SERVE FESTIVE GAME HENS WITH TANTALIZING GRAPE STUFFING
Game hens are one of the easiest birds to roast and stuff. That's because the stuffing reaches the required temperature at about the same time the birds are done roasting. The stuffing component in this recipe produces a moist, tangy-sweet and nutty combination featuring grapes and almonds.

- Remove any giblets. Clean the hens and pat them dry, inside and out.Preheat the oven to 350°F Melt the butter in a skillet over low heat. Slowly cook the onion until it is translucent and sweet, about 6 minutes. Cool.In a medium bowl, combine the cooked onion, bread cubes, grapes, chicken stock, egg, almonds and spices. Mix well. Stuff the birds with the dressing mixture. Season the outside of the hens with plenty of salt and pepper and arrange them in one or two roasting pans, making sure that there is at least an inch of space between each bird for even browning. Roast the hens for 1 hour and 15 minutes. After one hour of cooking, baste the birds with any pan drippings. Continue to cook until the internal temperature of the stuffing reaches 165°F If the birds start to get too brown, tent them with aluminum foil.
- When done, remove the cooked hens from the pan and let rest for at least 5 minutes. Cut in half and serve.
- Notes: To serve the stuffing as a separate side dish, pat the dressing into a lightly greased loaf pan and cover with foil. Bake at 350° for 30 minutes. For a crisp top, remove the foil for the last 15 minutes of baking.

GAME HEN STUFFED WITH WILD RICE AND MUSHROOMS
This recipe isn't too difficult, but it looks like an expensive restaurant meal! It is the perfect way to fix up that pheasant, duck or even just a Cornish game hen from your local grocery store. This recipe is made with a Cornish game hen in mind, so if you are using a larger bird, you may want to adjust the amount of the ingredients.

- Bring the rice, a pinch of salt, and water to a boil in a saucepan with a lid. Reduce the heat, cover with a lid, and simmer the wild rice until the kernels burst open, 45 to 50 minutes. Replenish the water if necessary. Fluff the rice with a fork, and let stand for 5 to 10 minutes to absorb water.
- Preheat oven to 425 degrees F (220 degrees C). Grease a baking dish large enough to hold the game hen.
- Heat 2 tablespoons of butter in a skillet, and cook and stir the mushrooms over medium heat until they are partially cooked and starting to give their juice, 5 to 8 minutes. Stir the mushrooms and butter into the cooked rice.
- Sprinkle the game hen, inside and out, with poultry seasoning, rosemary, and salt and pepper. Lightly stuff the Cornish hen with the wild rice mixture, and tie the legs together with cooking twine to hold in the stuffing. Slice 2 tablespoons of butter into small pats, and dot them around the bird.
- Bake the bird in the preheated oven until no longer pink at the bone and the juices run clear, 40 to 50 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C). Remove the game hen from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

CORNISH GAME HENS WITH ORANGE STUFFING
These are very easy to make and elegant to serve to dinner guests or to your family. Garnish with an orange slice on the side if desired. Ask the meat cutter to cut the hens in half for you.

Steps:
- Finely shred 1/4 tsp peel from the orange.
- Remove and discard the remaining peel.
- Section orange over a bowl, squeezing juice out.
- Halve sections and set aside.
- Add water to the sections to equal 3 tablespoons.
- In a small pan, cook green onion and celery in hot oil until tender but not brown.
- For stuffing, toss together peel, orange sections, onion mixture, stuffing mix and enough of the juice to moisten.
- In a large rectangular cake pan, spoon stuffing into 4 mounds.
- Rinse hens and pat dry with paper towels.
- Place hens, cavity side down over the stuffing mounds.
- Cover loosely with foil.
- Roast in a 375°F oven for 30 minutes.
- Uncover and roast another 20 minutes.
- Stir together honey and 1 tablespoon water. Brush over hens.
- Roast uncovered for another 15 minutes or until hens are tender.
- Use a wide spatula to transfer hens and stuffing to dinner plates.
ROCK CORNISH GAME HENS WITH PINEAPPLE STUFFING FOR GRILL OR OVEN
We love spit-grilling these little guys but also enjoy them baked! We usually serve them with rice pilaf or stir fried rice and green beans.

- Rinse hens and pat dry, removing innards; lightly salt and pepper inside and out.
- Sprinkle pineapple chunks lightly with curry powder and stuff hens.
- Truss hens and close cavity. Tie wings to body and legs to tail.
- GRILL: Balance on spit and secure with holding forks. Grill over medium coals or on rotisserie in gas grill set at medium for 45 minutes to 1 hour, basting occasionally with melted butter mixed with lemon juice.
- OR BAKE: Place bird on rack and bake in 325 dg oven for one hour or until tender, covering with foil if becoming too brown. Baste occasionally with butter/lemon mixture.
- I have been told internal temperature should reach 160 dg., but have not tried this method.

STUFFED GAME HENS WITH RASPBERRY SAUCE

- Preheat oven to 450°F. Combine pepper and garlic powder in bowl. Pat hens dry inside and out. Season cavities with half of pepper mixture. Fill cavities with rice. Close cavities using skewers. Tuck wing tips under. Place hens in roasting pan. Melt butter with honey in small saucepan. Brush over hens. Sprinkle with remaining pepper mixture. Bake hens until juices run clear when thighs are pierced in thickest part, turning and basting frequently with honey-butter mixture, 35 to 40 minutes.
- Meanwhile, combine remaining 4 ingredients in heavy medium saucepan over medium-high heat. Cook until sauce thickens, stirring frequently, about 10 minutes. Sieve sauce to remove seeds if desired.
- Transfer hens to cutting board. Cut each in half. Transfer hens with stuffing to plates. Spoon sauce over.
