The BEST Fried Rice. This fried rice is loaded with veggies and only takes 20 minutes to make!

2 tablespoons butter (divided)
3 eggs (whisked)
2 medium carrots (small dice)
1 small onion (small dice)
3 cloves garlic (minced)
1 cup frozen peas (thawed)
4 cups cooked and chilled rice ((I either use white or brown rice))
3 tablespoons low sodium soy sauce
2 tablespoons oyster sauce
1 teaspoon sesame oil
sliced green onions for garnish (if desired)

Steps:

  • Heat 1 tablespoon of butter into a large skillet.
  • Add the eggs and scramble until fully cooked. Remove them from the pan and set aside.
  • Add the remaining tablespoon of butter into the pan. Add carrots and onion to the pan and cook until tender, 3-4 minutes. Stir in garlic and cook for an additional minute.
  • Add in the cold rice and peas and sauté for 3-4 minutes. The rice should brown up a bit.
  • Add the eggs back to the pan and stir in soy sauce, oyster sauce and sesame oil. Cook for 1-2 minutes to heat through.
  • Serve immediately with green onions for garnish, if desired.

8 dried shiitake mushrooms
3 tablespoons peanut oil
2 large eggs, lightly beaten with a pinch of kosher salt
4 scallions (white and green), thinly sliced
1/4 cup minced carrot
1 large clove garlic, minced
Pinch red chile flakes
1 teaspoon minced peeled fresh ginger
2 tablespoons soy sauce
1 teaspoon toasted sesame oil
3 cups cooked long-grain rice
1 cup cooked meat cut in 1/2-inch cubes, such as pork, ham, beef, or chicken
1/2 cup frozen peas, defrosted in a strainer at room temperature

Steps:

  • Put the mushrooms in a small bowl and cover with boiling water and soak until re-hydrated, about 20 minutes. Drain, squeeze dry, and cut mushrooms in quarters. Set aside.
  • Heat 1 tablespoon of the peanut oil in a well-seasoned wok or large non-stick skillet over medium-high heat. Swirl to coat the pan. Pour in the eggs, swirl the pan so the egg forms a large thin pancake. (Lift the edge of the egg to allow any uncooked egg to run to the center.) As soon as the egg has set, turn it out of the pan onto a cutting board. Cool, cut into 1 inch pieces.
  • Wipe out the pan with a paper towel and heat the remaining peanut oil over high heat. Add the scallions and carrots and stir-fry for 1 1/2 minutes. Add the mushrooms, garlic, chile, and ginger, stir-fry for 1 minute more. Add the soy sauce, sesame oil and rice and stir-fry for 2 to 3 minutes. Add the meat, peas, and reserved egg, cook, stirring until heated through, about 2 to 3 minutes. Serve immediately.

Yes, I have been in the kitchen making fried rice again! Fried rice is one of my favorites. The sesame seeds in this version offer a delicious nutty taste that makes this perfect to accompany Chinese stir-fries, Japanese teppanyaki, and Korean bulgoki. The use of brown rice should gain approval from those trying to cut carbs. Of course, they want it to be delicious, and I assure you that this is every bit as tasty as my fried rice (Recipe #38748).

8 ounces diced cooked pork loin (or other meat, shrimp or tofu, etc.)
1 tablespoon dark sesame oil
2 eggs, lightly beaten
1 cup chopped onion
1/3 cup chopped carrot
1 cup bean sprouts
3 scallions or 3 green onions, chopped
1/2 cup frozen peas, thawed
4 cups cooked short grain brown rice (or may use any rice you like)
2 tablespoons toasted sesame seeds
4 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup soy sauce (however much you like)
coconut oil or wok oil, as needed

Steps:

  • Use small cereal bowls to assemble ingredients.
  • Place chopped pork in a small bowl and toss with the sesame oil and set aside.
  • Whisk two eggs in a small bowl and set aside.
  • Place chopped onion and carrots in a small bowl together and set aside.
  • Place bean sprouts, peas, and scallions in a small bowl together and set aside.
  • Heat 2 tablespoons coconut oil in a wok until hot and cook egg, swivelling wok to keep the runny portion in motion until it sets, then flip the omelet and cook briefly on the other side. Remove to platter and chop into small pieces.
  • Add 2 more tablespoons wok oil to wok and add the contents of the bowl with onions and carrots. Cook until carrots soften, then add pork, and cook and stir until all are hot and sizzling. Remove to the platter with eggs.
  • Heat 4 tablespoons butter in the wok with 2 tablespoons coconut or wok oil. Add rice, and season with salt and pepper, adding sesame seeds at this time as well, cooking and stirring until rice is hot and sizzling.
  • Add ingredients from the platter along with soy sauce, and stir until well mixed.
  • Place on a large platter and serve hot.

