hoagie rolls
8 ounces sliced provolone cheese
1 tomatoes
2 cups shredded lettuce
mayonnaise, if desired

Steps:

  • Heat oil in skillet, add onions, peppers & mushrooms. Continue to stir occasionally. Until they are browned and onions start to carmelize.
  • While they are cooking, place chicken in a nonstick skillet and stir in italian dressing, cook on medium/high heat. Continue to stir as needed, until chicken is cooked throughly.
  • Pre-heat oven to 400°F.
  • Place hoagie buns open on a cookie sheet. Top each bun with 1/4 of chicken and 2oz of provolone.
  • Bake in oven for about 5 minutes, just until cheese is melted.
  • Top each with pepper mixture, lettuce, tomato and mayo if desired.

4 boneless skinless chicken breasts
garlic powder
salt
pepper
blackening seasoning, recipe follows
red pepper
1 (16 ounce) package pepper bacon
1 (16 ounce) bottle peppercorn ranch dressing
monterey jack pepper cheese
diced tomato
diced onion
diced green pepper
6 -8 hoagie rolls
1 teaspoon ground basil
1 teaspoon ground thyme
1 teaspoon garlic
1 teaspoon white pepper
1 teaspoon black pepper
1 teaspoon salt (sea salt is better)
1 teaspoon onion powder
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon cumin

Steps:

  • Preheat the oven to 350 degrees.
  • Season the chicken breasts with salt, pepper, garlic powder, chili powder, red pepper, and the blackening seasoning.
  • Add 1-2 tablespoons of olive oil to a pan and cook the chicken breasts until cooked through.
  • Shred the chicken.
  • Cook and crumble the bacon.
  • Split the hoagie buns in half. Top buns with peppercorn ranch dressing, chicken, crumbled bacon, pepper-jack cheese, diced tomatoes, diced onions, and diced green peppers.
  • Bake at 350 degrees for 5-10 minutes. Then broil the tops just a few minutes to brown the cheese.

3 lbs boneless skinless chicken thighs
1 1/2 cups chopped red bell peppers or 1 1/2 cups green bell peppers
1 large onion, chopped
1/2 cup chicken broth
1/4 cup ketchup
hot sauce (to taste)
salt and pepper (to taste)
8 hoagie rolls

Steps:

  • Generously rub the jerk seasoning over the chicken thighs.
  • Put the bell pepper and onion in the bottom of a 4-5 quart slow cooker.
  • Place the chicken thighs over the vegetables.
  • In a small bowl, mix the broth and ketchup together; pour over the chicken.
  • Cover and cook on LOW for 6-8 hours.
  • Take chicken out of slow cooker; shred using two forks.
  • Replace chicken into slow cooker and mix well.
  • Season to taste with hot sauce and salt/pepper.
  • With a slotted spoon, spoon chicken mixture into hoagie buns.
  • Use extra sauce for dipping.
