Steps:

  • Combine flour, salt, and pepper.
  • Combine egg with milk and sesame oil.
  • Combine breadcrumbs with sesame seeds.
  • Dredge fish in flour, then dip in egg, then in crumbs.
  • Cook the fish in melted butter.

This is a terrific and simple fish dish. I've made it for many years. This is best with a flaky fish such as cod or snapper but tilapia will work, too. A Jeff Smith/Frugal Gourmet recipe.

1 1/2 lbs white fish fillets, cut into nuggets
1 tablespoon light soy sauce
1 tablespoon sesame oil
1 cup flour, for dredging
2 egg whites, beaten
4 tablespoons white sesame seeds (not toasted... raw)
4 tablespoons black sesame seeds (not toasted... raw)
oil, for deep frying

Steps:

  • Marinate fish in the soy and sesame oil for 15 minutes.
  • Drain and dust the fish in flour.
  • Dip into the egg and then roll in the sesame seeds.
  • Deep fry the pieces in 360 degree oil for 4 or 5 minutes. No longer -- the sesame seeds scorch easily and will be bitter.
  • Make a simple dipping sauce with some soy sauce diluted with about a 50/50 ratio of water and some fresh grated ginger. Delicious!
  • You may need to cook this in two batches so that the temperature of the oil doesn't plummet. The oil needs to maintain a constant 360 temperature if possible.

Easy, quick fish. Not good for salmon or tuna. It is best with thin fillets like bream, whiting or catfish. Sometimes I add grated fresh ginger to the oil prior to adding the fish.

2 teaspoons oil
1 teaspoon sesame oil
2 teaspoons sesame seeds (toasted)
1 -2 teaspoon soy sauce
2 scallions, sliced diagonally (green onions)

Steps:

  • Heat oil in pan over med-high.
  • Pat dry the fillets (prevents soggy fish).
  • Fry fillets 2-3 minutes and turn over for another 2-3 minutes, or until done to your taste.
  • Add soy sauce and sesame oil and gently turn to coat both sides.
  • Place on serving platter, pour hot oil/soy from pan over fish, scatter with sesame seeds and then scatter scallions.

A few years ago I attended a cooking class with Tony Mantuano, the owner-chef of Tuttaposto, then a very trendy restaurant in Chicago. This was one of the recipes he showed us. A fast and tasty dish.

16 ounces fillets white-fleshed fish (4 fillets)
1 cup sesame seeds
3 egg whites, beaten until frothy
3 tablespoons olive oil
salt
fresh coarse ground black pepper
cornmeal

Steps:

  • Preheat oven to 400 deg. F.
  • Heat oil in a nonstick pan.
  • Brush fillets with the egg whites and season with salt and pepper.
  • Coat thickly on one side only with the sesame seeds.
  • Saute in oil, seed side down, until golden brown.
  • Place seed side up on a cornmeal sprinkled baking pan and bake at 400 deg. until done - this will depend on the thickness of your fillets, probably will take about 5 minutes.
  • Or, you can just turn over and panfry until done.
  • Note1: Chef recommended grouper or red snapper; I've made this also with tilapia.
  • Note2: Baking is really handy if you are making a larger quantity - that way you can finish all the fillets at the same time.

SESAME-CRUSTED TUNA

1/4 cup sesame seeds
1 tablespoon black sesame seeds, optional
salt and freshly ground black pepper
salt and freshly ground black pepper
2 tablespoons olive oil, plus more for brushing the fish
1 1/2 tablespoons butter
2 pounds tuna steaks, cut in 6 equal portions, approximately 1-inch thick
fleur de sel

Steps:

