Four 6-ounce-thick cod fillets
Extra-virgin olive oil
Kosher salt
1 cup blood orange juice
1 blood orange, zested, supremed and coarsely chopped
2 tablespoons sugar
2 tablespoons red wine vinegar
2 sprigs fresh thyme

Steps:

  • Preheat the oven to 250 degrees F. Remove the fish from the refrigerator and let it come to room temperature, about 10 minutes. Coat a large saute pan with olive oil and bring the pan to a high heat. Pat the fish dry with paper towels and sprinkle both sides with salt. When the oil is very hot but not smoking, gently add the fish to the pan. DO NOT try to move the fillets. After 2 to 3 minutes, shake the pan gently and the fish should unstick itself. If the pan was hot enough, it will release. If not, using a fish spatula, GENTLY scrape it from the bottom of the pan. Cook the fish for 1 more minute and then turn it over, placing it on a wire rack set in a sheet tray. Transfer to the oven and cook until cooked through, another 10 to 12 minutes. Ditch the oil from the pan and add the orange juice, zest, chopped oranges, sugar, vinegar, thyme and a pinch of salt. Bring the liquid to a boil (BTB), reduce it to a simmer (RTS) and reduce the liquid by half. Taste and adjust the seasoning. The sauce should have a great tangy, sweet and sour mix. 1 tablespoon olive oil
4 (8 ounce) ahi tuna steaks
½ cup white wine
1 tablespoon butter
1 medium shallot, minced
1 clove garlic, minced
2 cups blood orange juice

Steps:

  • In a skillet, heat olive oil over medium-high heat. Sear tuna on one side for about five minutes. Flip and sear other side for two to three minutes, or until tuna is cooked to your desired degree of doneness. Remove from skillet and allow to rest.
  • Return skillet to heat and add white wine. Scrape the bottom of the skillet with a wooden spoon and simmer until wine is reduced by half. Reduce heat to medium and butter, shallot and garlic; cook and stir until shallot is clear, approximately 3 to 5 minutes. Stir in blood orange juice. Boil until the liquid has reduced to half its original volume or until it thickens. Remove from heat.
  • Slice the tuna across the grain. Fan the slices out onto a place and drizzle with blood orange sauce.

Recipe was originally for Scallops, but DH is not fond of them (@#$#) So I sub. with cod. Recipe came from the food network, Surreal Gourmet. If I could get a hold of Skate...it would be great with this recipe!

1 tablespoon ginger, grated
2 garlic cloves, minced
1 green onion, minced
2 tablespoons cilantro leaves, minced
1 tablespoon rice wine vinegar
1 tablespoon toasted sesame oil
1 tablespoon soy sauce
2 tablespoons canola oil, divided
12 pieces cod, 2 inch squares
salt and pepper
1/2 cup sesame seeds

Steps:

  • In a small bowl add ginger, garlic, green onion, cilantro, rice wine vinegar, sesame oil, soy, 1 tablespoon of canola oil. Whisk ingredients together.
  • Season Cod with salt and pepper.
  • Place sesame seeds on a plate. Pat down top and bottom side of each cod in sesame seeds.
  • In a saute pan, over medium-high heat add remaining tablespoon oil. When oil is hot, add cod placing them sesame-crusted side down. Sear for approximately 1 minute, or until sesame seeds brown. Turn and sear on other sesame-crusted side for 1 more minute.
  • Spoon vinaigrette on serving plate and place cod on top.

1/2 cup balsamic vinegar
2 -3 tablespoons honey, sweetness your preference
3 tablespoons olive oil
2 garlic cloves, minced
1 1/2 lbs fish fillets, 4 pieces
nonstick cooking spray

Steps:

  • In a small bowl whisk the vinegar, honey, oil, and garlic.
  • Arrange fish in an 8" sq baking dish and pour marinate over, coating completely.
  • Cover and refrigerate at least 30 minutes and up to 4 hours.
  • Preheat broiler.
  • Line the bottom and sides of a baking sheet with foil. Spray the foil with nonstick oil.
  • Remove fish, reserving the marinade, and arrange on baking sheet.
  • Pour marinade into a small heavy saucepan and bring to a boil and then back to a simmer for about 15 mins., stirring often.
  • While sauce is simmering, broil the fish until they are just cooked through and carmelized on top, about 12 minutes (Watch last few minutes that you're not too close to the broiler and fish is burning).
  • In small pan, sauce will thicken similar to a steak sauce. Spoon off any excess oil if preferred.
  • Transfer fillets to plates, drizzle sauce lightly on top just for presentation to keep the eye appeal of the carmelization and then spoon more sauce around the fish. Serve.

¾ pound cod fillets
2 tablespoons orange marmalade
1 tablespoon honey
½ tablespoon orange juice
1 teaspoon Dijon mustard
½ teaspoon sesame oil
½ teaspoon reduced-sodium soy sauce
⅛ teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley, or to taste

Steps:

  • Set an oven rack 5 to 6 inches from the heat source and preheat the oven's broiler. Coat a broiler pan with cooking spray and place fillets on top.
  • Combine marmalade, honey, orange juice, Dijon mustard, sesame oil, soy sauce, and pepper in a small bowl. Mix well.
  • Broil cod in the preheated oven for 4 to 5 minutes. Brush 1/2 of the honey-orange glaze on top and broil until fish flakes easily with a fork, 4 to 5 minutes more. Adjust timing depending on the thickness of the fillets.
  • Brush the remaining glaze over the fillets. Garnish with parsley.
