- In a blender, combine the first eight ingredients; cover and process until smooth. Store in the refrigerator., For each serving, place coffee in a mug. Stir in 1/3 cup Irish cream. Heat mixture in a microwave if desired.

This recipe is a very rich, delicious drink for adults. Everyone loves it at parties! I usually make it for Christmas and Easter, but it is great all year-round! Serve this drink over ice, garnished with a candy cane or whipped cream.

Steps:
- In an electric blender, combine eggs, sweetened condensed milk, chocolate syrup and coffee granules. Blend for 3 minutes.
- Add creamer, vanilla extract, almond extract and brandy to the mixture in the electric blender. Blend for 12 minutes. Refrigerate the mixture overnight.
- Strain the Irish Cream through a cheesecloth, then serve.

SEMI-HOMEMADE IRISH CREAM
Steps:
- In the container of an electric blender, combine cream, evaporated milk, condensed milk, whiskey, chocolate syrup and coffee; process until smooth. Let chill for at least 4 hours before serving.
IRISH CREAM DREAM
Steps:
- Line the ramekins with plastic wrap creating a shell and leaving long flaps to cover the ramekins later. In a food processer, pulse gingersnap cookies with melted butter until small crumbs form for the crust. Press half the cookie crumb mixture, dividing evenly, firmly into the bottom of each ramekin. Reserve the other half of the crumb mixture for the topping.
- In a large bowl, whisk heavy cream with sugar until soft peaks form. In a separate large bowl, add the espresso powder and condensed milk and blend until espresso powder is dissolved. Whisk in Irish cream then fold in whipped cream. Pour evenly into the ramekins. Top with remaining gingersnap crumbs and cover with the extra plastic wrap, pressing to compact mixture. Freeze until set, about 5 hours. To serve, remove plastic wrap from top and then gently turn ramekins over to release dessert onto a serving plate. Gently remove plastic wrap.

- Spoon the dulce de leche into a bowl, then beat in the coffee, vanilla and whiskey until smooth. Stir in both pots of cream until well mixed.
- Pour into 1 large or several smaller sterilised bottles. This will keep in the fridge for 2 weeks. Drink in liqueur glasses or serve over ice.
HOMEMADE IRISH CREAM
Of all the Irish cream recipes here, I haven't found any quite like this one. I discovered this in the Company's Coming Gifts from the Kitchen cookbook a couple of years ago and I've never bought Bailey's again. I gave a bottle to my cousin and his wife for Christmas one year and he claims it's better than the original! Can be stored in the fridge for up to 3 weeks -- if it actually lasts that long!!

I got this recipe from a friend I used to work with - I first made it to bring to a Christmas party at a friend's house, and everyone was amazed when they found out it wasn't Bailey's. If you can't find pasteurized eggs, the appropriate amount of Egg Beaters makes a great substitute.

HOMEMADE CREAMY IRISH CREAM
My wife loves Baileys Irish Cream and we have gone to a ketogenic diet, so I wanted to quit having to run to the store for more Baileys and I wanted to see if I could improve on the flavor and texture of the famous Irish Cream. My wife believes this is creamier and a few friends that don't like Irish whiskey claim they love this. I've kept it in the refrigerator for a week or two with no problems so far. Rarely lasts that long. Enjoy!