  • In a dry skillet on medium heat, toast the white sesame seeds until they are just beginning to turn light golden brown and fragrant. Remove from heat and spread seeds on a plate. Add the black sesame seeds to the plate if using, and stir seeds around with fingertips to combine.
  • Brush the tuna pieces on all sides with olive oil. Season on all sides with salt and pepper, and dip tuna pieces in the seeds, pressing to coat on all sides. Set aside on a wax foil lined cookie sheet.
  • When ready to cook, heat the 2 tablespoons olive oil on medium high in the skillet. When oil is hot, add the butter, when the butter foams, add the fish to the skillet. Let cook without moving the fish for about 1 1/2 to 2 minutes, until the sesame crust begins to crisp and brown. When the crust is golden brown, turn the fish and cook until the other side is golden brown and crisp, about another 2 minutes, adding additional butter if needed to keep the fish from sticking and speed up the browning. Once the second side is browned, turn the fish pieces on edge with tongs, to brown the remaining sides.
  • Remove from heat and set aside. Fish will be medium rare at this point. If you prefer fish more well done, place the ban with the fish in a 375 degree F oven for another 3 to 5 minutes.
  • To serve, slice each portion in half and place on the pasta bed with the edges overlapping. Sprinkle with finishing salt, if desired.

100g breadcrumb or 2 slices white bread, blitzed into crumbs
1 tbsp sesame seeds
4 fillets skinless white fish , each weighing about 140g
2 tbsp plain yogurt
1 tbsp olive oil

Steps:

  • Heat oven to 220C/fan200C/gas 7. Tip crumbs into a bowl with half the sesame seeds. Brush fish fillets with yogurt and coat in the crumb mix. Lay on a baking tray and sprinkle over the remaining seeds. Drizzle with a little olive oil, then bake for 15-20 mins. Serve with oven-baked potato wedges.

Mark Bittman. This dish is a breeze, largely because of the sesame seed crust, which guarantees both flavor and crunch. And the sauce takes about 3 minutes to make! Use any firm white fillets you like here, from sea bass to red snapper or grouper. I am partial to sea bass because of its buttery, rich taste...but that is a definite splurge.

1 cup sesame seeds
salt and black pepper, to taste
3 tablespoons canola oil (can use corn oil, needs to be a "neutral" oil)
24 ounces sea bass fillets (or other white fish, skinless)
2 tablespoons butter
1 tablespoon fresh ginger, peeled and minced
2 tablespoons soy sauce

Steps:

  • Preheat the oven to 200 degrees F. Preheat a large, heavy skillet over medium heat while you prepare the sesame seeds. Put them on a plate and season them with salt and pepper; add the oil to the skillet. When the oil shimmers, begin to turn the fillets in the seeds, encouraging them to coat the fillets as fully as possible, and add the fillets to the skillet.
  • Brown the fish on one side for a couple of minutes, then turn and brown on the other side, another minute or two. Remove the skillet from the heat and transfer the fish to a plate (don't worry if it's done); put the plate of fish in the oven to keep warm.
  • When the skillet has cooled slightly, return it to the stove over medium heat. Add the butter and when it melts, add the ginger. About 30 seconds later, add the soy sauce and 1/4 cup water and stir to blend. return the fillets to the skillet, along with any of their accumulated juices.
  • Turn the heat to medium and cook the fillets for a total of about 4 minutes, turning 3 or 4 times. (If at any time the pan seems to dry out entirely, add 2 or 3 tablespoons water.) At this point, the fish should be done (a thin-bladed knife inserted into its thickest point will meet little resistance.) Serve with the pan juices spooned over the fish.

1 8" piece dried kombu
1 2" piece ginger, peeled, thinly sliced
3 star anise pods
1 tablespoon Sichuan peppercorns
1/4 cup plus 2 tablespoons soy sauce
1 tablespoon kosher salt, plus more
1 (3 1/2-4-pound) chicken
8 ounces dried thin rice noodles (not vermicelli)
2 teaspoons toasted sesame oil, divided
1/2 bunch Tuscan kale, tough stems removed, leaves very thinly sliced (about 3 cups)
Pinch of sugar
2 tablespoons unseasoned rice vinegar
1 tablespoon furikake seasoning, plus more for serving
Chili oil (for serving)
Ingredient info:
Furikake, a dried blend of seaweed, sesame seeds, fish flakes, salt, and other seasonings, can be found at Asian markets, some supermarkets, and online.

