Easy and delicious green pasta sauce.

1 10 oz bag spinach
1 tablespoon olive oil
3 cloves garlic, minced
1/2 cup Parmesan cheese
1/2 cup vegetable stock (or chicken stock or water)
4 oz cream cheese
1 lb spaghetti (or other pasta)
salt and pepper to taste

Steps:

  • Boil spaghetti according to package directions.
  • While pasta is cooking, add olive oil to large skillet over medium heat. Stir in minced garlic and saute for 1-2 minutes. Add in spinach and cook until it wilts.
  • Add cooked spinach to a food processor or blender. Add in cream cheese, Parmesan cheese, broth, salt and pepper. Blend until sauce is formed.
  • Add sauce and drained, cooked pasta back into skillet and toss.
  • Serve warm with extra grated Parmesan cheese.

This creamy green sauce pasta recipe is packed with fresh flavors and nutrients. The best part is that there's no cooking required for the sauce and it's ready within a couple of minutes!

⅓ cup veggie broth
1 cup frozen peas (*thawed)
1 cup fresh baby spinach (~2 handfuls) (*pre-washed)
1 handful fresh basil (*pre-washed)
1 small avocado (*deseeded)
⅓ cup parmesan ((or vegan parmesan or nutritonal yeast))
⅛ cup olive oil
½ tsp garlic powder
salt & pepper
pasta of choice

Steps:

  • Bring a big pot of water to boil. Season with a pinch of salt and cook your pasta of choice according to package instructions. (Total cook time will vary depending on which type of pasta you choose)
  • In the meantime, put all of your ingredients for the sauce into a (high-speed) blender and blend until smooth.
  • The stronger the blender, the smoother your sauce will turn out.
  • Taste sauce and adjust seasoning. For a thinner sauce gradually add more broth/ oil.
  • Toss your cooked pasta sauce with the sauce.
  • Garnish with some extra olive oil, parmesan or fresh green herbs and serve immediately.

This spaghetti sauce is 'secret' because it has loads of onions and carrots 'hidden' in it. My husband and kids love it - I quadruple the recipe every time and freeze the extra in zip-lock bags.

½ pound ground beef
½ pound Italian sausage
4 carrots, quartered
1 large onion, quartered
1 tablespoon olive oil
3 cloves garlic, minced
1 (30 ounce) can crushed tomatoes
1 (30 ounce) can tomato sauce
2 tablespoons dried oregano
2 tablespoons brown sugar
1 tablespoon dried basil
1 teaspoon ground black pepper
1 teaspoon ground cinnamon
salt to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef and Italian sausage in the hot skillet until browned and crumbly, 5 to 10 minutes; drain and discard grease.
  • Chop carrots and onion in the food processor.
  • Heat olive oil in a large saucepan over medium heat; cook and stir carrots, onion, and garlic in the hot oil until onion is transparent, about 5 minutes. Stir ground beef-sausage mixture, crushed tomatoes, tomato sauce, oregano, brown sugar, basil, black pepper, and cinnamon into onion mixture; simmer, stirring occasionally, until flavors have blended, about 30 minutes. Season with salt.
