CEVAPI (GRILLED SERBIAN SAUSAGES)

Cevapi are easy to make, grilled sausages from Southeastern Europe that burst with smoky flavor and are perfect for serving with flatbread and sliced onions. For best flavor, let the sausages marinade in the refrigerator for at least 1 hour, up to overnight.

1 lb ground beef, 85% lean
½ lb ground pork
3 garlic cloves, minced
1 ¼ tsp salt
1 tsp ground black pepper
1 tsp paprika
¾ tsp baking soda

Steps:

  • In a large bowl mix together all ingredients.
  • Using slightly over 1 Tbsp of meat mixture per sausage, shape the mixture into sausages the size and shape of a fat finger (roughly 3 inches long and ¾ of an inch in diameter).
  • Place all the formed sausages in a single layer on a platter. Cover the platter and refrigerate for at least 1 hour (up to overnight).*
  • When you are ready to cook your sausages, preheat your grill to medium heat, 350-400⁰F. (You should be able to hold your hand a few inches from the cooking grate for 5-7 seconds.)
  • Grill the sausages using a fine grate grill pan for 4-5 minutes a side, until golden and springy.
  • Serve the cevapi with sliced sweet onions and flatbread (like lepinja or pita).

This is a traditional Serbian recipe that is present at all of our special occasions!

1 pound finely ground beef
1/2 pound finely ground pork
1/2 pound finely ground lamb
1 tsp black pepper
2 tsp salt
4 cloves garlic (chopped)
1 tsp paprika
1 tsp baking soda
1/4 white onion (grated)

Steps:

  • In a large bowl, thoroughly mix together all ingredients (with your hands). When well combined, put in the refrigerator (covered) for an hour, or up to overnight.
  • Shape mixture into small cylinders about 1 inch in diameter and 2-3 inches long.
  • Place formed sausages on a wax paper lined plate in layers (you could also freeze them at this step for making at a later time)
  • Grill over medium heat, about 8 minutes on each side or until well done.
  • Serve with finely chopped onions on a roll or pita

This is a traditional recipe from Bascarsija, the old bazaar in Sarajevo. Cevapi (pronounced CHAE-vap or CHAE-vap-ee) are easy to make. These homemade sausages are found in most Balkans countries. Traditional cevapi (or cevapcici) from Sarajevo are made exclusively from either beef or lamb taken from 3 different part of the animals. Cevapi is considered a national dish of Bosnia and Herzegovina but is also common in Serbia, Croatia, Montenegro, North Macedonia, Kosovo, and Slovenia.

1 (4 pound) beef brisket
1 (4 pound) boneless beef chuck roast
2 pounds beef short ribs
⅓ cup iodized salt
4 teaspoons garlic powder
2 ½ teaspoons finely ground black pepper

Steps:

  • Cut the three different beef types into 1-inch pieces and place into a large bowl. Add salt, garlic powder, and pepper and mix until well combined. Cover and refrigerate for 24 hours.
  • Insert a medium-coarse grinder plate in your meat grinder. Pass meat mixture 2 times through the meat grinder.
  • Shape meat mixture into sausages the size and shape of a fat finger, roughly 3 inches long and 3/4 inch in diameter.
  • Preheat an outdoor charcoal grill for medium-high heat and lightly oil the grate.
  • Grill cevapi until cooked through, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

OH my, this brings back yummy memories. I dated a Cerb, way back when, and we ate these allot at festivals. I never got a recipe but found this one and put it in my "gotta try" file. I have used other recipes for the Frugal Gourmet and they were very good. I have yet to try these but in any case, let me know what you think. 1 large yellow onion, peeled and grated
3 garlic cloves, peeled and crushed
3 tablespoons Hungarian paprika, hot or

1 pinch nutmeg, freshly grated
olive oil, for basting
1 pint yogurt
1/2 cucumber, peeled, grated and drained for 1 hour

1 pinch cayenne pepper

Steps:

  • Meat:.
  • Mix all the ingredients thoroughly, except the oil.
  • Roll the mixture into little "cigars" about 1 inch by 3 inches. Rub lightly with olive oil.
  • Grill or broil until done, turning while grilling. Approximately 3 -5 minutes per batch.
  • Serve with yogurt sauce (recipe follows).
  • Yogurt Sauce for dipping:.
  • Mix all the ingredients together and serve with Cevapcici as a dip.

This recipe is for Serbian Cevapi or also known as Cevapcici. They are home made sausage links for lunch or dinner usually served over a bed of minced onions on a platter. They are also served in sandwiches with Pita or Home made Flatbread (Lepinja) with raw onions, tomato wedges and lettuce. Or a Serbian spread called Kajmak. This recipe makes about 45 links depending on how you cut them. I would suggest letting them sit in the fridge or cool place over night to let the flavor set in.. But at least 2 hours to cool in fridge.

1 lb lean ground beef
1/2 lb ground lamb
1/2 lb ground pork
1 teaspoon salt
1 beaten egg white
2 teaspoons black pepper
1 teaspoon cayenne pepper
1/2 cup club soda
5 finely minced garlic cloves

Steps:

  • Combine all 3 meats with the dry ingredients and the garlic. Using your hands, mix until the dry ingredients and garlic is evenly spread into the mixture. As you are mixing, slowly add the club soda. Pour 2 ounces work into mixture and add another 2 and repeat.
  • Finally add the beaten egg white and mix one more time until it is worked into the mixture. Then the shaping and storage comes inches You can shape them by hand into links about 4 inches long and 3/4 of an inch thick and let them sit for an hour in the cooler. Or you can follow the method below the cooking instructions.
  • These links can be prepared on a grill cooked for about 4 to 5 mins each side or can be cooked in the oven at 350°F for 30 minutes (turned every 15 mins).
  • The best way to shape the links is to take a 1/2 deep cookie pan covered with Freezer or Wax paper on the bottom and over lapping the ends with 1 to 2 inches. Then evenly spread the mixture over the inside of the pan and cover with an additional sheet of wax paper.
  • Allow at least 1 hour in the fridge to cool off so the shape can hold.
  • If you have a large cutting board, remove the pan from the cooler. Flip the pan over the top of the cutting board so the mixture falls out. If not, use one of the ends of the paper on the bottom of the mixture to pull it out.
  • Next, take a large pizza cutter and cut downwards every 1" to 1 1/2". Then depending on the length you would like the links, you can cut across 2 or 3 ways. Cutting it across in the middle makes less links. Cutting 2 lines makes about 45 links.

1 lb lean ground beef
1/2 lb ground lamb
1 egg white
4 garlic cloves, minced
1 teaspoon salt

1 onion, finely chopped
4 white bread or 4 rolls

Steps:

  • In a large bowl, combine the ground pork, ground beef, ground lamb and egg white. Add the garlic, salt, baking soda, black pepper, cayenne pepper and paprika. Mix well using your hands.
  • Form into finger length sausages about 3/4 inch thick. Arrange in a plate.
  • Cover with plastic wrap or wax paper and refrigerate for one hour to one day, to let the flavors settle and the mixture become firm.
  • Preheat the grill, medium-low heat. Lightly oil the grilling surface.
  • Grill cevapcici until cooked through, turning as needed. The grilling usually takes about 30 minutes.
  • Serve in warmed or grilled pita bread, white bread or rolls on a bed of chopped onions, with your choice of toppings such as kajmak, sour cream, cottage cheese, fresh peppers, ajvar or tomatoes.