Steps:

  • Cut 1 bunch scallions into 1" pieces; thinly slice remaining bunch of scallions and set aside. Bring 12 cups water to a brisk simmer in a large stockpot and add scallions, kombu, ginger, star anise, Sichuan peppercorns, 1/4 cup soy sauce, and 1 tablespoon salt; cook until kombu is softened, 10-15 minutes.
  • Add chicken to pot and reduce heat so liquid is at a very gentle simmer. Poach chicken, uncovered, until cooked through and an instant-read thermometer inserted into the thickest part of breast registers 160°F, 40-45 minutes. Transfer chicken to a plate and let cool.
  • Meanwhile, increase heat to mediumhigh and bring poaching liquid to a boil; cook until reduced by half, 30-45 minutes. Fish out scallions, ginger, and star anise from pot with a slotted spoon and discard. Add noodles to poaching liquid and cook according to package instructions. Drain and toss in a large bowl with 1 teaspoon sesame oil.
  • Combine kale, sugar, a pinch of salt, and remaining 1 teaspoon sesame oil in a medium bowl and massage kale, rubbing between your fingers, until softened and shiny, about 30 seconds. Add vinegar, rice noodles, reserved sliced scallions, 1 tablespoon furikake, and remaining 2 tablespoons soy sauce and toss to combine; season with salt.
  • Remove skin and bones from chicken; discard. Slice or shred meat. Serve with noodles, drizzled with chili oil and sprinkled with more furikake.
  • Do Ahead
  • Chicken can be poached 1 day ahead; let cool, cover and chill chicken and liquid separately. Bring to room temperature before slicing. Noodle mixture can be made 3 hours ahead; store at room temperature. Moisten with more soy sauce and vinegar before serving.

WHITE FISH WITH SESAME NOODLES

150g soba or wholemeal noodles (300g if using pre-cooked)
25g toasted sesame seeds , plus extra to serve
2 tbsp soy sauce
1 tbsp oil
1 tsp rice vinegar (or any white vinegar)
200g spinach leaves
2 seabass fillets

Steps:

  • Use a spice grinder or pestle and mortar to crush the sesame seeds, then stir in the soy sauce, oil, 1 tbsp of water and a splash of rice vinegar, to make a creamy dressing, season and set aside.
  • Bring a pan of salted water to the boil, add the noodles and cook following pack instructions, then drain and set aside. Using the same pan, tip in all the spinach and cook until reduced down and dark green. Tip in the noodles, along with the sesame dressing and a splash of water and toss well to heat through.
  • Heat the oil in a non-stick frying pan over a medium to high heat. Season the skin of the seabass, then place in the pan skin-side down, fry until the skin has crisped up and the flesh has nearly all turned opaque, around 3 mins. Flip over and fry for 30 seconds further, until the fish is flaking and cooked through. Divide the noodles and greens between two bowls and place the fish on top. Scatter over the toasted sesame seeds and serve.

1 cup sesame seeds
4 skinless fillets like black sea bass or red snapper, 6 ounces each
Salt and freshly ground black pepper
3 tablespoons neutral oil, like corn or canola
2 tablespoons butter
1 tablespoon peeled and minced fresh ginger
2 tablespoons soy sauce

Steps:

  • Preheat oven to 200 degrees. Heat large, heavy skillet over medium heat. Put seeds on plate. Season fillets with salt and pepper and turn in seeds, patting to coat fillets as fully as possible with seeds. Add oil to skillet and when it shimmers add fillets.

250g sustainable white fish fillets, such as cod, haddock or pollock
2 tbsp plain flour
1 egg , beaten
4 tbsp dried breadcrumb (we used panko)
2 tbsp sesame seed
vegetable oil , for frying
1 ripe avocado
juice 1 lime
small pack coriander , chopped
2 tbsp light mayonnaise
2 burger buns , split and toasted

Steps:

  • Cut the fish into 4 chunky fingers. Put the flour in a bowl with some seasoning, put the egg in another bowl, and the breadcrumbs and sesame seeds in a third. Dust the fish fingers in flour, then dip in egg and, finally, coat in breadcrumbs. Chill for 10 mins, if you have time.
  • Heat a drizzle of oil in a frying pan and cook the fish fingers for 3-4 mins each side until golden and cooked through, adding a drizzle more oil if the pan looks too dry.
  • Meanwhile, stone, peel and slice the avocado, squeeze over a little of the lime juice to prevent it from turning brown, then mix the remaining lime juice and coriander into the mayonnaise.
  • To serve, spread a little mayo over the base of each bun, top with 2 fish fingers, a few slices of avocado and the bun lid. Serve the remaining mayo on the side.
