Ingredients

3 cups strawberries
5 tablespoons sugar
12 scoops ice cream
8 ounces crushed pineapple
whipped cream

Steps:

Reserve 6 berries for top of parfaits.
Slice remaining berries and mix with sugar.
Let stand 10 minutes.
Spoon half the berries 6 parfait glasses.
Add 1 scoop ice-cream to each.
Add half the pineapple.
Repeat the layers.
Top with whipped cream and reserved berries.

This is a spin off from my Good For You parfait. It is also delicious, try them both :) If you like, this can be made into 2 smaller parfaits, just add another tablespoon of Grape Nuts to the list of ingredients and divide ingredients evenly between two parfait glasses.

1/2 cup crushed pineapple in juice, undrained
4 large strawberries or 8 medium strawberries, sliced and sweetened to taste with no calorie sweetener
1 (6 ounce) container sugar-free non-fat vanilla yogurt (I use the Wal-mart brand)
1 tablespoon Grape-nuts cereal

Steps:

Layer in a parfait glass pineapple then yogurt then strawberries.
Top with the Grape Nuts.

Combine the strawberries, blueberries, agave nectar and mint in a bowl and leave for 3 to 4 minutes.
Spoon half of the yogurt into a glass, top with half of the fruit and granola, then repeat with the remaining yogurt, fruit, and granola.
Pour any accumulated juice from the fruit over the top.
