SEEDED WHOLE GRAIN LOAF

Seeded Whole Grain Loaf image

My husband and I want whole grain bread, but we don't like the spongy store-bought whole wheat breads. I drastically altered one of my favorite batter bread recipes to create this earthy bread. It is crunchy, chewy and easy. The add-ins are just suggestions. Sometimes I use pepitas, sesame seeds or even 1/4 cup of a multi-grain hot cereal mix. -Amber Rife, Columbus, Ohio

SEEDED WHOLEMEAL LOAF

Seeded wholemeal loaf image

This hearty, wholesome bread is rich in flavour and packed with seeds - try pumpkin, sunflower, poppy or linseeds

Provided by Chelsie Collins

Categories     Side dish

Time 1h20m

Yield Makes 1 loaf (cuts into 10-12 slices)

Number Of Ingredients 7

400g strong wholemeal bread flour
100g spelt flour
7g sachet fast-action dried yeast
1 tbsp black treacle
oil, for greasing
50g mixed seeds (we used pumpkin, sunflower, poppy and linseeds)
1 egg yolk, loosened with a fork

Steps:

  • Combine both flours in a large bowl with the yeast and 1 tsp fine salt. Mix the treacle with 250ml warm water until well combined. Stir into the flour to make a slightly sticky dough. If you need to add more water, splash it in 1 tbsp at a time.
  • Knead the dough on a lightly floured surface for 10 mins (or in a tabletop mixer for 5-7 mins). Your dough should be smooth and elastic when it's ready. Place the dough in a lightly oiled bowl, flip the dough over to coat it in oil, then cover with a sheet of oiled cling film. Leave in a warm place until doubled in size - this will take about 1 hr (see note, below). Lightly oil a 900g loaf tin.
  • Once doubled in size, knead the dough again for 3-5 mins to knock out the air bubbles - add most of the seeds and work these into the dough as you knead. Shape the dough into an oval roughly the same length as your tin. Place in the tin and leave to prove, covered with oiled cling film, for 30-45 mins until it has nearly doubled in size again. Heat oven to 200C/180C fan/gas 6.
  • Gently press a finger into the loaf to check if it has had enough proving time (see tip). When it's ready, glaze the top of the loaf with the egg yolk and sprinkle over the remaining seeds. Bake in the oven for 40-45 mins until golden brown - if you tip the loaf out of the tin and tap the bottom, it should sound hollow. Leave to cool on a wire rack for at least 30 mins before slicing.

AMISH SOFT HONEY WHOLE WHEAT BREAD

Amish Soft Honey Whole Wheat Bread image

I've been looking for a soft all whole wheat bread, and I finally found it! This is in an Amish cookbook that I have, and I am writing it as it is written. I mix it with my KitchenAid. :) This is our sandwich bread that we have all the time on hand and the recipe can easily be cut into 1/3 to make just one loaf. :) 10/8/07 Corrections made to make bigger loaves. I usually use recipe #185778 to have a great rise.

Provided by SweetsLady

Categories     Yeast Breads

Time 3h30m

Yield 3 loaves, 60 serving(s)

Number Of Ingredients 9

3 cups warm water (110-115 degrees)
1 teaspoon sugar
2 tablespoons yeast
3 eggs
3/4 cup honey
3/4 cup Crisco (I use butter flavored)
2 tablespoons salt
11 -12 cups whole wheat flour
4 tablespoons wheat gluten (optional)

Steps:

  • Mix water with yeast and sugar and let sit until foamy (about 10 minutes). In the meanwhile, put the 3 eggs (in the shell) in a bowl of hot water (to bring the eggs to room temperature).
  • Put flour, salt, and gluten in bowl.
  • Pour in yeast mixture and stir until combined. Add in honey, eggs, and crisco until combined, scraping sides. (I usually use an egg beater for this).
  • Add more wheat flour and knead until smooth.
  • Let set in warm place for about an hour until double in size.
  • Divide into 3 loaves. Let rise again in warm place until doubled (about 1-1/2 hours).
  • Bake as regular bread (I bake about 35 minutes at 375 or until the interior of the bread is 190 degrees using electric thermometer if you have one).
  • Enjoy!

