Tahini is super easy to make at home. Gently toast the sesame seeds, add them to a high-powered blender with a little olive oil and you're done. Watch the video above to see how easy it is to make!

4 cups hulled sesame seeds
3 tbsp olive oil

Steps:

  • Gently toast the sesame seeds (stirring constantly) on medium low for 5 minutes, or until slightly golden. Then, let them cool to room temperature.
  • Once the sesame seeds have cooled, add them to your Vitamix. Blend on high for one minute, using the tamper to push the seeds into the blades, creating a tahini paste.
  • Add the olive oil and blend for another minute to create a creamy consistency.

This is possibly the most nutritious sweet treat in the world. A delicious rich melt in the mouth halva. Great for babies and children. Sesame seeds are the highest source of calcium (975gms per 100gms -9 times that of whole milk-), high in iron (14.55grams -grain fed beef mince has only 1.99grams-) an almost equal amount of protein to beef and numerous other nutrients. This has become a staple in our house and the combinations are endless. I like to mix in chopped pistachios. You can use other things such as prunes, date paste, dried cherries, apricots, coconut, cocoa powder or other nuts and flavourings. you can add more dates if you prefer it sweeter. You could also try using tahini to make it easier.

250 g of whole raw sesame seeds
50 g dates, chopped finely
1 teaspoon of natural vanilla extract

Steps:

  • process the sesame seeds for until a paste consistency, scrapping down the sides as required. This may take several minutes. If your machine gets warm (you don't want the paste getting too warm) just take a break and let it cool a bit. Now you have your own fresh tahini.
  • Add the finely chopped dates (can use date paste here, I make my own date paste when I'm motivated so I've got it there for later) and vanilla and process scrapping down the sides until the dates are incorporated and the halva is a thick grainy paste. At this stage you take it out and mix by hand any additions you would like.
  • Press it into a suitable container, preferably a shallow one and put it in the fridge, it's now ready to eat as is but it will firm up nicely overnight. Once it's set I like to tip it onto a plate and cut chunks off like cheese. Will keep in the fridge for a while.

  • Pour all of the ingredients into a large bowl and stir well with a wooden spoon. Taste and adjust flavoring accordingly.
  • Cover and refrigerate for at least 4 hours or overnight.
  • Assemble your ice cream maker and pour the chilled mixture into the frozen bowl and process for 25 minutes.
  • Put the ice cream into covered container and place in the freezer for at least 2 hours to set.

  • Greens. Greens, particularly cooked collard greens, turnip greens, and kale are a great source of calcium. A one-cup serving of cooked kale provides almost 10 percent of the RDA of calcium.
  • Hemp Milk. Hemp milk is a great alternative to dairy milk, particularly for those who may also be allergic to nuts or soy. A one cup serving of fortified hemp milk provides 428 mg of calcium, the same as dairy milk.
  • Blackstrap Molasses. Blackstrap molasses is a highly nutritious sweetener that is created as a byproduct of refining raw sugar cane into fine table sugar.
  • Sesame Seeds/Tahini. A quarter-cup of sesame seeds contains 351 mg, or 35.1 percent of the RDA of calcium. They are also a fantastic source of manganese and copper, as well as several other vitamins and minerals.
  • Almond Butter. Almond butter is great on just about anything. It makes oatmeal more filling, it is a healthy snack when you spread it over banana slices or celery stalks, and you can use it in desserts and savory sauces.
  • Beans. Soybeans, white beans, navy beans, and pinto beans, in particular, are all good sources of calcium. White beans, which have 191 mg of calcium per cup, lend themselves really well to soups and veggie burgers.