2 cups cooked white rice
1 tablespoon vegetable oil
2 teaspoons toasted sesame oil
Kosher salt and freshly ground black pepper
1 teaspoon sriracha
1 teaspoon soy sauce
1/2 teaspoon sesame seeds, preferably toasted, plus more for topping
1 large egg, lightly beaten
1 cup frozen peas and carrots, thawed

Steps:

  • Combine the rice, vegetable oil, 1 teaspoon of the sesame oil and 1 tablespoon water in a bowl. Season with salt and pepper and toss to coat the rice. Transfer to a 7-inch round air fryer insert, metal cake pan or foil pan.
  • Put the pan in a 5.3-quart air fryer and cook at 350 degrees F, stirring halfway through, until the rice is lightly toasted and crunchy, about 12 minutes.
  • Meanwhile, stir together the sriracha, soy sauce, sesame seeds and remaining 1 teaspoon sesame oil in a small bowl.
  • Open the air fryer and pour the egg over the rice. Close and cook until the egg is cooked through, about 4 minutes. Open again, add the peas and carrots and stir into the rice to distribute and break up the egg. Close and cook 2 minutes more to heat the peas and carrots.
  • Spoon the fried rice into bowls, drizzle with some of the sauce and sprinkle with more sesame seeds.

4 cups very cold cooked brown rice

Steps:

  • Heat the oil in a very large nonstick skillet or wok over a high heat. Add the scallions, ginger and shrimp and cook stirring frequently until the shrimp turn pink, about 1 1/2 minutes. Add the cabbage and continue cooking until it begins to soften, but is still somewhat crisp, about 2 minutes more. Transfer the shrimp-cabbage mixture to a bowl.
  • Heat the sesame oil in the same skillet or wok over a medium-high heat. Add the rice and cook stirring frequently, until heated through, about 3 minutes. Add the shrimp-cabbage mixture back to the skillet, stir in the soy sauce and sesame seeds and serve.

oil , for frying
2 baby pak choi , halved
2 spring onions , cut into 3cm slices

50g raw king prawns

2 tsp chilli sauce (such as sriracha)

Steps:

  • Microwave the rice for 1 min. Heat a glug of oil in a frying pan over a high heat. Fry the pak choi and spring onions for 2 mins. Stir in the egg until scrambled, then add the rice and sesame seeds and cook for 2 mins or until piping hot. Set aside.
  • In another frying pan, heat a glug of oil and fry the prawns for 2 mins. Add the sauces and cook until sticky. Serve with the veg, rice and sesame seeds.

  • Make a Savory Sauce. Fried rice comes together quickly, so make sure you have all your ingredients prepped and measured before cooking. That includes the sauce that you’ll stir in at the end to season the fried rice (because it’s not traditional to season the fried rice with salt and pepper).
  • Choose Quick-Cooking, Delicate Vegetables. Yep, fried rice is great for using up whatever vegetables you have hanging around the refrigerator. But it’s important to be strategic and choose vegetables that cook at the same right, and that cook pretty quickly — otherwise you’ll be standing over the stove for hours.
  • Cook Veggies and Meat Over High Heat in Batches. It’s tempting to add all of the ingredients to the skillet at the same time, but resist the urge. Cooking the meat, veggies, eggs and rice separately takes just a few extra minutes and ensures non-soggy results.
  • Scramble the Eggs with Nothing Else in the Skillet. Add a bit of oil to the skillet (which should still be over high heat), add some beaten eggs (1 egg per every 1 cup of rice is a safe bet) and scramble them vigorously just about 10 seconds (really, that’s it!)
  • Add Day-Old Rice (Leftovers!) to the Skillet and Cook Until Crisp. Have you ever made fried rice that’s rather... mushy? Or wet? No good. Leftover rice is fantastic for fried rice because it’s drier than freshly made rice.
  • Add Everything Back to the Skillet with the Sauce. This is when everything comes together! Add the meat, vegetables, eggs and sauce back to the skillet and stir until the ingredients are evenly distributed.