HONEY WHEAT BREAD WITH CHIA AND FLAX

Honey Wheat Bread With Chia and Flax image

This bread is hearty and nutritious. The honey lends excellent flavor, while the chia gel and flax meal give it a nutrional boost. It is great as a sandwich bread or toast.

Provided by Kristiano129

Categories     Breads

Time 3h10m

Yield 24 slices

Number Of Ingredients 10

1 cup milk, room temp
3 tablespoons honey
2 tablespoons butter
1 teaspoon chia seeds, soaked in
2 tablespoons water (see note)
1 1/2 teaspoons salt
1/2 cup flax seed meal
1 cup whole wheat flour
2 cups white bread flour
2 teaspoons active dry yeast

Steps:

  • Place all ingredients into bread machine in the order listed and mix on the "dough" cycle. Punch down dough after the cycle is complete and roll into a sandwich loaf and place in a well-greased bread pan. Allow dough to rise in a warm location for about 45-60 minutes, then bake at 375 degrees for 40 minutes.
  • Optional - brush the dough with milk or egg wash prior to baking.
  • * Note - prior to making this recipe, soak chia seeds in water to create a chia gel. I keep a fair amount of chia gel in my fridge and use about 2 tbsp of chia gel in this recipe, however food.com does not recognize Chia Gel as an ingredient.

  • The night before baking the bread make the preferment. In the bowl of your stand mixer, mix together the flour, water and yeast until a smooth paste forms. Cover the bowl and allow the preferment to ripen at room temperature overnight. The preferment will double in size and become bubbly on top as it sits.
  • The next day measure out 1/4 cup warm water in a glass measuring cup or bowl. Add the yeast and honey. Mix to combine and then allow the mixture to sit, undisturbed for 5 minutes or until the mixture is foamy on top and smells like bread. During the same time add the remaining 1 1/4 cups warm water to a bowl. Add the oats and ground flax. Allow this mixture to sit 5 minutes.
  • After 5 minutes add both the yeast mixture and oats mixture to the bowl with the preferment from the night before. Add the whole wheat flour, bread flour and salt. Using the dough hook, mix the dough on medium speed for 4-6 minutes. If the dough seems extremely sticky, add 1-2 tablespoons flour. Now add in 3-4 tablespoons of the mixed seeds. mix until combined.

  • Add lukewarm water and honey to a large bowl or the bowl of a stand mixer. Sprinkle with yeast, stir and let stand 5 minutes. (Mixture should be bubbling a bit after 5 minutes)
  • Add the whole wheat flour and the salt and mix lightly. Mix in vegetable oil. Work in all-purpose flour gradually, adding just a 1/2 cup at a time and mixing until dough comes together into a smooth, moist but not sticky dough.
  • If using a stand mixer, knead on low for about 5 minutes. If kneading by hand, turn dough out onto a lightly floured surface and knead for about 10 minutes. Add in only enough additional flour to stop the dough from sticking.
  • When dough is smooth and elastic, place it in a well oiled bowl. Turn it several times in the bowl to coat the surface of the dough, and cover with a plastic wrap. Let rise in a warm place until doubled, about 45 - 60 minutes.

  • Prepare the yeast mixture. Combine the yeast, sugar, and warm water in a large standing mixer. Be careful to use WARM water, not hot. If the water is too hot, the yeast will disappear and you can't make bread without yeast. Mix and let sit for about 15 minutes to get the yeast working.
  • Add the honey, oil, and salt. Stir with a spatula. Attach dough hook to mixer and add the oats, chia seeds, poppyseed, flax seeds, and pumpkin seeds (or sunflower seeds). Start the mixer and mix until fully combined.
  • Then add about three cups of flour. Start mixer and let the flour absorb. Then gradually add more flour, a little bit at a time until dough is less sticky and pulls away from the sides of the mixer. You want the bread dough to be slightly sticky but not too much. When you touch the dough, it should bounce back slightly. Be sure to leave the mixer on for several minutes after you get the right consistency.
  • Grease a large bowl with canola oil. Add dough to the bowl, making sure you smooth it into a ball, by punching it down - starting in the center of the dough. Place dough with smooth side up and cover with a clean towel. Let the dough (approximately) double in size.
