1 cup sour cream
1 cup green salsa (such as Frontera® Tomatillo)
2 teaspoons olive oil
1 small onion, chopped
2 cloves garlic, minced
3 cups shredded cooked chicken breasts
1 ½ cups shredded Mexican cheese blend, divided
1 (4 ounce) can chopped green chile peppers
8 (8 inch) flour tortillas

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Mix sour cream and salsa together in a bowl.
  • Heat oil in a skillet over medium-high heat. Saute onion and garlic in the hot oil until soft, 5 to 7 minutes. Stir in cooked chicken, 1 cup of the sour cream mixture, 1/2 of the Mexican cheese, and chile peppers.
  • Spoon about 1/3 cup of the mixture down the center of each tortilla. Roll tortillas and place, seam sides-down, into the prepared dish. Top with remaining sour cream mixture and cheese. Cover with foil.
  • Bake in the preheated oven until heated through and bubbly, 30 to 40 minutes.

Flavorful shredded chicken enchiladas baked in a rich home-made enchilada sauce topped with crumbled feta and grated cheddar cheese.

1 red onion (finely chopped)
3 garlic cloves (finely chopped)
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
2 teaspoons dried oregano
2 x 400g tins/cans chopped tomatoes
1 bay leaf
1/2 cup red wine
2 teaspoons sugar (optional)
salt & pepper to taste
1 red onion (finely chopped)
3-4 cloves garlic (crushed)
2 cups sliced mushrooms
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
3 cups cooked (shredded chicken)
3 to matoes (chopped)
1-2 tablespoons lemon juice (to taste)
salt & pepper to taste
8 flour tortillas
1 cup grated cheddar cheese
1/2 cup crumbled feta cheese
guacamole
sour cream

Steps:

  • To make the sauce, saute the onion until soft and translucent then add the garlic and spices and fry for another 30 seconds before adding the chopped tomatoes. Add the bay leaf, red wine and sugar (if using) and reduce the heat. Allow to simmer for 10-15 minutes until the sauce has reduced slightly. Season to taste then remove the bay leaf and blend until smooth.
  • Pre-heat the oven to 220°c.
  • To make the filling, saute the onion in a large frying pan until soft and translucent then add the garlic and mushrooms and fry for another 5 minutes.
  • Add the spices and fry until the pan dries out then add the chicken the tomatoes. Lower the heat and allow to saute for another 5 minutes until the tomatoes are broken up. Season to taste with lemon, salt and pepper and remove from the heat.
  • To make the enchiladas, pour half the sauce into an oven-proof dish.
  • Place a few spoonfuls of the mixture onto a tortilla then roll up and place seam-side down into the dish with the enchilada sauce.
  • Repeat until you have 8 enchiladas then top with the remaining sauce and cheese.
  • Place in the oven and allow to bake for 10 minutes until the sauce is bubbling and the cheese has melted.
  • Remove from the oven and serve with guacamole and a dollop of sour cream.

Steps:

  • In a saucepan, melt butter over medium heat. Saute onion and garlic until onion is tender. Blend in flour. Stir in broth, milk, chilies, salt, and cumin.
  • Cook and stir until thickened and bubbly. Reduce heat; simmer 5 minute stirring occasionally. Set aside.
  • Grease a 13 inches baking dish.
  • Spoon a little in the center of each tortilla; spread to edges. Place about 2 T meat down the center of each tortilla. Combine cheeses; sprinkle 1-2 T on top of meat.
  • Roll up tortillas and place in baking dish seam-side down. Pour remaining sauce over. Sprinkle with green onions and remaining cheese.
  • Bake, uncovered, at 350 degrees for 20-30 minutes or until hot and bubbly. Serve with sour cream and salsa.

Steps:

  • Place an oven rack in the lower third of the oven. Preheat the broiler.

2 chicken breasts (bone in skin on)
1 chicken bouillon cube
4 roma tomatoes (chopped)
1/4 white onion (chopped)
1 jalapeno (minced, or a serrano if you like it spicy)
2 garlic cloves (minced)
1 tablespoon oil

Steps:

  • Place the chicken breasts and bouillon cube in a sauce pan. Cover with water and bring to a boil. Simmer the chicken for 45 minutes to an hour until tender enough to shred.
  • Pull the meat out of the sauce pan and set aside to cool.
  • Heat the oil in a saute pan, add the onions, jalapenos, and garlic. Saute for 5 minutes on medium heat or until onions are soft and translucent.
  • Add in the tomatoes and cook until mushy about 10 minutes.
  • Shred the chicken and add it to the tomato mixture. Stir and continue to cook until the chicken is warm.
  • Salt and pepper to taste and stuff the chicken in corntortillas for enchilads.
  • Cook the enchiladas and serve.

4 tablespoons avocado oil, divided, or as needed
4 cups shredded cooked pork
1 medium onion, chopped
3 tablespoons frozen 100% orange juice concentrate
1 teaspoon ground cumin
1 teaspoon chili powder, or to taste
½ teaspoon garlic powder
¼ teaspoon cayenne pepper, or to taste
salt and ground black pepper to taste
2 cups salsa verde
1 cup sour cream
10 (6 inch) corn tortillas
2 cups shredded Monterey Jack cheese, divided

Steps:

  • Heat 2 tablespoons oil in a nonstick skillet over medium heat. Add shredded pork, chopped onion, orange juice concentrate, cumin, chili powder, garlic powder, cayenne pepper, salt, and pepper. Bring to a boil, cover, reduce heat to low, and simmer until onion is tender, about 20 minutes.
  • Remove lid, increase heat to medium, and continue to cook until the liquid is mostly evaporated, about 10 minutes. Transfer everything to a plate and allow to cool slightly. Wipe the skillet clean with paper towels.
  • Meanwhile, preheat the oven to 425 degrees F (220 degrees C). Grease a 9x13-inch baking dish with cooking spray.
  • Combine salsa verde and sour cream in a mixing bowl, stirring well. Spread about 1 cup of salsa verde mixture over the bottom of the prepared baking dish, reserving the rest.
  • Add remaining cooking oil to the cleaned skillet and heat over medium-high heat.
  • Gently warm each tortilla in the oil, about 2 minutes per side, making the tortillas flexible. Add more oil, if needed.
  • Place a tortilla on a work surface and add 3 tablespoons of pork mixture and 1 tablespoon shredded cheese. Roll the tortilla gently around the filling, and place seam side down in the prepared dish. Repeat with the remaining tortillas.
  • When all tortillas are rolled up and in the dish, pour the reserved salsa-sour cream mixture over the filled tortillas.
  • Bake uncovered in the preheated oven for 20 minutes.
  • Remove from the oven; sprinkle on remaining cheese and allow to melt while the enchiladas cool, about 5 minutes.
